Top Cambridgeshire Winery Reports Promising Grape Harvest Despite Challenging Weather Conditions

Williams Family Wines, which is based in Buckden, Cambridgeshire, is reporting that this year's harvest is yielding grapes of promising quality and expects another successful vintage despite the challenging changes in weather that it has had to endure. 

The family business is looking to repeat the success of its first vintage, having received multiple awards for its 2023 range. The medal haul included recognition for their Rosé wine which was the most highly rated English Still Rosé at the International Wine & Spirit Competition (IWSC), and ranked in the top 15 in the world.

Williams Family Wines is operated by husband and wife team, Nick and Julia Williams, who only started to explore planting a small vineyard near their home in Cambridgeshire in 2018, with each vine being cared for by hand to produce the best quality grapes. 

Fruit is also sourced from some of the finest English vineyards and they work closely with those trusted growers to produce wines they can all be proud of.

“Choosing when to harvest the grapes is a delicate balance” commented Nick Williams “but the extremes of wet and warm weather over the summer has presented us with some distinct challenges this year."

He went on to say: "We also had to contend with an early, unexpected frost at the start of October, so have been working long hours to minimise the impact of the Great British weather. However, we are encouraged by the quality of the grapes we have harvested, as they have a perfect balance between sugar and acidity and are bursting full of flavour. 

"We have made a promising start to our wine making process and are excited about how these wines will taste and, following the success of our initial range, we're already noticing interest in the Williams Family Wines 2024 vintage. We'll continue to give the wine-making process our characteristic attention, with every detail closely monitored from grape to glass to produce the best quality wines possible.”

The first Williams Family Wines vintage, released earlier this year, saw the Solaris dry white, and Rosé wines being awarded medals at the IWSC whilst the Solaris and off-dry white wine Bacchus received medals at the 2023 International Wine Challenge. The couple were overwhelmed by the phenomenal results, especially considering the larger, established wineries in more familiar wine producing regions that were judged alongside their own wines.

“For a family business that runs a small vineyard and small-batch winery in Cambridgeshire, we couldn't have imagined that our wines would receive such great feedback so quickly so it's reassuring to know that our attention to quality is already proving worthwhile” added Nick. 

“Receiving a silver medal with 92 points for our Rosé wine in the IWSC was the ultimate accolade for Williams Family Wines in our first year, as this was the highest rating for an English Still Rosé. The success surpassed our wildest dreams, especially when we realised that this also placed our Rosé wine in the top 15 in the world, and we could never have imagined such recognition when we first established our exciting new business.”

Williams Family Wines currently produce four wines – Solaris, a still, dry white wine; Bacchus, a still, off-dry white wine; Rosé, a harmonious blend of Bacchus and Pinot Noir grapes; and Sweet Rebel sweet wine which has just been added to the hand-picked wine list of Michelin starred Pine Restaurant in Northumberland. They are also planning to launch a red pinot noir and a sparkling wine is on the lees, with the 2024 vintage expected to be available from Spring 2025.

While only around 30% of South Koreans identify as Christian, Christmas has become a widely celebrated occasion, especially in urban areas. The 25th of December is a public holiday in South Korea, but for many, it's viewed as more of a romantic or social celebration than a strictly religious one.

Unlike the cosy, family-centred celebrations in the UK, South Korea’s Christmas is geared more towards couples and friends. Even non-Christians often attend these services for a sense of community and the chance to experience the spiritual side of the holiday.

The celebration of midnight mass or a Christmas Eve service has become a growing trend, especially in larger cities where people come together to experience the holiday’s religious aspects, even if briefly.

My Emergency Banana Cream and Butterscotch Cheesecake

This is my My Emergency Banana Cream and Butterscotch Cheesecake. Necessity is, indeed, the mother of invention.

I recently bought a bunch of bananas from a discount supermarket. I ate one and several days later I decided to eat another, only to find that they had ripened to such an extreme extent that they could have worked as extras in the film The Blackness!

My wife and I both despise wasting food (if we really can't make use of something we compost it) so I decided to employ my inventive side to save the day.

I used a combination of ingredients from our pantry plus several others that I bought from Morrisons. (Morrisons is not the supermarket were I bought the bananas from, by the way.)

Ingredients:-
Ripe(!) bananas
Two tubs of Morrisons full fat cream cheese
The rest of a pot of double cream from the fridge
Packet of Butterscotch flavoured Angel Delight
A handful of Pearl Sugar (an Amazon overstock item bought from a local charity shop)
Sufficient milk to soften the mixture
Half a packet of crushed broken biscuits from the pantry
1/4 of a tub of Morrisons spreadable butter

Mix the spreadable butter with the crushed biscuits and place in a combination over in a metal or glass bowl, for 200c for about 10 to 15 minutes. Several times use a wooden spoon to make sure the base is properly mixed together.

Eventually, squash the mix down and then leave to cool.

Whilst it is cooling mash the ripe bananas and when they are fully mashed add the cream cheese, making sure it's all mixed in.

Then add the Angel Delight being careful to make sure all the powder is properly mixed in. At this stage add enough milk to make sure the mixture is not too thick.

Then mix in the Pearl Sugar. 

Place the mix into the fridge and when the base is sufficiently cooled top it with the cheesecake mixture and return this to the fridge and allow it to properly chill.

I did think about adding some Bailey's Irish Cream, or Amarula instead of the milk, but after tasting the mixture part way through I decided against this. You could add the liqueurs, though, if you wished. 

The result? A really delicious Emergency Banana Cream and Butterscotch Cheesecake!

We mentioned buying Amazon overstocks and the like in a previous post on our sister site, That's Christmas. That was how we bought a number of pots of Pearl Sugar, several boxes of breakfast cereals and some new Christmas decorations!

Actually, nearer to Christmas the above recipe with the addition of traditional Christmas spices would make a reasonably light Christmastime dessert treat.

California Dreamin' for James May's Asian Parsnip Gin

James Gin 'Asian Parsnip',  a super-premium gin by James May,  is now available in 14 Total Wine Stores across California, following a hugely successful 'SoCal Tour' by the globe-trekking TV personality over the summer. 

In excess of 1,000 James May gin fans turned up to grab signed bottles (as well as engine covers, care manuals, cookbooks and in some instances, dashboard trim) during James' various personal appearances at liquor stores and bars in August. 

Best known in the US for Top Gear and The Grand Tour, many fans also know James May from his recent Amazon Shows 'Oh Cook' and 'Our Man in…' 

To date, sales of James Gin in the US have been mainly via www.jamesgin.com and the partnership with Total Wine represents a significant step for the brand in building an off-trade sales presence.

States James Gin co-founder Gus Colquhuon: “James Gin had been selling extremely well online in the US, with California being the largest state by volume.

Keen’s Cheddar wins public vote to claim People’s Cheese 2024 title

Following three rounds of tense public voting, Extra Mature Cheddar by Keen’s Cheddar in Somerset has been crowned the first ever People’s Cheese champion. 

During the live online final, broadcast on Friday 11 October, cheese lovers from all over the UK tuned in with their cheese boxes to taste, deliberate and cast their votes, before the traditional unpasteurised cheddar took the top prize.

This latest accolade for the Keen family reflects the enduring popularity of traditional artisan cheddar cheeses, coming over 127 years after production began at Moorhayes Farm in 1899.

Five generations later, under the stewardship of George Keen, the family is still making cheese with raw milk from their 250-strong herd of Friesian cows, with Keen’s Extra Mature Cheddar matured for 18 months to achieve a moist texture and full-bodied flavour, with onion notes and plenty of delicious tang.

Organised by The Real Cheese Project, People’s Cheese 2024 was created to get more people eating and talking about Britain’s artisan cheese, with this year’s ‘Heritage Edition’ focusing on territorial styles. 

All named after the locations that they originated in, this group of traditional cheeses includes Cheddar, Stilton, Red Leicester, Caerphilly, Cheshire, Double Gloucester, Lancashire, and Wensleydale, with Dunlop also featured as a Scottish heritage cheese.

Rounds 1 and 2 took place at Chiswick Cheese Market, beginning with over 40 entrants into the nine categories. Hundreds of marketgoers took part and voted for their favourites during these early rounds, ultimately selecting the four finalists; Blue Stilton by Cropwell Bishop Creamery in Nottinghamshire; Extra Mature Cheddar by Keen’s Cheddar in Somerset; Mrs Bourne’s Cheshire Cheese by Bourne's Cheshire Cheese in Cheshire; and Thelma’s Original Caerffili by Caws Cenarth in Carmarthenshire.

Friday’s virtual final was broadcast from Mrs Kirkham's Cheese in Lancashire, and presented by comedian and champion of British cheese, Marcus Brigstocke, alongside The Real Cheese Project co-founder, James Grant. 

The pair were joined by experts including Jane Quicke from Quicke’s, Lucy Cufflin from Chiswick Cheese Market, Jonathan Pearcey from The Crafty Cheese Man, and Graham Kirkham from Mrs Kirkham’s Cheese, who guided the virtual voting panel through their tasting boxes, before everyone was invited to vote for this year’s People’s Cheese champion.

In September, The Real Cheese Project also launched a special monthly subscription box, created to big up Britain’s artisan cheese community and get more people buying the good stuff. Inviting the curd curious to embark on a real cheese adventure, each Cheese Crowd box will come with a new cheese to try, a monthly cheese zine, a hand-picked pairing, a pin badge for new subscribers, and access to an online tasting to meet the cheesemaker. 

5% of all profits will go into a Real Cheese support fund, which will be donated to initiatives that protect, develop and progress real cheese in the UK.

 Strawberry Mousse (serves 4)

 Ingredients:

100g ripe strawberries, chopped

1 x 11.5 g sachet strawberry jelly powder

300ml double cream

1 large egg white

1tsp white caster sugar

Method:

Purée the strawberries in a small blender.

Put the strawberry jelly powder in a medium bowl and add 300ml boiling water. Stir in strawberry purée and leave to cool.

Pour the cream into the cooled purée mixture and chill for 10-15 minutes until  just beginning to set

Whisk the egg white to soft peaks, add the sugar and whisk until stiff. Fold into the strawberry mixture and divide between four individual serving dishes.

Chill for 1 hour until set.

Recipe: Rich Christmas Cake Without Dried Fruit – A Festive Delight for All

When you think of Christmas cake, the image of a rich, dark cake packed with dried fruit often comes to mind. 

However, for those allergic to dried fruits, the traditional recipe can seem a little out of reach. But worry not, because this alternative version is just as indulgent, without a raisin or currant in sight! 

This rich Christmas cake, full of festive spices, nuts, and fresh fruit, will fill your home with the same comforting aromas while keeping your celebrations allergen-free.

Ingredients:

For the Cake:

250g unsalted butter (softened)

200g dark brown sugar

4 large eggs

300g plain flour

100g ground almonds

2 teaspoons baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon ground ginger

100g chopped nuts (pecans, almonds, or walnuts – your choice!)

200g grated fresh apple (choose a firm variety like Granny Smith)

150g fresh or frozen cranberries (if you prefer a touch of tartness)

Zest of 1 orange

Zest of 1 lemon

100ml orange juice (freshly squeezed if possible)

For Decoration:

200g marzipan

400g fondant icing

Festive decorations (e.g. edible gold stars, sugar snowflakes, or holly)

Method:

Prepare the Cake Tin

Preheat your oven to 150°C (130°C fan). Grease a deep, 20cm round cake tin and line the base and sides with baking parchment. Make sure to double-line the sides if you want to protect your cake from overbaking, especially since this cake will need a long, slow cook.

Cream the Butter and Sugar

In a large mixing bowl, beat together the softened butter and dark brown sugar until light and fluffy. This can take a good 3–5 minutes. Don’t rush – this step helps to ensure a tender cake.

Add the Eggs

Add the eggs one at a time, beating well between each addition. If the mixture looks like it’s curdling, add a tablespoon of the flour to bring it back together.

Mix in the Dry Ingredients

In a separate bowl, combine the plain flour, ground almonds, baking powder, and spices (cinnamon, nutmeg, and ginger). Sift these into the wet mixture, gently folding them in until just combined.

Fold in the Fresh Ingredients

Stir in the chopped nuts, grated apple, fresh cranberries, orange zest, lemon zest, and orange juice. These will add texture, moisture, and a natural sweetness to your cake, making up for the absence of dried fruit.

Bake the Cake

Spoon the mixture into your prepared tin and level the top with the back of a spoon. Bake for 2–2½ hours, checking after 2 hours. The cake is done when a skewer inserted into the centre comes out clean. If the cake starts browning too quickly, cover it with a sheet of foil.

Lindores Abbey Distillery Celebrates It's Historic French Links with A New Single Malt 'Thiron'

Lindores Abbey, Fife: Offers A new chapter in whisky, rooted in history

Lindores Abbey Distillery has announced the launch of its first bottle in an annual series of limited releases celebrating its historic links with the abbey at Thiron-Gardais, a small town in the Perche region, southwest of Paris.

The bottling celebrates 833 years of historic links between Lindores Abbey and l'Abbaye de Tiron. The mediaeval abbey at Thiron-Gardais (founded 1109) is the mother abbey of all Tironensian abbeys, including Lindores and Kelso. Friar John Cor was a Tironensian monk of Lindores, and it is he who was famously ordered in 1494 to make aqua vitae for the king.

The spirit has been matured in red wine barriques, bourbon casks, and virgin French oak casks taken from trees grown in the Thiron-Gardais area. Lindores Abbey Distillery places great importance on environmental preservation and has arranged for oak trees to be planted around Thiron-Gardais to replace those used to create the casks for the French bottling.

The spirit (49.4% ABV) is non-chill filtered, and has initial notes of mellow vanilla, caramel syrup and baking spices, giving way to ginger and roasted chestnuts. The smoothy, silky texture is synonymous with the character of Lindores spirit.

The design of the bottle pays homage to the beautiful columns and architecture of both abbeys while the cork bears the inscription “May Our Roots Be Forever Intertwined,” the same message which appears in French on a plaque gifted to the French village by the McKenzie Smith family on a visit to Thiron.

Drew McKenzie Smith, MD and Founder of Lindores Abbey Distillery, commented: “This release is the first in a series of annual limited bottlings which will celebrate the links between our two great abbeys. Without the monks of Thiron-Gardais and the knowledge they passed on to the monks who founded Lindores, the story of whisky as we know it today could be entirely different. We want to pay homage to our unique history and create a wonderful spirit which showcases the mastery of the Lindores' team's skills.”
