In time for Mother's Day: Introducing the Della Vite Paloma Bellini, in collaboration with Ixchel

The talented team has created the Della Vite Paloma Bellini in honour of the weekend and all the women you choose to spend it with. 

This enticing cocktail is an exciting, zingy mix of the finest Tequila Blanco, fresh lime juice, homemade sugar syrup, zesty grapefruit soda and the smooth, extra bubbly and decadent Della Vite Superiore Prosecco, an award-winning Vegan premium fizz founded by Poppy, Chloe and Cara Delevingne. A delicate dusting of hibiscus salt on the glass adds floral and citrus notes to the finish. Salud!

Lunchtime diners will be offered a complimentary Della Vite Paloma Bellini with their meal. Head Chef Ximena Gayossa Gonzalez has crafted an exquisite menu with 'platos' designed to be shared. 

Why not try a Paloma Bellini alongside the Crab Macha Tostada, Grilled sea bass in pipián verde and sage butter and what is said to be quite possibly the best guacamole in London. Plus - prosecco AND tequila in the same cocktail? Sounds wonderful for all mums!

RECIPE: Ginger and rhubarb cake with brown buttercream

Ingredients

320g Unsalted butter

320g Light brown sugar

320g Self-raising flour

2 tsp Baking powder

1 1/2 tbsp Ground ginger

1 tsp Mixed spice

1 tsp Salt

6 Eggs

2 tbsp Black treacle

1 tsp Vanilla paste

2 tbsp Milk

Half a jar of DukesHill Rhubarb & Ginger Jam

500g Good quality salted butter

500g Icing sugar

30ml Double cream

Black pepper

1 tbsp Honey

Fudge to decorate, crumbled

Method

Grease and flour three 20cm cake tins and preheat the oven to 170c. 

In a large bowl, sieve together the flour, ginger, mixed spice, salt and baking powder and set aside. Cream the butter and sugar together until light and fluffy. While still beating the mixture, add the eggs one at a time, adding a spoonful of flour mixture if it starts to curdle. Whisk in the black treacle. Pour into the prepared tins and bake for 25 minutes - or until the cakes spring back to the touch and an inserted skewer comes out clean.

Set aside to cool for five minutes, while you combine the milk and vanilla paste together. Remove the cakes from the tins and place on a wire rack. Brush each cake with the vanilla milk soak and leave to cool.

To make the brown buttercream, place the butter in a pan over a medium heat and cook while stirring from time to time. Don't go away - watch the colour and smell the aromas carefully, as it will turn quickly. When the butter has turned light brown and smells nutty, remove from the heat. Don't allow it to brown too much otherwise it will taste acrid. Set aside for at least 20 minutes to cool.

Sieve the icing sugar in a stand mixer and add the brown butter and double cream. Whisk until it thickens. It can be made in advance and chilled.

To assemble the cakes, place the first sponge onto a serving plate, drizzle a little honey over the sponge and twist of freshly milled black pepper. Then, pipe buttercream around the edge of the sponge before spooning jam into the middle. The buttercream forms a barrier that prevents the cakes from sliding around. Pipe buttercream over the jam. Add the next sponge and repeat the process. For the final sponge, add the drizzle of honey and black pepper and finish with a layer of buttercream. Add crumbled fudge around the circumference to decorate.

Mandira's Kitchen Makes Celebrating Mother's Day Deliciously Different this Year

This year Mothering Sunday falls on 19 March 2023 and families are already planning how to spend this very special day with Mum to thank her for all she does for her family. 

And Mandira's Kitchen invites you to a sumptuous Afternoon Tea served on their delightful patio overlooking the Silent Pool or you can order a family feast  for 4 people that can be delivered to your door.

The Mother's Day Family Feast is available as classic or vegetarian options and includes some of their favourite Supper Club dishes; crispy samosas, Methi Chicken or Paneer, Jaipur Alu (baby potatoes simmered in spices) and Saffron Pulau, delightfully finished off with Gulab Jamun and Carrot Halwa.  Or choose the Biriyani and Bubbles feast.

For those who want to take Mum on a day out, why not book a slot (spaces are obviously limited) on either Saturday 18 or Sunday 19 March to have Afternoon Tea on the MK Patio, overlooking the Silent Pool.

Loseley recipe for Mother's Day Sunday 18 March

Loseley MotherMother's Day is Sunday 18 March and this recipe from Loseley is ideal for all the family to make.
Cooking supplies:

• 6-7 eggs
• 1/4 cup of pineapple orange banana juice
• 1 cup of flour
• 3/4 stick Loseley Summer Meadow butter
• 1 cup of milk
• 1/2 cup of sugar
• 1/2 teaspoon salt
• Whipped cream
• Strawberries
• Powdered sugar

Cooking directions:

- Have the children mix all the ingredients together the eggs, flour, salt, milk, sugar and juice.

- Next, have the children place the Loseley Summer Meadow butter in a 7X11 baking dish and place in the oven.

- Turn oven on to 425 degrees.

- When the Loseley butter is bubbling, add the batter to the baking dish.

- Cook it in the oven for about 20 minutes or until the edges turn deep golden brown.

- While the batter is baking, have the children cut up the strawberries.

- When the Pancake Puff is ready, have the children add on whipped cream, then strawberries and powdered sugar.

And, voila, the children are now ready to serve Mother’s Day Pancake Puff with Strawberries to mom!
