'This region rivals any in the UK for cool places to stay, eat, visit and shop but has its own particular flavour that everyone who has experienced it will recognise.

"We host the awards each year to honour the community of independent businesses, suppliers, growers, makers and creatives and everyone who relies on those industries.'

The celebratory supper and awards ceremony at Nancarrow featured a feast cooked by the Nancarrow team led by head chef Jack Bristow. It included dishes such as ricotta ravioli with heritage tomato, lovage and Old Winchester, and grilled hispi cabbage with lamb-fat crumb, Cornish seaweed and shallot. The Great Cornish Seafood Weekend Announced

Listen up, seafood fans! The first-ever Great Cornish Seafood Weekend is taking place on the 26th and 27th of October at the Great Cornish Food Store in Truro.

The special inaugural event will be a celebration of seafood, Cornwall's fishing industry and all those who work within it. The weekend-long event will include live demonstrations, talks, tasting stations, a seafood bar, sea shanties and a host of children's activities.

Pete Murt, who is the head chef at Rick Stein's flagship The Seafood Restaurant, is one of the first guest chefs to be confirmed in the event's line up. Pete's seafood journey began in 2000 at the age of 16 when he became a kitchen porter at Rick Stein's St Petroc's Bistro. After a stint of travelling in East Asia, Pete returned to Padstow and became head chef at The Seafood Restaurant, only the fourth in its 40-year history.

Joining Pete will be Stephane Delourme, former head chef and group chef at Rick Stein Restaurants, who will demonstrate the art of shucking and cooking oysters using different flavours. Acclaimed fishmonger Annie Seabourne of My Fish Kitchen will be using her renowned skills to show how to cook, pick and eat crab.

Also making an appearance will be Jeffrey Robinson, one of the first chefs in the world to receive a Green Michelin Star, who has a passion for provenance and sustainability and is opening his own cookery school in his hometown of St Ives.

The Great Cornish Seafood Weekend is a collaboration between the award-winning Great Cornish Food Store and the Cornish Fish Producers' Association (CFPO), which represents more than 160 member vessels.

CFPO chief executive Chris Ranford is among the weekend's speakers and will focus his session on the fishing industry's vital economic role, with around 8,000 people employed west of the River Tamar.

Says Chris: “The Great Cornish Seafood Weekend is a great opportunity to celebrate how crucial the seafood sector is to our economy and how we are home to one of the most diverse, sustainable fleets in Europe, landing more than 50 different species of fish every year.”

Ruth Huxley, director of the Great Cornish Food Store, added: “With the first-ever The Great Cornish Seafood Weekend we want to shine a light on our brilliant fishing industry, the lifeblood of so many of our coastal communities.

“We found that when we asked people what food they most associated with Cornwall, more stated seafood rather than any other type of food.

“We're obviously really looking forward to showcasing the huge variety available from our coastal waters and encouraging people to explore lesser known species and different ways of using them.”

Also attending over the weekend will be the Cornwall Wildlife Trust promoting their Good Seafood Guide, the go-to source for advice on sustainable fish choice, and Falmouth singer songwriter Toby Webb as well as fiddle and double bass duo 'Months Advance', who will both be entertaining visitors with folk music and sea shanties on both days.

The store's outside space will be transformed into a play area for children, with mobile rock pooling led by Cornwall and Devon-based social enterprise, The Rock Pool Project and fishy face painting.

The weekend is part of the Agrifood Sector Development Project delivered by the team behind the award-winning Great Cornish Food Store.

The project has been made possible through the Good Growth programme, which is managed by Cornwall Council and funded by the Government's UK Shared Prosperity Fund.

Here are some traditional recipes that you can easily recreate at home.

1. Cornish Pasty

A true icon of Cornish cuisine, the Cornish pasty is a savoury pastry filled with meat and vegetables. Traditionally, it was a portable meal for miners and farmers.

Ingredients:

500g shortcrust pastry

350g beef skirt, diced

1 large potato, peeled and diced

1 onion, finely chopped

1 small swede (rutabaga), peeled and diced

Salt and pepper to taste

1 egg, beaten (for glazing)

Preheat your oven to 200°C (180°C fan, gas mark 6).

Roll out the pastry and cut into four 20cm circles.

In a bowl, mix the beef, potato, onion, and swede. Season well with salt and pepper.

Divide the mixture evenly among the pastry circles, placing it on one side of each circle.

Fold the pastry over to create a semi-circle and crimp the edges to seal.

Place the pasties on a baking tray and brush with beaten egg.

Bake for 45-50 minutes until golden brown. Serve hot or cold.

2. Devonshire Cream Tea

A quintessential Devonshire treat, the cream tea features freshly baked scones served with clotted cream and jam.

Ingredients for Scones:

225g self-raising flour

1 tsp baking powder

50g butter, cold and cubed

25g caster sugar

150ml milk

1 egg, beaten (for glazing)

Instructions:

In a bowl, mix the flour and baking powder. Rub in the butter until the mixture resembles fine breadcrumbs.

Stir in the sugar, then gradually add the milk to form a soft dough.

Turn the dough onto a floured surface and gently knead. Roll out to a thickness of 2cm and cut into rounds with a 5cm cutter.

Place the scones on the baking tray, brush with beaten egg, and bake for 12-15 minutes until well risen and golden.

Serve warm with clotted cream and strawberry jam.

Heat the oil in a large pan over medium heat. Brown the chicken breasts on both sides, then remove and set aside.

In the same pan, sauté the onion and garlic until softened.

Pour in the cider and stock, scraping up any browned bits from the bottom of the pan.

Return the chicken to the pan, add the thyme, and simmer for 20-25 minutes until the chicken is cooked through.

Cornwall's Clotted Cream Sales Soar as Visitors Flock to the Region

Cornwall's Trewithen Dairy is witnessing a 'remarkable' surge in clotted cream sales, which is great news for the dairy and farming industry in the county of Cornwall.

Despite July being one of the dampest in recent years, visitors are still flocking to the region. According to Visit Cornwall, over five million people visit the county every year during the annual summer holidays.

This is a welcome boost and a veritable boon for the region's producers as the demand for food in the region skyrockets.

At the heart of this lies a love for a traditional cream tea. Freshly baked scones adorned with jam and rich clotted cream are a must-have treat and at Trewithen Dairy sales are soaring.

During the peak summer months between May and September, Trewithen Dairy plans to produce an amazing 55.77 tonnes of their renowned clotted cream in various formats, including 56g, 114g, 200g, and 400g pots.

This volume alone would equate to almost 100,000 cream teas with an estimated 10 million more cream teas expected to be consumed through Trewithen's business providing clotted cream into other retailers.

That's an enormous number of people consuming authentic Trewithen Dairy Cornish clotted cream that bears the all important and vital PDO stamp. This stands for Protected Designation of Origin and means that it is produced, processed and prepared in Cornwall using recognised methods or skills. It's genuine, delicious Cornish clotted cream made with milk from cows which are raised and grazed by farmers who are very passionate about their health and welfare. High quality, Cornish milk creates the very best tasting clotted cream.

One of Trewithen Dairy's partners, farmer Matt Rowe of Tredinnick Farm, plays a vital role in helping meet the demand. During the peak holiday season milk production at his farm increases by 20% with more milk sold in August and September than any other time of the year.

Matt said: “Everybody loves a cream tea and its brilliant. We aim our profile to fit a 20% increase during the summer to cope with the demand in Cornwall. We try and maximise our returns so at this time of year we do produce more milk for the tourists.

“We're lucky to live and work in such a beautiful part of the world, with clotted cream made from cows all raised and grazed in Cornwall, a delicious reminder of our county.”

Francis Clarke, a director of Trewithen Dairy, said: “It's always lovely to see so many people coming to Cornwall for their holidays, and it's wonderful to know our clotted cream holds a very special place in the hearts of those who visit us.

"Even after they return home, people want to enjoy the taste of Cornwall, and that's great news for our business and Cornwall's dairy farmers, who work hard to provide the finest milk for our cherished products.”

As the demand for clotted cream hits its peak, Trewithen Dairy is very proud to showcase the versatility of this indulgent treat. Beyond the classic cream tea, clotted cream enhances a wide range of summer recipes, from sweet to savoury.

And as Cornwall continues to flourish as a top holiday destination, Trewithen Dairy's clotted cream will continue to provide a delicious reminder of a region that is loved by so many. And when the holiday season is over, Trewithen Dairy sales of clotted cream continue to remain robust through its online shop with people buying their cream teas online reminding them of sublime days in Cornwall, all year round.

Fallowfields restaurant Unveils 'Jewels of the English Sun' Set Menu

A leading and innovative Cornish restaurant is aiming to keep things fresh for summer with its latest menu update which is  called 'Jewels of the English Sun' which launched earlier this week.

Fallowfields, located within the Housel Bay hotel on the Lizard Peninsula, has updated its tasting menu with an assortment of summer-inspired dishes aimed at giving its guests and diners a taste of some of the best the season has on offer.

Commenting on the menu, Head Chef Joseph Fallowfield said: “At Fallowfields, we focus on delivering the best locally-sourced seasonal dishes which means regular menu updates are required as we chop and change the ingredients we use as the seasons develop and change.

“Now we're full swing into the sunny months, we felt that we wanted the menu to showcase a selection of ingredients that range from beloved summer favourites to some unique flavour options exclusive to our location. Our goal is to leave diners yearning for just one more bite!"

He went on to say: “We create our dishes from the ground up, focusing closely on several key ingredients; with this approach, nothing beats fresh, seasonal and locally sourced.”

The 'Jewels of the English Sun' tasting menu features a variety of dishes, examples of which include:

Miniature sea lettuce loaf with whipped dulce butter

Cornish mozzarella with heritage tomato, thyme, peach sorbet and peach ash

Lobster & prawn bisque with carrot, ginger, Fowey mussels and saffron

Cucumber tart with berries, pistachio macaroon and basil

Joseph added: “The reception we've had from diners at Fallowfields continues to blow us away. We're in an isolated location on the very tip of the coast and to see increasing numbers who are making their way down just to try our food is really fantastic for us.”

The new menu joins another recent change to the hotel's food offering, Seafood Sundays, which swaps out the more usual traditional Sunday roast for something a little more coastal-inspired with a selection of lobster and seafood dishes taking the spotlight.

The full tasting menu is £65 per person or £110 with paired wines. The short tasting menu is £45 per person or £70 with paired wines.

Fallowfields is open from Wednesday to Saturday evenings with bookings available from 6pm – 8.30pm.

The 'Jewels of the English Sun' tasting menu is available now at Fallowfields. Reservations can be made online via https://www.houselbay.com/eat-drink.

Summer cup scones

Light and refreshing, the scones are a delicious talking-point to serve at parties for a summery twist on the classic cream tea. Pen Sans Summer Cup is bursting with ripe summer fruits and red berries - perfect with our luxurious Cornish clotted cream. Feel free to use shop-bought scones and take them to the next level if you haven’t time to bake your own.

Ingredients

For the scones

350g Self-raising flour, sieved

Pinch of salt

100g Trewithen Dairy unsalted butter

110ml Trewithen Dairy whole milk

1 Egg, beaten

For the topping

150g Frozen strawberries

2tbsp Caster sugar

50ml Pen Sans Summer Cup

Garnish

Fresh strawberries

Mint leaves

Cucumber, sliced

Trewithen Dairy Cornish clotted cream

Method

BeginS with the scones. Preheat the oven to 190c. Grease and line two baking trays.

Using your fingertips, rub the butter into the flour to create fine breadcrumbs. Stream the milk in slowly, using a cold knife to gently mix until it just forms a dough. Wrap in cling film and chill for 20 minutes while you make the strawberry topping.

Place the frozen strawberries and a splash of water in a saucepan over a medium heat, allowing them to break down. At this point, add a measure of summer cup and caster sugar. Continue to stir for a couple of minutes until it has reduced down slightly. Remove from the heat and chill.

Back to the scones. On a lightly floured surface, roll the dough out to a thickness of 2cm and cut into rounds with a cutter. Don’t twist them out of the cutter, otherwise they will warp in the oven.

Place on the baking trays, before brushing the tops with the beaten egg. Bake for 12 minutes until slightly golden. Remove from the oven and allow to cool on a wire rack.

To serve, smother with strawberry sauce, a generous spoonful of Cornish clotted cream and garnish with strawberries, cucumber and mint. Enjoy with a large jug of summer cup filled with summery botanicals. Heaven!

No-churn summer cup clotted cream ice-cream

The epitome of summer flavours, Pen Sans Summer Cup is bursting with red berry aromas and pairs perfectly with our rich Cornish clotted cream. Make this easy no-churn ice-cream in advance so you have it ready to pull out of the freezer for hot days and al fresco dessert.

Ingredients

2 Large eggs

125g Caster sugar

250ml Double cream

200g Trewithen Dairy Cornish clotted cream

250ml Trewithen Dairy whole milk

200g Strawberries - frozen (defrosted) or fresh

1 tbsp Icing sugar

50ml Pen Sans Summer Cup

Garnish

Mint leaves

Strawberries

Orange slices

Method

In a large bowl, whisk the eggs until light and fluffy. While still whisking, add the caster sugar, one spoonful at a time and continue mixing for a few minutes. Add both creams and pour in the milk, while continuing to whisk.

Pour into a freezer-proof container (a loaf or baking tin works well) and freeze for two hours. Remove from the freezer, whisk thoroughly and return to the freezer.

In the meantime, place the strawberries and a splash of water in a small saucepan over a medium heat and cook until the strawberries break down into a sauce. Add the icing sugar and Pen Sans Summer Cup. Allow to simmer for a few minutes until the mixture reduces slightly. Set aside too cool.

Stir the strawberry sauce through the semi-frozen ice cream and, using a cocktail stick, pull it gently through to create a beautiful marbling effect. Add the remaining strawberries on top and return to the freezer until frozen - approximately one hour later. When you’re ready to serve, remove from the freezer and add fresh strawberries, mint and orange slices to garnish. Enjoy in cones or bowls.

Trewithen Dairy's Movie Night 'Scone Revolution' Takes Centre Stage at Royal Cornwall Show

And a special Movie Night Hamper is now Available for Home Delivery!

Trewithen Dairy, Cornwall's top provider of delicious dairy products, is justifiably proud and utterly thrilled to be able to announce the resounding success of its 'Night at the movies - Scone Revolution' at this year's Royal Cornwall Show. The event surpassed all expectations as 18,000 free Cornish clotted cream scones with a movie themed twist were enjoyed by lucky visitors to the show.

Now in its fourth year, Trewithen's 'Scone Revolution' showcases the versatility of Cornish clotted cream and shows there are more ways to serve a cream tea than with the traditional dollop of jam.

Trewithen Dairy transformed their show stand into a captivating cinematic experience, complete with movie-inspired props, a special behind the scenes area, and, of course, the famous scones with a very special twist.

From the very moment the gates to the show opened, word spread like wildfire about the unusual scones Trewithen had on offer at their stand, with queues forming from the start of the show.

The favourite, as voted on Trewithen's Instagram poll, was a savoury scone called 'It's Nacho Scone' a delicious cheese scone covered in tangy salsa, topped with clotted cream, studded with nachos and a jalapeno. The line up also included a sweet 'Salted Caramel Popcorn' and 'The Strawberry Milkshake'. All of the recipes are available at www.trewithendairy.co.uk

"Trewithen Dairy is really thrilled with the overwhelmingly positive response witnessed at the Royal Cornwall Show," says Francis Clarke, director at Trewithen Dairy.

He added: "Visitors approached the savoury 'Nacho Scone' with trepidation and, unsurprisingly, needed a little convincing to try a scone with salsa, clotted cream and jalapenos! But it ended up being voted as the favourite scone of all!”

For those keen to recreate 'Night at the Movies Scone Revolution', the three recipes are listed on Trewithen Dairy's website. Inspired by the theme, Trewithen has created a 'Movie Hamper' for scone enthusiasts and film lovers alike to recreate the enchantment of the show, in the comfort of their own homes.

The 'Movie Hamper' features Trewithen Dairy's signature Cornish clotted cream, made using traditional methods that have been passed down through generations. Alongside the velvety clotted cream, the hamper includes an assortment of freshly baked scones, salted caramel popcorn and a selection of classic movie-inspired treats. Available for nationwide delivery, for £27.49 from trewithendairy.co.uk.

For those who appreciate a well-crafted brew, there's two bottles of Korev from St Austell Brewery. Crisp and refreshing, dad can sit back and savour the pride and craftsmanship from the Duchy.

The hamper features two authentic Cornish pasties - a true Cornish delicacy loved by locals and visitors alike.

Trewithen Dairy's Cornish Lager and Pasty Hamper is available for order via the website www.trewithendairy.co.uk/shop and can be scheduled for Father's Day delivery.

Get a taste of Cornwall to your Christmas table

Banbury's Cornish Turkeys certainly live the rural idyll, raised by three generations of the same farming family outside Padstow on the North Cornish Coast.

And this year for the first time Christmas diners across the land will get to savour the difference between these birds and their intensively reared relatives - via a new national delivery service from www.cornishfoodmarket.co.uk.

"We hand-rear free-range black and traditional white turkeys here at Trembleathe Farm and they grow for much longer than mass produced birds so they develop that lovely deep turkey flavour," says Richard Banbury whose parents Fernley and Nancy, wife Clare and little daughters Gracie Ann and Roseanna all play their part in the nurturing process.

"I think part of it is also that our natural environment is so clean and clear with fresh air off the Atlantic - we're remote from roads and noise and commercial activity and the birds are raised as they should be - stress free."

For nearly fifty years these turkeys have been enjoyed throughout Cornwall at Christmas time but now the Banbury family - like scores of the county's best food and drink producers - are working with the team at cornishfoodmarket.co.uk to spread not just the word but the reality of best Cornish fare to the nation at large.

"We launched our website a year ago, delivering online orders of all this fantastic produce to homes and businesses in Cornwall and parts of Devon," says Sean Williams, MD of cornishfoodmarket.co.uk and its parent company Westcountry Fruit Sales, which delivers wholesale to restaurants and caterers across the two counties.

"Now we're delivering further afield and the Banbury family's turkeys are a prime example of why we are almost evangelistic about the wonderful products we can supply.

"The big supermarkets have had it their own way for far too long and their deal for customers, communities and their suppliers leaves so much to be desired. We're showing how you can provide a better service all round, with the freshest and best products, but still great value for money."

Alongside the Cornish turkeys cornishfoodmarket.co.uk's online customers can order award-winning wines and ciders, beers and juices, cheeses and pickles, clotted cream, mincemeat, puds and even mistletoe - delivered to doorsteps across the country. Check out their Christmas offerings from the top Cornish producers at www.cornishfoodmarket.co.uk.
