Balancing a busy schedule with the need for nutritious meals can be a challenge. 

However, with a bit of planning and creativity, you can whip up quick, healthy, and delicious dinners in no time. 

Here are some fantastic recipes that are perfect for weeknight dining. 


1. Vegetable Stir-Fry with Quinoa

Ingredients:

150g quinoa

1 tbsp olive oil

1 red onion, thinly sliced

2 cloves garlic, minced

1 red pepper, thinly sliced

1 yellow pepper, thinly sliced

1 courgette, sliced

100g mushrooms, sliced

2 tbsp soy sauce

1 tbsp honey

1 tsp grated ginger

A handful of fresh coriander, chopped

Instructions:

Rinse the quinoa under cold water. In a medium saucepan, bring 300ml of water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for about 15 minutes until the water is absorbed.

In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes.

Add the peppers, courgette, and mushrooms. Cook for about 5-7 minutes until the vegetables are tender.

In a small bowl, mix the soy sauce, honey, and grated ginger. Pour over the vegetables and stir well.

Serve the stir-fry over the cooked quinoa and garnish with fresh coriander.


2. Baked Salmon with Sweet Potato Wedges

Ingredients:

2 salmon fillets

2 sweet potatoes, cut into wedges

2 tbsp olive oil

Meanwhile, place the salmon fillets on another baking tray. Drizzle with the remaining olive oil and season with salt and pepper.

Bake the salmon in the oven for the last 12-15 minutes of the sweet potato cooking time, until the fish is cooked through and flakes easily with a fork.

Serve the salmon with the sweet potato wedges, garnished with fresh parsley and lemon wedges.


3. Chicken and Avocado Salad

Ingredients:

2 chicken breasts

1 tbsp olive oil

Salt and pepper to taste

1 avocado, sliced

100g cherry tomatoes, halved

50g mixed salad leaves

½ cucumber, sliced

1 small red onion, thinly sliced

Juice of 1 lemon

2 tbsp balsamic vinegar

1 tbsp Dijon mustard

Instructions:

Season the chicken breasts with salt and pepper. Heat the olive oil in a frying pan over medium heat. Cook the chicken for 6-7 minutes on each side, until golden brown and cooked through. Let it rest for a few minutes before slicing.

In a large salad bowl, combine the avocado, cherry tomatoes, mixed salad leaves, cucumber, and red onion.

In a small bowl, whisk together the lemon juice, balsamic vinegar, and Dijon mustard. Season with salt and pepper to taste.

Add the sliced chicken to the salad and drizzle with the dressing. Toss gently to combine and serve immediately.


4. Lentil and Spinach Dhal

200g red lentils

1 tbsp vegetable oil

Full English Breakfast (United Kingdom):

Morrisons launches great new pick 'n mix kids meal deal in cafés for school summer holidays

Ever-mindful of the fact that families up and down the country are struggling to cope with the current economic crisis, Morrisons is doing more to help feed families during the summer holidays with the introduction of a new pick ‘n’ mix style meal option for kids in Morrisons Cafés, just in time for the summer holidays. Customers can now pick up a sandwich, snack and drink to feed their little ones for just £3.49.

The new kid’s meal deal can also be claimed free of charge thanks to Morrisons continued exclusive Kids Eat Free offer. Customers will be able to get one free kids meal from the kids menu with any adult meal that's over £4.49. The offer is available all day, every day, seven days a week for any child aged under 16 in its cafés nationwide. 

Sandwiches filled with classic kids’ favourites, ham or cheese, can be paired with a wide range of snack and drink choices likes Hula Hoops, Babybels, jelly, bags of fruit, flavoured milk, Robinsons Fruit Shoot, Cawston Press Juice or water.

Chris Strong, Morrisons Café Buying Manager said: “We understand that for many parents and carers keeping the kids fed during the summer holidays can be very much of a challenge, especially with the absence of free school meals. Our new pick ‘n’ mix meal deal, alongside our existing Kids Eat Free offer, are just a few ways we at Morrisons are helping everyone have access to nutritious food without breaking the bank.”

An adult meal deal has also been introduced for £4.79 offering customers a sandwich or toastie alongside a drink and a cake. Toastie options include ham and cheese, whilst egg & cress, prawn, tuna mayonnaise and salmon and cucumber sandwiches are available.  

Both hot and cold drinks are included and cake options include chocolate fudge, lemon drizzle, brownie or a Victoria Sponge.

Big Daddy Burgers! Morrisons launches giant burger in cafés for Father's week

Morrisons has announced the launch of its latest meaty feast for Father’s Day Week: The Big Daddy Burger. 

The Big Daddy Burger will be available in all Morrisons Cafés in the week leading up to Dads’ very special day and costs £7.99 or only £5 for More Card customers, from Monday 12th to Sunday 18th June.   

There are two Big Daddy Burgers, made using 100% British beef, which are layered with a double serving of cheese and bacon, a hash brown, special burger sauce, lettuce, tomatoes and onion rings. The burger is served with a side of chips and portion of coleslaw making this the perfect way to treat the father figures in your life. 

The tasty treat will certainly make Dads all over the UK feel full of love (and food!) on their big day and those looking for a vegetarian option are also well catered for, as Morrisons chefs have created The Big Daddy Veggie Burger too.

Also served with chips and coleslaw, The Big Daddy Veggie Burger consists of three meat free patties, double cheese, a hashbrown, burger sauce, tomatoes, lettuce and onion rings for £7.99 or £5 for More Card Customers.

To make the celebration even greater value, families can enjoy the Kids Eat Free offer including all-time favourites like Bangers and Mash and Fish and Chips, when purchasing The Big Daddy Burger or any other meal costing £4.49 and over.

How are the new meals at Sizzling Pubs? Sizzling!
