Box Brewery should be on your Christmas list!

If you are buying beers for yourself or a family member or a friend for this Christmas and Nee Year period,. then you simply must make certain that beers from the Box Brewery are on your list.

They are one of the leading independent brewers in the South of England, proudly sited in Wiltshire.

One of their fine ales is called Funnel Blower and, as my wife is a fanatic for the history of Victorian engineering. this one really caught her attention.

It is a finely hand crafted real ale and named for an incident that struck the Isambard Kingdom Brunel ship the Great Eastern, when, two days after her sea trials commenced, the ship suffered a gigantic explosion which blew off one of her five funnels.

What of the beer? The only thing this is liable to blow is your taste buds! It isa serious ale and not to be taken lightly, coming in with an ABV of 4.5%. The other thing that took my wife's fancy about this beer -and mine, too! is that this is a dark brown coloured Porter beer.

It has a good Porter aroma, you just know that there are some well-roasted barley and malts in there! You can taste the bitterness of the roasted notes, but that's well-balanced by a nice sweetness that pervades this fine ale.

Tesco scoops up DipNation in time for Christmas

DipNation are set to launch their award winning range of dips in Tesco this December. The selection of chunky dips from the Fife based company will be available in selected Tesco stores across Scotland from today.

The Company was set up by Jeremy and Juliet Williams, and Juliet’s brother Patrick Gilmour. Inspired by the variety of dips available overseas and bored at the lack of choice in the UK market, Jeremy and Juliet decided to fill a niche. Patrick, with his background in chefing created scrumptious recipes to appeal to a primed UK consumer.

Since its launch in 2009 the family-run business, based in Fife built up a strong customer base of local Farm Shops and Delicatessens in Fife and its surrounding areas. They were an instant hit, their fresh ingredients and delicious flavours won them numerous stars in the Great Taste Award and a nomination in the Scotland Food & Drink Excellence Awards. Their increasing popularity allowed them to supply to independent stores nationwide and they will now be rolled out across Tesco’s Scottish stores.

This delicious white wine, Sauvignon Blanc, is a wine of the Western Cape of South Africa.

It is a modern wine which although proud of its long heritage is youthful and modern enough to wear its screw cap with a certain  amount of innocent pride.

Yes, it is clearly a good Sauvignon white wine, but there's a little more, too. Apple and Spice Muffins
Light and fruity muffins with chunks of sweet apple and crunchy nuts. Wonderful served warm for breakfast but equally delicious as a family tea time treat. Make use of any seasonal fruits but the combination of cinnamon and apple is particularly moreish and a sensational winter treat. Dairy free, you can make these gluten free by using original rice dream and substituting the flour for a gluten free flour mix.

Makes 10 muffins

2 free-range eggs, lightly beaten
80g/2¾oz xylitol or caster sugar
200ml / 7floz Oat Dream or Original Rice Dream
6tbsp light olive oil
150g / 5 ½ oz plain flour
150g / 5 ½ oz wholemeal flour
1tbsp baking powder
Pinch of salt
½ tsp cinnamon
2 eating apples, peeled, cored, finely chopped
60g / 2oz chopped walnuts
Spice Topping, optional
1tbsp soft brown sugar
1/2tsp ground cinnamon
Pinch of ground nutmeg

1. Preheat the oven to 190C/380F/Gas 5 and line a muffin tin with paper cases.
2. Whisk together the eggs, xylitol or sugar, Oat Dream and oil.
3. Sift the flours, baking powder, salt and cinnamon into a large bowl. Add the chopped apple and walnuts and lightly mix.
4. Pour in the wet ingredients and beat well.
5. Spoon the mixture into the muffin cases.
6. Mix together the sugar and spices and sprinkle over the top of the muffins.
7. Bake for 25minutes until well risen and golden.
8. Transfer to a wire rack to cool.

Tips: make your own gluten free flour cake mix and store ready to use : combine together 125g / 4 ½ oz rice flour, 125g / 4 ½ oz ground almonds, 50g / 1 3/4 oz potato starch, 2tsp gluten-free baking powder plus 1/2tsp xanthan gum

Food miles and the environment

'In Australia we talk about "paddock to plate", (field to fork) but the meaning is the same, no matter where in the world you are, most people want to know what food companies like Pudding Lane are doing to help and minimize their impact on the natural Environment.

Pudding Lane has a unique handmade method that has been unchanged for 100 years or more. Unlike most other pudding manufacturers, who ship all their many ingredients from the corners of the world, we use only locally sourced ingredients, and so, even though our puddings come from Australia, ours create far fewer food miles and energy waste than a pudding that is made in the UK.

We have based our reputation for quality on the "boiled-in-the-cloth" method. That is, we select the finest ingredients, local, combine these ingredients by hand, including fresh bread (from a local bakery that we hand-crumb) add the "wet-mix" of fresh butter, fresh Free Range eggs (hand cracked), Brandy and then hand-mix the mixture. This pudding mixture is then hand-weighed with spoons into lined boiling cloths. The cloths are actually "squares" of unbleached calico and are reused over and over to make many hundreds of puddings.

If the calico square develops a small hole, then we cut it down neatly to make another (smaller) size of pudding and so the process continues. The puddings are hand-tied with twine, then cooked (boiled) in (gas fired) "coppers" before being hung, again by hand, individually on a line to age and mature in advance for Christmas.

When the puddings have been hung and dried we then take them off the line, cut them out of the cloth, dress them in plain cotton fabric to sell and the only disposable part of our pudding making process is a short piece of cotton twine used to tie the pudding cloth up with prior to cooking. The puddings are packaged in cartons made from 100% recycled material and dispatched.

In this way, we do not use any automated processes, no production lines, no electric steam ovens (in fact we don't even have a conventional oven in our pudding kitchen), we do not use plastic basins, plastic bowls or moulds to shape the puddings, each and every pudding is different, only the same supreme moist taste is the same - but each and every pudding is unique!

Many people who know our method and also who visit our pudding kitchen are amazed at the level of detail, at the hand-made method, the hard work, but also that we can make many many tonnes of puddings every year - but each and every one, without ever changing the method and almost no machinery whatsoever, is made individually by hand.

These days however, we are less accidental in our philosophy of the environment. We have a practical commitment to community involvement and make sure that our ingredients are; fresh and local, that our method is maintained by our strict Haccp controls and that we just make traditional Christmas puddings in the old-fashioned (environmental) way.'

The Ambrette Restaurant at Rye recently opened the historic White Vine House, which holds 5 AA stars, has announced three Christmas menus.

Patron chef Dev Biswal, renowned for his deftly spiced fine Indian dining, has created three special Christmas menus for under £20, £30 and £40 per person. The Christmas menus, with vegetarian options, are available throughout December for a minimum of 6 people when ordered by the whole group.

The Christmas Feast menu comprises a 'Champagne Cocktail', Appetiser of the day, Delicate Fillet of Claresse, Soup of the Day, Breast of British Chicken, Grenita, and Exotic Rose Flavoured Vanilla CrĆØme Brule, for just £19.99

The Christmas Party menus also features Breast of Gressingham Duck, with a pudding of Indian-style cardamom and Vanilla rice Dessert with Carpaccio of Gulab Jamun at £29.99.

The Christmas Extravaganza menu also has Crispy Pooris and Tenderloin of Pork, with Hand-Crafted Chocolate Silk with Home-made Ice Cream for £39.99.

The White Vine Houseaccommodates 14 guests in 5 double rooms (one 4-poster), and a family room (sleeping four). Room rates from £130 to £180 a night including breakfast. Set on Rye's High Street, the Georgian frontage of the White Vine House belies its medieval heritage. Beneath the dining room lies a C13th cellar, complete with stone spiral staircase. Refurbished in 2005, the once grand home is now one of the country's premier bed and breakfast venues.

Each of the 6 guest rooms includes period furniture, contemporary en suites stocked with locally made organic toiletries, the latest in home entertainment technology. The original building was destroyed during one of the many French raids on the town during the 100 Years War. The Elizabethan Dining Room named for its exquisite and unique French oak panelling, which probably cost more than the original building, with each panel individually formed to fit the timber frame. The room is "signed" with a carpenter's mark visible just above the fireplace.

Rye Bay Scallop Week: 25th February - 4th March 2012. A mainly restaurant-based event when the local delicacy is at its plumpest and most succulent. Eddie Gilbert's £35 Christmas Menu

Ramsgate's award-winning Eddie Gilbert's seafood restaurant has announced its Christmas Menu.

The £35 menu, that includes a glass of mulled wine on arrival is available for lunch and dinner until 24th December, with no minimum numbers required.

This month, as we head toward Christmas, head toward Tossed, too!

Get creative with carrots this Christmas and win a £200 meal

The online garden experts from Love the Garden are delighted to announce the fourth and final vegetable garden competition of 2011 to make sure vegetables won’t be forgotten this December: the Christmas Carrot Competition!

The independent guest judge, Niamh Shields from Eat Like a Girl, will be looking for culinary creativity with carrots. The author of the best recipe will receive a £200 restaurant voucher to a UK restaurant of their choice. Three runners up will receive a copy of Niamh Shields’ cookbook Comfort & Spice.

Entering the competition is easy. All bloggers need to do is:

• Share a carrot recipe on their own blog;
• Mention the competition in the post;
• Tell LovetheGarden by emailing the URL of their entry to entries@lovethegarden.com before 21st December 2011.

The orange root vegetable is a prominent part of traditional Christmas meals, but recipes don’t have to be Christmas themed. Recipes for soups, salads, stir-fries and even cakes with this versatile vegetable are welcomed too.

Lovethegarden launched their first competition to find the best recipes for garden vegetables in February 2011, which encouraged bloggers to be creative with cabbage. The winner was Karolina with her Cabbage & Mushroom Pasties. In August, David Hall won the Potty for Potatoes competition with his Hot potato, bacon and nasturtium salad and the winner of the Taste for Tomatoes competition was Nic from Cherrapeno with her Summer Tomato Tart with Chilli Cheese Pastry. The carrot competition will be the last one for 2011, but in 2012, Lovethegarden will continue to encourage everyone in the UK to eat their five-a-day.

Have Yourself A Very Godminster Christmas

The cheese came to life after Godminster owner Richard Hollingbery bought Godminster Farm and had the waxed cheese made using milk from the farm as a thank-you gift for friends. The cheeses were a great success, so much so that Richard decided to that he should begin making the cheese commercially and as a result the Godminster brand was born.

Makes 12 cupcakes

Equipment


Mixing bowl

Electric whisk/ wooden spoon

Spoon/ ice cream scoop

Spatula

12 cup muffin pan

12 muffin cases



Ingredients

3oz (75g) unsalted butter OR Margarine *butter will produce a richer sponge*

3oz (75g) Heart of Gold Rapeseed oil

6 oz (175g) Dark brown sugar

3 eggs

8oz (225g) self-raising flour

3 1/2 oz (100g) mixed dried fruit

2oz (50g) chopped golden marzipan


Before you start

Line a 12 cup muffin tin with muffin cases.

Pre heat oven, 180oC, 160oC fan oven, gas mark 4.


How to make

1. Using a wooden spoon or electric whisk if possible soften the butter in a bowl until it forms a creamy soft texture.

2. Add in the Heart of Gold rapeseed oil and combine with the butter.

3. Add in the dark brown sugar and mix well with the butter/rapeseed oil.

4. Add the eggs one by one into the mixture until all 3 are well mixed in. Adding the eggs one by one also prevents from spoiling the mixture if you happen to come across a bad egg.

5. Sift in the self-raising flour and bring the mixture together.

6. Finally stir in the mixed dried fruit and marzipan.

6. Divide the cake mixture between the 12 muffin cases using a spoon or ice cream scoop.

7.Place on the middle shelf in the oven for 20 minutes. If are unsure if the cupcakes are baked after 20 minutes gently press the top of one of the cupcakes. It should feel spongy and bounce back up.

8. Once baked remove from the oven and allow to cool on a cool wire.

Decorate with some Christmas sparkle and enjoy!

Taylor Fladgate and Yeatman joined together to start making Port wine in 1692. In that time nations have been founded, have grown, crumbled and faded away, wars have been fought but Taylor's Port continues to be made by the same families who created their Port wine dynasty near 320 years ago.

Taylor's 10 Year Old Tawny Port is aged for 10 years in wooden casks and is then carefully bottled. And it should then be carefully drunk, to ensure that the warm, rich tastes of a combination of fruits is not wasted.

My wife and I have a special Christmas tradition. Every year just before Christmas we like to take some Stilton cheese, some mince pies  and some Taylor's 10 Year Old Tawny Port and settle down to some festive feasting whilst watching the 1951 version of Scrooge. Sometimes we also watch the George C. Scott version, filmed in Shrewsbury, too.

If we do not have any Taylor's 10 Year Old Tawny Port to hand, we instead will replace this with an extremely good substitute, some Taylor's Late Bottled  Vintage Port, which being younger that the Taylor's 10 Year old Tawny Port, has a different range of equally appealing fruity flavours, but is a little less well-developed.

This year my wife and I were both suffering from colds. My wife remarked: "Are you starting to feel better?" I had to acknowledge that I was starting to feel a  little warmed and that my cold was now nowhere near as oppressive as it had been, before I had started to drink the Port.

My wife took another sip of her Taylor's, smiled, and said in tones of extreme satisfaction: "No wonder doctors used to prescribe Port!"
