Emergency Pizza: A Quick and Delicious Tortilla Hack

Sometimes, cravings strike when you’re short on time or ingredients, but that doesn’t mean you can’t enjoy a satisfying slice of pizza!

With just a tortilla, some tomato ketchup, a pinch of Italian seasoning, and a sprinkle of mozzarella cheese, you can whip up an emergency pizza in two minutes using a microwave. Here’s how to do it:

Ingredients:

1 tortilla (any size will do, but larger ones are best)

2-3 tablespoons of tomato ketchup

A pinch of Italian seasoning (or dried oregano and basil if you have them)

A handful of shredded mozzarella cheese

Method:

1. Prepare Your Base:

Place your tortilla on a microwave-safe plate. Spread a thin, even layer of tomato ketchup over the surface, stopping just before the edges to mimic a pizza crust. If the tortilla is a little dry, spread a layer of olive oil over it.

2. Season It:

Sprinkle a pinch of Italian seasoning over the ketchup. This step gives your emergency pizza a more authentic pizza flavour with minimal effort.

3. Cheese It Up:

Scatter a generous handful of mozzarella cheese over the top. If you have other toppings like olives, sliced peppers, or leftover cooked meat, you can add those too!

4. Microwave Magic:

Pop the plate into the microwave and cook on high for 1.5 to 2 minutes. Keep an eye on it to ensure the cheese melts fully but doesn’t overcook.

5. Cool and Enjoy:

Carefully remove the plate (it’ll be hot!) and let the pizza cool for a minute or two before slicing or folding it into a wrap.

Tips for Success:

If you prefer a crispier base, you can briefly toast the tortilla in a dry frying pan before adding your toppings.

For extra flavour, drizzle some olive oil or add a dash of garlic powder to the ketchup.

Experiment with whatever you have in the fridge — this recipe is a blank canvas for creativity.

Why This Works:

The tortilla provides a thin, crispy base that mimics a classic pizza crust. Ketchup, while unconventional, gives a tangy tomato flavour, and the melted mozzarella ties it all together with its gooey, cheesy goodness. The microwave ensures everything comes together in a flash, perfect for late-night cravings or a quick snack.

So next time you’re in a pinch, grab a tortilla and turn your kitchen into a pizzeria in under 5 minutes. Simple, speedy, and surprisingly satisfying — emergency pizza to the rescue!

I made this at work today and thought: "I really must share my recipe for emergency pizza!" So here it is. I'm sorry, I don't have a photograph because I ate t before I thought about writing this post.

Make your very own easy-peasy Italian-Mexican-Indian-British tortilla wrap in minutes!

You too can make your very own easy-peasy Italian-Mexican-Indian-British tortilla wrap in minutes! And I'm going to tell you how.

First, take a tortilla wrap and oil it with ghee, butter or vegetable margarine, olive oil, or rapeseed oil. In fact Borderfield's British Rapeseed oils are excellent for this. Especially their delicious spray oils. Trust me. You won't know how you coped before you buy Borderfields!

Spread it with humus or a similar paste.

Next spread a thin level of tomato puree or tomato sauce over it.

Then shred ham, chicken, any other type of cooked meat that takes your fancy, or a vegetarian alternative. Squeaky Bean products are ideal.

Next add a good layer of grated or sliced cheese dairy or otherwise, it really is up to you.

Sprinkle with cumin, turmeric, a little bit of salt, a good deal of pepper (ground black is awesome!) and some Italian seasoning.

Roll it up tightly and then microwave it for two to three minutes.

It'll be piping hot, as they say, so whatever you do, don't burn your mouth on it!

You are then the owner of an Italian-Mexican-Indian-British feast on a plate. Enjoy it!

Grab a Slice of the Action – Plant-Based Pizza Company 'One Planet Pizza' Launch a UK Supermarket First

One Planet Pizza, the fast-growing plant-based pizza company, is launching in Morrison's nationwide from October with a frozen category first, a plant-based Tex Mex pizza.

One Planet Pizza originally launched into Asda with their trademark sourdough plant-based pizzas. Since then, they have grown fast, outpacing plant based growth and developing several new recipes.

Now, chefs at One Plaent Pizza have developed a plant-based version of a UK favourite, Tex Mex.  Like the rest of the range, the new variant combines One Planet Pizza's popular wood fired sourdough base with rich tomato sauce and a unique and highly acclaimed white bean based cheese (a high protein secret weapon which makes their pizzas around 35% lower fat than the market1). To top it all off, the Tex Mex is covered with marinated vegetables and sprinkled with jalapeños for a little kick.

One Planet Pizza was founded by father and son team, Mike  and Joe Hill, with a clear mission to revolutionise the freezer aisle and get more people excited about plant-based food. Since their inception in 2016, they have grown rapidly, now listed in Morrison's, Asda, Booths, and across 6 markets, with a passionate fan base of vegans and flexitarians alike.

Joe Hill, co-founder of One Planet Pizza and guest Judge on BBC's The Apprentice, says “We can't wait to spice up Morrison's freezers with our outrageously tasty Tex Mex. Our mission has always been to make vegan pizzas SO good that even meat eaters want a slice. We're pretty proud that our strong sales, reviews, and brand growth suggest we are doing exactly that.”

Mike and Joe are both passionate long term vegans who believe strongly in the power of plant-based foods to tackle the climate crisis. Adopting a plant based diet can reduce carbon footprint by up to 52%2, though some sources think it could be far higher, so the pair developed hundreds of different recipes in their search for the perfect combination of toppings and sourdough base to make pizzas which appeal to everyone. The glowing reviews and strong sales suggest that their mission is well underway.

One Planet Pizza will be available in Morrison's from October 2024.

1. United Kingdom: Fish and Chips

Fish and chips is a quintessential British dish, deeply rooted in the nation's culinary heritage. This classic comfort food consists of battered and deep-fried fish, typically cod or haddock, served with thick-cut chips (French fries). Traditionally, it's accompanied by mushy peas, tartare sauce, and a generous sprinkling of salt and vinegar. The dish dates back to the 19th century and remains a firm favourite among Brits and visitors alike.

2. Italy: Pizza Margherita

Italy is renowned for its exceptional cuisine, and pizza Margherita is one of its most iconic offerings. Originating from Naples, this simple yet delicious pizza features a thin, crispy crust topped with fresh tomato sauce, mozzarella cheese, and basil leaves, representing the colours of the Italian flag. This dish epitomises the beauty of Italian cooking – using high-quality, fresh ingredients to create a flavourful masterpiece.

3. Japan: Sushi

Sushi, a delicate and artful Japanese dish, has captured the hearts of food lovers worldwide. It consists of vinegared rice paired with various ingredients, such as raw fish, seafood, vegetables, and occasionally tropical fruits. Sushi is often served with soy sauce, pickled ginger, and wasabi. The skill involved in making sushi, along with its emphasis on fresh, high-quality ingredients, makes it a true representation of Japanese culinary excellence.

4. India: Butter Chicken

Butter chicken, or Murgh Makhani, is a beloved dish from India that has gained international acclaim. This rich and creamy curry features tender chicken pieces cooked in a spiced tomato sauce enriched with butter and cream. It's typically enjoyed with naan bread or steamed rice. Butter chicken exemplifies the complex and aromatic flavours that are characteristic of Indian cuisine.

5. France: Croissant

The croissant, a buttery and flaky pastry, is a symbol of French baking prowess. Originating from Austria but perfected in France, the croissant is made from layered dough that is meticulously folded and rolled to create its signature airy texture. Often enjoyed with a cup of coffee, this pastry is a staple of French breakfasts and embodies the country's dedication to the art of patisserie.

Tacos
6. Mexico: Tacos

Tacos are a cornerstone of Mexican cuisine, celebrated for their versatility and vibrant flavours. A traditional taco consists of a small corn or wheat tortilla filled with a variety of ingredients, such as grilled meats, beans, cheese, and fresh vegetables. They're typically garnished with salsa, guacamole, and lime. Tacos offer a delightful blend of textures and tastes, reflecting Mexico's rich culinary heritage.

7. China: Peking Duck

Peking duck is an iconic dish from China, known for its crispy skin and succulent meat. The duck is seasoned, air-dried, and roasted to perfection, resulting in a mouth-watering combination of flavours and textures. It's traditionally served with thin pancakes, spring onions, and hoisin sauce. Peking duck is a testament to the meticulous cooking techniques and rich culinary traditions of Chinese cuisine.

8. Thailand: Pad Thai

Pad Thai is a globally recognised Thai dish that balances sweet, sour, salty, and spicy flavours. This stir-fried noodle dish features rice noodles, eggs, tofu or shrimp, peanuts, bean sprouts, and lime. It's often seasoned with tamarind paste, fish sauce, and chilli. Pad Thai is a perfect example of the harmonious flavour profiles that define Thai cuisine.

9. Greece: Moussaka

Often made with lamb or beef, moussaka is a hearty and comforting meal, reflecting Greece's culinary traditions and Mediterranean influences. The dish is typically flavoured with cinnamon, nutmeg, and oregano, adding a unique and aromatic dimension to its taste.

10. Brazil: Feijoada

Feijoada is a hearty Brazilian stew made with black beans, pork, and beef, traditionally served with rice, collard greens, and orange slices. This dish has its roots in Portuguese cuisine but has been embraced and adapted by Brazilians, becoming a national favourite. Feijoada is often enjoyed as a communal meal, reflecting the importance of family and social gatherings in Brazilian culture.

11) USA: Hamburger

When one thinks of quintessential American cuisine, the hamburger inevitably comes to mind. This simple yet versatile dish has become a symbol of American culture and culinary innovation, embodying the spirit of convenience, diversity, and indulgence. The origins of the hamburger are often debated, but its rise to fame is undoubtedly tied to the American fast-food industry. In the early 20th century, establishments like White Castle and later McDonald's popularised the hamburger, making it a staple of American diets. A classic hamburger consists of a ground beef patty, grilled or fried, sandwiched between two halves of a bun. It is typically garnished with lettuce, tomato, onions, pickles, cheese, ketchup, and mustard, though regional variations and personal preferences lead to a myriad of topping combinations.

Poutine
12) Canada: Poutine

Poutine, a dish that perfectly captures the essence of Canadian cuisine, is widely regarded as the most iconic food of Canada. Originating from the province of Quebec in the late 1950s, poutine has grown from a regional speciality to a national symbol, celebrated for its hearty, comforting qualities and unique flavour profile. At its core, poutine consists of three simple ingredients: crispy French fries, fresh cheese curds, and rich brown gravy. The magic of poutine lies in the combination of these components. The fries provide a crunchy base, the cheese curds offer a squeaky texture and mild taste, and the hot gravy melds everything together into a deliciously indulgent dish. This harmonious blend of textures and flavours is what makes poutine so beloved.

Conclusion

From the bustling streets of Bangkok to the cosy cafes of Paris, each country's iconic dish offers a delicious glimpse into its culture and traditions. These culinary treasures not only satisfy our taste buds but also connect us to the rich histories and diverse peoples of the world. So, next time you travel, be sure to indulge in the local cuisine – it's one of the best ways to experience the heart and soul of a place. Bon appétit!

We'll be looking to write more on global cuisines in the future, so please look out for these posts.

The Art of Making Gourmet Pizzas at Home

Making gourmet pizzas at home is a delightful culinary adventure that combines creativity, fresh ingredients, and a touch of finesse.

Whether you’re a seasoned cook or a kitchen novice, crafting your own gourmet pizza can be a gratifying experience.

Here’s a guide to help you create delicious, restaurant-quality pizzas in the comfort of your own home.

1. Perfecting the Dough

The foundation of any great pizza is its dough. For a traditional thin crust, you’ll need:

500g strong white bread flour

10g fine sea salt

7g dried yeast

325ml warm water

1 tbsp olive oil

Instructions:

Mix the flour and salt in a large bowl. Dissolve the yeast in the warm water and let it sit for a few minutes until frothy.

Create a well in the centre of the flour mixture and pour in the yeast mixture along with the olive oil.

Mix until a dough forms, then knead on a lightly floured surface for about 10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

Punch down the dough and divide it into 2-4 portions depending on your desired pizza size. Roll each portion into a ball and let them rest for 15 minutes before shaping.

2. Choosing the Sauce

A great pizza sauce is simple yet flavourful. Here’s a quick recipe for a classic tomato base:

1 can (400g) chopped tomatoes

2 tbsp olive oil

2 cloves garlic, finely chopped

1 tsp dried oregano

Salt and pepper to taste

Instructions:

Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant.

Add the chopped tomatoes and oregano. Simmer for 15-20 minutes until thickened.

Season with salt and pepper. Blend if you prefer a smooth sauce.

3. Selecting Toppings

The beauty of a gourmet pizza lies in the quality and combination of toppings. Here are a few ideas:

Classic Margherita:

Fresh mozzarella

Fresh basil leaves

Extra virgin olive oil

Gourmet Veggie:

Roasted bell peppers

Artichoke hearts

Kalamata olives

Goat cheese

Fresh rocket

Meat Lover’s Delight:

Prosciutto

Italian sausage

Pancetta

Fresh rosemary

Seafood Extravaganza:

Smoked salmon

Capers

Red onions

Dill crème fraîche

4. Assembling Your Pizza

Preheat your oven to its highest setting (usually around 250°C). If you have a pizza stone, place it in the oven to heat up.

On a lightly floured surface, roll out your dough to your desired thickness.

Transfer the rolled dough onto a piece of baking parchment (this makes it easier to transfer to the oven).

Spread a thin layer of your tomato sauce over the base.

Add your toppings, being careful not to overload the pizza.

Drizzle with a bit of olive oil for added flavour.

5. Baking to Perfection

Carefully slide the pizza (with the parchment) onto your hot pizza stone or a baking tray.

Bake for 8-12 minutes, or until the crust is golden and the cheese is bubbling and slightly browned.

Remove from the oven and let it rest for a couple of minutes before slicing.

6. Final Touches

Garnish your pizza with fresh herbs, a sprinkle of sea salt, or a drizzle of high-quality olive oil just before serving. Pair your gourmet pizza with a crisp salad and a glass of wine for a truly indulgent meal.

Making gourmet pizzas at home is all about using fresh, high-quality ingredients and experimenting with flavours. Don’t be afraid to get creative and try new combinations. With practice, you’ll be able to craft pizzas that are as good, if not better, than those from your favourite pizzeria. Enjoy your culinary journey and buon appetito!

Pizza is good for anxiety?

Yes, apparently it's true. According to new research commissioned by Chicago Town Pizza pizza can  calm you down.

It’s been scientifically proven by Chicago Town that cooking / eating a pizza can genuinely reduce your anxiety when you’re watching the football (perfect timing with the Euros starting up!)

It came on the back of survey results from Chicago Town showing the overwhelming majority (92%) find aspects of watching the game stressful, with around 4 in 10 (42%) suggesting pizza has a feeling of comfort while it's cooking.

Football vlogger Theo Baker (who’s taking part in this year’s Soccer Aid) trialling the test himself by measuring his blood pressure, heartrate and Galvanic Skin Response (GSR) both before and during some of the most iconic nerve-wracking moments in footballing history. Both with and without pizza.

Just before the Euros, Chicago Town joined University of East Anglia’s Professor Oli Buckley to conduct a biometrics study, testing if pizza could reduce nerves before and during football matches.

Pitchside podcaster, Theo Baker, was hooked up by the professor measuring his blood pressure, heartrate and Galvanic Skin Response (GSR) both before and during some of the most iconic nerve-wracking moments in footballing history.

The study, in partnership with the UK’s most popular frozen pizza brand, used the brand’s Takeaway Weekender Stuffed Crust Salt and Pepper Chicken pizza, concluded that while in the vicinity of fresh-rising dough, cheese, tomato and tasty toppings, Theo showed less signs of nerves ahead of a crunch game, with the pizza providing a calming and relaxing effect.

Theo said: “Football is, by far, the thing that brings on the most nerves for me in life so when I had the opportunity to see if getting stuck into my favourite food could help with that in any way…I jumped at it."

I wonder if this is one of the reasons that pizza is so popular with hard pressed students during those tense, stressful exams?

Gourmet Pizza Making at Home: Elevate Your Pizza Game

There’s nothing quite like the satisfaction of creating a gourmet pizza in your own kitchen.

While takeaway pizza has its place, crafting a homemade gourmet pizza gives you the pleasure of  experimenting with unique flavours, high-quality ingredients, and a personal touch.

Here’s how you can boost your pizza game and make a truly exceptional gourmet pizza at home.

The Perfect Dough: The Foundation of Gourmet Pizza

The base of any great pizza is the dough. For a gourmet pizza, the dough needs to be flavourful and have the right texture. Here’s a simple recipe for a perfect pizza dough:

Ingredients:

500g strong white bread flour

325ml lukewarm water

1 tsp salt

1 tsp sugar

2 tsp instant yeast

2 tbsp olive oil

Instructions:

Mixing the Dough: In a large bowl, combine the flour and salt. In a separate bowl, dissolve the yeast and sugar in the lukewarm water. Let it sit for a several minutes until it develops nicely and becomes frothy. Add the yeast mixture and olive oil to the flour mixture at this stage.

Kneading: Mix until a dough forms, then turn it out onto a floured surface. Knead for about 10 minutes until the dough is smooth and elastic.

Rising: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Shaping: Once risen, punch down the dough and divide it into desired portions. Shape each portion into a ball and let rest for 10 minutes before rolling out.

If for some reason you are unable to make your own dough you can buy high quality pizza bases from high end supermarkets and delicatessens.

Sauce: The Soul of Your Pizza

A gourmet pizza deserves a rich, flavourful sauce. You can opt for a traditional tomato base or experiment with alternatives like pesto or white sauce. Here’s a recipe for a classic tomato sauce:

Ingredients:

400g tin of Mutti San Marzano Peeled Tomatoes

2 cloves garlic, minced

2 tbsp olive oil

1 tsp salt

1 tsp sugar

Fresh basil leaves, chopped

Black pepper to taste

Instructions:

Sautéing: In a saucepan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.

Simmering: Add the tomatoes, salt, and sugar. Crush the tomatoes with a spoon or use an immersion blender for a smoother texture. Let the sauce simmer for 15-20 minutes.

Finishing: Stir in the chopped basil and season with black pepper. Let the sauce cool before spreading it on your pizza dough.

Toppings: Where Creativity Shines

The beauty of making gourmet pizza at home is the freedom to use the finest and most creative toppings. Here are some ideas to inspire you:

Classic Margherita:

Fresh mozzarella

Fresh basil leaves

Extra virgin olive oil

Prosciutto & Rocket:

Thinly sliced prosciutto

Fresh rocket (arugula)

Shaved Parmesan

Balsamic glaze

Truffle & Mushroom:

Mixed wild mushrooms, sautéed

Truffle oil

Fresh thyme

Taleggio cheese

Fig & Goat Cheese:

Fresh figs, sliced

Goat cheese

Caramelised onions

Honey drizzle

Fresh rosemary

Baking: Achieving the Perfect Crust

For a truly gourmet pizza, baking is crucial. If possible, use a pizza stone or a steel in your oven to mimic the high heat of a pizza oven.

Preheating: Place your pizza stone or steel in the oven and preheat to the highest temperature (usually 250°C or higher) for at least 30 minutes.

Assembling: Roll out your dough on a floured surface, transfer it to a pizza peel or a baking sheet, and add your sauce and toppings.

Baking: Slide the pizza onto the preheated stone or steel. Bake for 8-12 minutes or until the crust is golden and the cheese is bubbly and slightly browned.

Serving: The Final Touch

Once your pizza is baked to perfection, let it rest for a few minutes before slicing. This helps the toppings settle and makes slicing easier. Serve your gourmet pizza with a fresh salad and a glass of wine to complete the experience.

Creating a gourmet pizza at home is not just about following a recipe; it’s about enjoying the process and experimenting with flavours. With high-quality ingredients and a bit of creativity, you can transform a simple pizza night into a culinary adventure. Happy pizza crafting!

Our pizza secrets revealed!

A new nationwide poll reveals we Brits have developed a taste for top-notch pizza toppings with pizza customisation at home sweeping across the nation and giving rise to a new breed of pizza “super toppers." Plus, our top pizza toppings uncovered.

Every year, the UK sees a massive £5 billion spent on pizzas, and while 80% of these are typically purchased from restaurants and takeaways, the landscape is evolving. This shift has led to a growing appetite for homemade pizzas and shop-bought alternatives that can be personalised and enjoyed in the comfort of one's own home.

Cooks&Co, the award-winning range of exciting store cupboard ingredients, is at the forefront of this pizza revolution, witnessing first-hand the surging demand for its quality ingredients as pizza toppings.

Its Green Frenk Chillies is now the no.1 best seller and its Sweety Drop Peppers has entered the top 10 best sellers list, too. In response,

the brand recently conducted an extensive nationwide study to dig deeper into the pizza-topping preferences of Brits, revealing a nation of astute pizza enthusiasts who relish the chance to become culinary pizza artistes, experimenting with a diverse range of favourite toppings and flavours.

DIY Pizza Customisation Sweeps the Nation and gives rise to Super Toppers

On average, pizza-loving Brits across the UK tastefully embellish their pizzas with just under 3 distinct toppings. However, there's an extraordinary league of pizza enthusiasts, 2.7 million strong, known as the "super toppers," who take culinary creativity to new heights by piling on an impressive 6 or more toppings.

The art of pizza customisation isn’t just reserved for home-made pizzas either, nearly half (47%) of Brits admit to pimping up their shop-bought pizzas with extra toppings.

Surprisingly, almost a fifth (19%) of Brits admit to going one step beyond and stripping away toppings from store-bought pizzas and replacing them with their own favourites. The 25-34 age group takes the reins in this picky topping transformation, with a third (33%) of them doing it. Northern Ireland residents proudly claim the title of champions in the customisation arena, with a quarter (25%) confessing to taking part in this flavourful makeover.

Beloved Ingredients, Taste Divisions and Trending Ingredients

In the world of pizza toppings, the preferences are absolutely clear. The top five favourites include extra cheese, shredded or chopped chicken, pepperoni, onions, and mushrooms. Conversely, the list of least-liked toppings comprises figs, jackfruit, aubergine, broccoli, artichoke, and seafood. The ever-controversial pineapple is still a topic of fierce debate, with almost half (48%) embracing its sweet tang, just over 2 in 5 (43%) staunchly refusing it, and 1 in 12 (9%) remaining undecided.

The popularity of pizza toppings like sweet peppers, chillies/jalapeños, and sundried tomatoes, mirrors broader culinary trends. These flavours offer bold, unique taste experiences, aligning with the growing interest in Mediterranean and Latin American cuisines, where these ingredients frequently shine forth.

Paired with other ingredients they help elevate pizzas to new heights of flavour and excitement, making them increasingly popular among pizza enthusiasts in the UK.

Said Katie Atkin, Brand Manager, Cooks&Co: "In Britain, we're a nation of pizza lovers who value quality ingredients and enjoy experimenting with different toppings and flavours. The findings shed light on the ever-evolving world of pizza, where customisation knows no bounds, and the quest for the perfect slice is a culinary adventure in itself.

“Our commitment to providing premium ingredients for the pizza-loving community and other dishes aligns perfectly with the creativity and passion we see in Brits' pizza-making endeavours and we're thrilled to be part of this flavourful journey.”

Indoor pizza ovens is a new trend in the UK

Following on from the utterly dismal British summer, indoor wood-fired pizza ovens Are the latest major trend.

They say that it's an ill wind that blows nobody any good and such is the case with British company, Orchard Ovens.

Because Preston, Lancashire-based Orchard Ovens, has experienced a spike in enquiries about its Cucina oven, which is a special oven, one designed to be installed at the heart of a kitchen and creating a wide variety of wood-fired cooked foods in doors.

Orcard Ovens now views the Cucina as the immediate future of wood-fired oven ownership in the UK, due to the credentials required of any indoor oven.

Orchard Ovens says more diligence is being shown by indoor oven seekers than is normally the case with those looking for an outdoor oven.

Hardly a second thought is ever given to money wasted on so-called outdoor pizza ovens, which fall apart due to poor quality and the fact that they are constructed using inappropriate materials.

Anyone installing an indoor oven is fully aware that they can't afford to fit an oven not fit for purpose.

The fear of having to renew their entire kitchen, not just the wood-fired oven, disrupting design, layout, worktops and surround, is leading to the new boom at Orchard Ovens, where authentic, artisan-built woodfired ovens have a reputation when it comes to their lifespan.

Notably, astute homeowners, making the right choice, are often of Italian descent.

One is Luca Ferrazzano, who is now a resident of Bristol but originally hailing from Naples, the spiritual home of pizza, where pizza has protected UNESCO status. Such is the guardianship over Neapolitan pizza that severe rules govern its cooking and promotion.

It's fairy to say that Luca had previously struggled with British made pizza ovens. He found them too unreliable for a financial investment and not authentic enough to match his high native Italian standards. Unfortunately he also found them to be just about incapable of cooking anything, unless the weather was absolutely perfect.

After further consideration this led him to investigate indoor pizza ovens as an option and, wanting an oven that wouldn't see him mocked by visiting Neapolitan relatives, he turned to Preston-based Orchard Ovens.

Orchard Ovens is the only UK supplier of top-notch Tuscan Valoriani ovens, including the Cucina, a ready-built oven that can be fitted quickly inside an indoor kitchen, once the correct flue arrangement is installed.

The Ferrazzano family had the Cucina fitted by the Orchard Ovens’ team and is now wowing his friends who had no idea it was possible to have an indoor woodfired pizza oven.

And Luca’s relatives from Naples can't detect any difference between its pizza and that enjoyed in a downtown Naples pizzeria.

Obviously using only traditional ingredients plays an important part, but the oven ensures accurate cooking of food, due to the best insulation and best construction materials. There are no issues with cold spots and no problem in retaining heat.

Luca has realised that, unlike other ‘pizza ovens’, the Valoriani ‘Cucina’ is superb, with no temperature differential between the top of the oven and the bottom.  In others he'd previously tried, users either have to burn the pizza’s top or bottom and compromise on this.

But now, regardless of what the British weather brings us, sun, rain or snow, his Cucina pizza oven can be fired up and, thanks to its massive versatility, used for a wide variety of dishes, from curries to Lancashire hotpots and bread to shellfish, steaks and even chips and Yorkshire puddings.

Orchard Ovens’ director, Andrew Manciocchi, says, “We couldn't have a better recommender of the Cucina oven than a native of Naples, for whom oven authenticity and quality are obviously crucial.

“Luca is one of a number of customers who decided the way forward, in an era of climate change and wet summers, is to install an indoor, rather than outdoor, woodfired pizza oven.  The shift in thinking we've seen this summer is notable, so we shall be going all out to supply Cucina ovens right through the late summer, autumn and inot winter.  These will be in situ in time to cook up wood-fired festive treats for Christmas, providing lots of joy.”

To find out more about the Cucina (£3495), which comes in a wide variety of colours and for which installation can be quoted, call 01772 250000. More information can be found at www.orchardovens.co.uk

Her went on to say: "You can try mature or vintage Cheddar for a more tangy twist, goat cheese for a piquant creamy flavour, or chilli-enhanced cheeses for that extra pizzaz.

"Pecorino-Romano sheep’s cheese is one of our favourites to give pizzas a salty bite, and for vegans, there's a growing range of fabulous animal-free cheeses with a range of flavours from milder to richer and smoky.

"The absolute joy of having your very own pizza oven is that you can experiment and having fun cooking with the family, so celebrate National Cheese Pizza Day this year by trying some of your favourite cheeses on delicious home-cooked pizza."

Celebrate National Prosecco Day with a Witt pizza

Why not raise a glass to National Prosecco Day this Sunday 13th August with the perfect pairing, delicious authentic Italian homemade pizza and bubbly Prosecco?

Pop open a bottle of fizz, gather your friends and family members, and host a Prosecco filled pizza party with the help of Witt pizza curators of the impressive pizza oven range which is taking the UK by storm this throughout this summer.

Says Geoff Johnson Witt Sales Director, and Pizza Guru at Witt UK & Ireland: “The crisp, aromatic flavours of Prosecco makes it a suburb partner with even the more traditional types of pizzas.

The sparkling fruit nuances and light balance of Prosecco really create a wonderful contrast to the denser tones of cheese and sliced meats, and its clean, refreshing punch partners especially well with seafood toppings such as prawns and shellfish.”

Pizza-free cooking in pizza ovens from Witt?

Award-winning Scandinavian Witt’s Pizza Oven range has been impressing customers and publications like BBC Good Food, Ideal Home, and Independent since its launch earlier this year.

With its stylish design and ultra-fast heating technology, the Etna Fermo Pizza Oven does more than render perfect pizzas. It does so much more, besides!

Geoff Johnson Sales Director and Pizza Guru at Witt UK & Ireland said: "The Etna Fermo Pizza Oven is fast heating and has a large cooking space meaning that not only can it produce perfect pizzas, it’s also great for roasting or searing meats, fish, vegetables as well as baking bread or delicious desserts.”

“Firstly, I really recommend that you invest in a good quality cast-iron skillet, it can handle intense heat and will work perfectly for many dishes. But you should never food directly onto your pizza stone, or it could become saturated with meat fats and also smaller foods like vegetables need to be contained during the cooking process.”

Geoff’s favourite things to cook in a pizza oven other than pizzas?

Roast Chicken with Lemon, Garlic, and Herb Butter

“My go-to for roast chicken is always lemon, garlic and herb butter - spatchcocking is a great way to reduce cooking time, and it’ll fit on a cast-iron pan in your Witt pizza oven.”

Focaccia

“Using pizza dough, garlic, Rosemary, salt, pepper and plenty of olive oil, you will have delicious homemade Focaccia in 30 minutes.”

Vegetables

“Even delicate vegetables such as tender stem broccoli can be cooked in your pizza oven. Most vegetables will benefit from a light coating of oil, salt, and pepper before you add them to the hot skillet. Keep an eye on them and make sure to turn them regularly. They really don't take too long to cook.”

(EDITOR: I feel turkey (perhaps breasts or wings?) and Christmas dinner vegetables would cook up nicely in a Witt pizza oven.)

Witt's Pizza Expert has some top tips for your home pizza cooking

Award-winning Scandinavian Witt’s Pizza Oven range has been wowing customers and publications like BBC Good Food, Ideal Home, and the Independent since its launch earlier this year. Witt’s pizza expert has revealed his top tips to get the most out of your pizza oven investment, helping you create tasty pizzas for many years to come.

Geoff Johnson who is the Sales Director and Pizza Guru at Witt UK & Ireland said: "There’s nothing better than hosting a pizza party during the summer months.

"The joy of entertaining family and friends while serving up delicious homemade pizzas from your very own pizza oven in your back garden is a very special moment, and a chance for everyone to show off their most creative pizza making skills.

"From classics like the Margherita, to more out-there recipes like chocolate spread and strawberries, pizza making is a fantastic chance to bond with your loved ones and have some fun.”

Actually, there's no reason that pizzas have to be savoury, so you can make yourself and your friends and family a tasty dessert pizza after you and they have polished off your earlier savoury creations!

Geoff’s top tips to get the most out of your pizza oven:

Select a good location

“Make sure you pick a prime location for your pizza oven. It must be on a stable heat safe table/surface placed in a nice social spot, so you don’t miss out on any of the action.”

Preparation is key

“I suggest having the dough shaped ahead of time and the toppings ready to go, you could even have everyone add their own toppings for extra fun!”

Invest in a pizza peel

“Without a pizza peel it can be tricky to get pizzas in and out of the pizza oven, so don’t hesitate in ordering one of these handy tools.”

Serve up family-style

“I suggest serving your pizzas family style at your next pizza party, this minimises stress and means no one is sitting around waiting for their pizza. Ensure you to opt for crowd pleasing toppings, then serve up a few bowls of salads and sides for good measure.”

Experiment by cooking other foods

“There are so many other foods that you can cook in a pizza oven. Including garlic bread, roasted chicken, charred potatoes, and even quiche!”
