Trewithen Dairy Tells You How To Make The Perfect Latte At Home

Making the perfect foam

Trewithen Dairy's Cornish Barista Milk is perfect for creating barista style microfroam due to its ideal protein (3.5%) and butterfat (4%) combination which creates a creamy texture and silky, longer lasting microfoam.

Fill one third of your milk jug to allow space in the jug for the milk to expand and enough milk to get the required foaming motion.

Give the steam arm a quick purge before using to clear any excess steam. 

Place the steam arm just underneath the surface of the milk and after a few short 'chirps' lower the steam arm further into the milk, positioning it at the side of the jug. This should initiate a swirling motion in the milk. Heat the milk to around 65 °C and froth until it reaches a velvety consistency. 

Pulling your espresso

For any good coffee it's important to start with high quality coffee for a robust and flavourful base. Whether you're using an espresso machine or a coffee pod, you'll need around 25-30ml of espresso coffee. Start running the shot of espresso as soon as you begin foaming your milk so that it is ready to go. Ideally, you're looking for a golden crema on top of the surface of your espresso.

Mastering the pour

After foaming your milk, gently tap the jug or bump on a table to remove any unwanted air bubbles and get ready for the pour.

Starting from a relatively high position of 2-3” above the cup with a central aim, pour the frothed milk over the espresso in a slow, steady stream until the cup is nearly half full. Continue to pour whilst gradually lowering the milk and steepening your pouring angle, adding a little wiggle to your wrist. Once almost full, pick up the jug and move it forward as you go, to create your first heart pattern. 

You can enhance your latte with syrups, spices, or flavoured powders to suit your taste preferences.

The Coolest Drink That Everyone's Talking About. With a Unique British Twist

The nation has been going crazy for clotted cream cold brews and shakes with a global coffee house chain pushing the latest trend of the drinks scene, especially with the "last gasp" British end of summer heatwave!

Cornish Trewithen Dairy can't get enough of these creamy, indulgent drinks and they have released their very own favourite flavours that anyone can make at home.

For an authentic experience, the cream must be Cornish. Trewithen Dairy uses only milk from Cornish herds to make their award-winning crusted clotted cream. It's gently heated and left to cool slowly, which lets the cream rise to the surface to form the famous thick golden crust. 

The Cream Tea Shake

Shake base:

50g Strawberries

200ml Milk

1 scoop Vanilla ice cream 

Topping:

1 spoonful Trewithen Dairy Cornish clotted cream

Granola sprinkle (pinch)

Half a scone 

Fresh strawberry slices

Strawberry jam

Method:

Start by blending your shake base until it's smooth and frothy. Add the halved strawberries, one scoop of ice cream and chilled whole milk and blend.

Spoon strawberry jam into the bottom of your glass and pour the milkshake up to the top.

Next, add half a scone (place a straw through the middle of the scone first so that it is held ready to drop on top of the glass) spread with jam first then a dollop of clotted cream. 

Garnish with a sprinkle of granola and fresh strawberry slice

 

Tropical Eton Mess Shake

Shake base:

100g Banana 

75ml Milk

75g Natural yoghurt

½ tsp Ground turmeric 

Juice of 1/2 lime

50g Pineapple 

15g Honey 

Topping 

1 scoop Trewithen Dairy Cornish clotted cream

Coconut flakes

Broken meringue 

Chocolate drops [optional]

Method:

Blend the banana, 100ml of milk, yoghurt, turmeric, tinned pineapple and honey into a creamy base until smooth. 

Feel free to add more milk if you want it more frothy.

Next, add the toppings.

Enjoy your amazing shake!

Chocolate - Red Velvet S'mores

Shake base:

50ml Beetroot juice (Obviously raw beetroot juice, not with any vinegar added!) 

200ml Milk

1 tbsp Cocoa powder 

50g Raspberries

Topping:

Chocolate brownie

Raspberries

Chocolate sauce

Marshmallow (blow torch)

White chocolate chips

Method

Start by blending your shake base until it's smooth and frothy. Add the beetroot juice, chocolate powder and fresh raspberries to whole milk and blend.

Squeeze chocolate sauce up and down the side of your glass to get the vibe going and pour the milkshake up to the top.

Next, add the clotted cream, a few raspberries and some chocolate chips on top plus a few cubes of chocolate brownie. Sprinkle with marshmallows.

Finish with a blowtorch to toast the marshmallows and create a s'mores style shake.

 

Tiramisu Affogato

Shake base:

50ml Coffee 

150ml Milk

1 scoop Vanilla ice cream

Topping:

Candied orange zest

Sponge biscuits

Cocoa powder dusting

Method

Start by brewing strong coffee in advance and chilling down in the fridge. To make your shake base, blend the milk, a scoop of ice cream and the coffee until smooth and frothy.

Next, add the clotted cream on top. Add in a couple of sponge biscuits and some candied orange zest. To finish, burn your orange zest to give off a fragrant aroma and dramatic style.

Finish by dusting with cocoa.

Cornwall's Clotted Cream Sales Soar as Visitors Flock to the Region

Cornwall's Trewithen Dairy is witnessing a 'remarkable' surge in clotted cream sales, which is great news for the dairy and farming industry in the county of Cornwall.

Despite July being one of the dampest in recent years, visitors are still flocking to the region. According to Visit Cornwall, over five million people visit the county every year during the annual summer holidays. 

This is a welcome boost and a veritable boon for the region's producers as the demand for food in the region skyrockets. 

At the heart of this lies a love for a traditional cream tea. Freshly baked scones adorned with jam and rich clotted cream are a must-have treat and at Trewithen Dairy sales are soaring.

During the peak summer months between May and September, Trewithen Dairy plans to produce an amazing 55.77 tonnes of their renowned clotted cream in various formats, including 56g, 114g, 200g, and 400g pots. 

This volume alone would equate to almost 100,000 cream teas with an estimated 10 million more cream teas expected to be consumed through Trewithen's business providing clotted cream into other retailers.

That's an enormous number of people consuming authentic Trewithen Dairy Cornish clotted cream that bears the all important and vital PDO stamp. This stands for Protected Designation of Origin and means that it is produced, processed and prepared in Cornwall using recognised methods or skills. Plan ahead for Halloween with Trewithen Dairy

Serve your ghouls and goblins trick or treat scones this Halloween with a Trewithen Dairy twist on the classic cream tea. These trick or treat scones are the perfect mix of spooky and surprisingly scrumptious - if you are a fan of yeast extract!

Ingredients

For 6 scones

350g Self-raising flour, sieved

Pinch of salt

100g Trewithen Dairy unsalted butter

110ml Trewithen Dairy whole milk

Black food paste

Trick topping - quantity per scone

1 tbsp Yeast extract

1 tbsp Cornish clotted cream

Drizzle of honey

Sprinkle of chilli flakes

Treat topping - quantity per scone

1 tbsp Blackberry jam

1 tbsp Cornish clotted cream

1 Blackberry

Method

Start with the scones. Preheat the oven to 190c. Grease and line two baking trays.

Using your fingertips only, rub the butter into the flour to create fine breadcrumbs. Mix the black food paste in with the milk and stir until fully combined. Now, stream the black milk in slowly to the breadcrumbs, using a knife to gently mix until it just forms a dough. Wrap in cling film and chill for 20 minutes.

On a lightly floured surface, roll the dough out to a thickness of 2cm and cut into rounds with a cutter. Don't twist them out of the cutter, otherwise they will warp in the oven.

Place on the baking trays (you don't need to egg or milk wash these scones) and bake for 12 minutes. Remove from the oven and allow to cool on a wire rack.

For the trick scones - break the scone in half and spread a layer of yeast extract over the surface. Top with a big spoonful of Cornish clotted cream, before drizzling with honey and sprinkling with some chilli flakes.

For the treat scones - simply split the scone in two and dollop blackberry jam over one side. Pull a generous scoop of Cornish clotted cream and place on top of the jam. Finish with a blackberry.

Method

BeginS with the scones. Preheat the oven to 190c. Grease and line two baking trays.

Using your fingertips, rub the butter into the flour to create fine breadcrumbs. Stream the milk in slowly, using a cold knife to gently mix until it just forms a dough. Wrap in cling film and chill for 20 minutes while you make the strawberry topping.

Place the frozen strawberries and a splash of water in a saucepan over a medium heat, allowing them to break down. At this point, add a measure of summer cup and caster sugar. Continue to stir for a couple of minutes until it has reduced down slightly. Remove from the heat and chill.

Back to the scones. On a lightly floured surface, roll the dough out to a thickness of 2cm and cut into rounds with a cutter. Don’t twist them out of the cutter, otherwise they will warp in the oven. 

Place on the baking trays, before brushing the tops with the beaten egg. Bake for 12 minutes until slightly golden. Remove from the oven and allow to cool on a wire rack.

To serve, smother with strawberry sauce, a generous spoonful of Cornish clotted cream and garnish with strawberries, cucumber and mint. Enjoy with a large jug of summer cup filled with summery botanicals. Heaven!

No-churn summer cup clotted cream ice-cream

The epitome of summer flavours, Pen Sans Summer Cup is bursting with red berry aromas and pairs perfectly with our rich Cornish clotted cream. Make this easy no-churn ice-cream in advance so you have it ready to pull out of the freezer for hot days and al fresco dessert.

Ingredients

2 Large eggs

125g Caster sugar

250ml Double cream

200g Trewithen Dairy Cornish clotted cream

250ml Trewithen Dairy whole milk

200g Strawberries - frozen (defrosted) or fresh

1 tbsp Icing sugar

50ml Pen Sans Summer Cup

Garnish

Mint leaves

Strawberries

Orange slices

Method

In a large bowl, whisk the eggs until light and fluffy. While still whisking, add the caster sugar, one spoonful at a time and continue mixing for a few minutes. Add both creams and pour in the milk, while continuing to whisk.

Pour into a freezer-proof container (a loaf or baking tin works well) and freeze for two hours. Remove from the freezer, whisk thoroughly and return to the freezer. 

In the meantime, place the strawberries and a splash of water in a small saucepan over a medium heat and cook until the strawberries break down into a sauce. Add the icing sugar and Pen Sans Summer Cup. Allow to simmer for a few minutes until the mixture reduces slightly. Set aside too cool. 

Stir the strawberry sauce through the semi-frozen ice cream and, using a cocktail stick, pull it gently through to create a beautiful marbling effect. Add the remaining strawberries on top and return to the freezer until frozen - approximately one hour later. When you’re ready to serve, remove from the freezer and add fresh strawberries, mint and orange slices to garnish. Enjoy in cones or bowls.

Trewithen Dairy's Movie Night 'Scone Revolution' Takes Centre Stage at Royal Cornwall Show

Trewithen Dairy, Cornwall's top provider of delicious dairy products, is justifiably proud and utterly thrilled to be able to announce the resounding success of its 'Night at the movies - Scone Revolution' at this year's Royal Cornwall Show. The event surpassed all expectations as 18,000 free Cornish clotted cream scones with a movie themed twist were enjoyed by lucky visitors to the show.

Now in its fourth year, Trewithen's 'Scone Revolution' showcases the versatility of Cornish clotted cream and shows there are more ways to serve a cream tea than with the traditional dollop of jam. 

Trewithen Dairy transformed their show stand into a captivating cinematic experience, complete with movie-inspired props, a special behind the scenes area, and, of course, the famous scones with a very special twist. 

From the very moment the gates to the show opened, word spread like wildfire about the unusual scones Trewithen had on offer at their stand, with queues forming from the start of the show.

The favourite, as voted on Trewithen's Instagram poll, was a savoury scone called 'It's Nacho Scone' a delicious cheese scone covered in tangy salsa, topped with clotted cream, studded with nachos and a jalapeno. Trewithen Dairy is owned and run by the Clarke family, who have owned Greymare Farm in the Cornish Glynn Valley since 1976 and started crafting dairy products there in March 1994. Nowadays, they produce 125 million litres of milk each year, which becomes clotted cream, butter and yoghurt. Recognised as a champion food producer of the West Country, having been awarded Gold by the Taste of the West judging panel for 2022 for both their salted butter and traditional Cornish clotted cream, their sought after golden-crusted clotted cream with PDO status completes these gift hampers that bring joy to recipients nationwide.

Trewithen Dairy has appointed Devon Hampers to undertake the fulfilment for Trewithen Dairy's webshop, including supplying, packaging and distributing its hampers.
