Three Easter Recipes from DukesHill

Gather up family and friends and celebrate Easter with DukesHill's dishes to delight. Lemon-glazed ham with seasonal wild garlic pesto, shoulder of lamb with chickpeas and peaches and finally a leg of lamb with lemon and mint.

Glazed lemon marmalade ham and wild garlic pesto

This tangy-glazed ham is bursting with flavour, you can make it in advance and any left-overs will be pounced upon for sensational sandwiches. Serve with this bang in season wild garlic pesto for the perfect Easter spread.

Serves 6

For the ham 

DukesHill 1.2kg midi boneless Wiltshire ham

3 tbsp lemon marmalade

1 tbsp Light brown sugar

1 tsp Dijon mustard

If the ham is uncooked:

1 onion, peeled and quartered

2 carrots, peeled and roughly sliced

1 tbsp allspice berries

1sp cloves

1 tsp black peppercorns

For the pesto

 wild garlic leaves, stems chopped

40g Parmesan, finely grated

40g pine nuts

2 tbsp olive oil

Squeeze of lemon juice

Method

If you're using a cooked ham, skip the following steps and dive straight into the glazing stage. If not, then place the ham in a large stock pot and add the onions, carrots and spices. Pour over cold water to cover the ham. Bring to the boil and allow to simmer until the ham reaches a core temperature of 75c when probed with a meat thermometer - for a 1.2kg ham it will take approximately 1 hour. Skim the scum off the surface from time to time. When it's cooked and cool enough to handle, slice the skin off the top of the ham and score a diamond pattern into the fat. Allow to cool before glazing.

Preheat the oven to 190c. 

In a small saucepan, whisk together the glaze ingredients and bring to the boil. When all the ingredients have melted together into a sticky syrup consistency, remove from the heat. Use a basting brush to coat the glaze generously over the ham, before placing on a baking tray. Roast for 30 minutes but baste occasionally, using the glaze from the tray. Remove from the oven and allow to cool slightly before slicing.

For the pesto, place the pine nuts, Parmesan and salt in a mortar and pestle and bash until it has become a paste. Add the wild garlic and continue to pound it until it comes together into a smooth consistency, then slowly add the olive oil and lemon juice to taste. Check the seasoning before serving.

Enjoy with new potatoes and British asparagus if it's in season.

Slow-cooked lamb shoulder with peaches and chickpeas

Once you've tried this dish, it's bound to become your favourite way to enjoy lamb. Incredibly succulent, tender enough to pull with a spoon, full of flavour and effortless to prepare - it's a foolproof dish to impress your guests. The peaches braise down to create a jammy compote that accompanies the lamb beautifully.

Serves 6

1.6kg lamb shoulder, bone in

7 onions, halved

2 x 400g cans of chickpeas, including water

2 x 410g tinned peaches in juice

Bunch of coriander, chopped

Bunch of mint, chopped

1 tbsp Ras el hanout, plus an additional 1 tsp for the lamb

2 heads of garlic, halved horizontally

350ml chicken stock

350ml lamb stock

1 tbsp balsamic vinegar

Method

Preheat the oven to 165c.

Stir the balsamic vinegar and ras el hanout into the stock and season the mixture generously with freshly ground black pepper.

Tip the entire contents of the can of chickpeas (including the water), garlic halves, onions and peaches (along with the juice) into a deep sided roasting tray. Pour over the stock and mix well. 

Place the lamb on top and season it with salt, pepper and a teaspoon of ras el hanout. 

Cook for approximately 3.5 hours, covering with foil after about 1.5 hours to avoid it over-browning. 

When the lamb is cooked through and tender, remove from the oven and allow to rest for 20 minutes. Sprinkle with chopped herbs and serve.

Lemon and mint leg of lamb

A classic centrepiece to enjoy over the long Easter weekend. This simple recipe infuses the lamb with a lemon mint puree and is served with sweet, caramelised roasted fennel. The cooking juices combined with the bed of onions make a delicious sauce. 

Serves 8

Ingredients

2kg DukesHill whole bone-in leg of lamb

2 onions, peeled, quartered and sliced

1 lemon, grated zest

20g fresh mint leaves

2 tbsp olive or rapeseed oil

2 fennel bulbs, each cut into 6 wedges

2 tbsp plain flour

2 tbsp Worcestershire sauce

75ml Vegetable stock

Method

Remove the leg of lamb from the fridge an hour before cooking to allow it to come up to room temperature.

Place the sliced onions in the base of the roasting tin and season. Lay the lamb on top. Slice a diamond pattern on the top of the leg of lamb, making deep slits to take the puree. 

To make the puree, place the lemon zest, mint leaves, oil, garlic and seasoning into a small food processor and whizz together. Stuff into the incisions made in the lamb. Any extra can be smeared over the sides of the meat and onto the bed of onions. Place the fennel wedges around the lamb.

Roast for 1 hour or 15 minutes longer if you prefer lamb well-done. Use a meat thermometer to check the core internal temperature - 55 - 60c will be medium, 70 for well done. 

Remove the lamb and fennel from the roasting tin and place on a warm serving dish. Cover with foil and allow to rest in a warm place for 15-20 minutes. 

Add the flour to the cooked onions, stir well and heat until the flour is browned. Add the Worcestershire sauce and vegetable stock. Bring to a boil and simmer for a couple of minutes until thickened, check for seasoning and serve in a sauce boat or warm jug. The sauce should be liquidised if preferred.

Serve the lamb with the fennel wedges, sauce and seasonal vegetables.

Britain embracing veg and flexitarianism despite ditching New Year health kicks, reveals Tesco

Over half of people surveyed by Tesco (54%) admitted they usually last two weeks or less with a strict healthy eating resolution. 

However, the research indicates that we Brits don’t need hard rules to stay healthy, as we are in fact a nation of veg lovers, with nearly half (46%) of us eating more vegetables than we did five years ago. 

47% have deliberately chosen to introduce more vegetables to their plates, citing trying to be healthier (82%), saving money (22%) and reducing their impact on the environment (25%) as the main reasons for increasing their intake. Nearly one quarter (24%) are eating more plant-based foods, too.

Increase in sales of versatile veggies

Tesco sales data shows an increase in public appetite for versatile salad veggies such as avocado which has seen a 46% increase in popularity since 2021 and cucumber which has seen an increase of 41%. 

Sales of products such as asparagus, baby corn and leeks have all increased, as have pulse products including tinned chickpeas and lentils, which have soared in popularity since 2021, by 21% and 9% respectively.

Attitudes to veg’s place in a weekly menu has changed dramatically. 45% of people are eating less meat than they did five years ago, with 62% saying they eat no meat at all on two days or more in an average week, showing Britain is embracing a more ‘flexitarian’ way of eating, despite 38% admitting to having never heard the term before.

60% of households eating three or more vegetables with a roast dinner

Nearly three quarters (73%) say that they now eat more greens, with 68% eating more root veg such as carrots and sweet potato, and 62% eating more salad veg such as lettuce and peppers. Even the roast dinner has changed with almost half (48%) saying their roast dinner involves more veg now and 60% saying they serve three or more different types of vegetables with their Sunday roast, or the equivalent family meal. 

A spokesperson for Tesco said: "Tesco is committed to making healthier diets more accessible and we commissioned the research to highlight that we don’t have to make major changes, or set drastic resolutions to live a little better. 

"61% of the UK admitted that when they make a small change to their diet – such as committing to a ‘meat free day’ or adding one or more extra portions of fruit or veg to their plate – they’re more likely to stick to it, rather than a major change such as becoming vegan."

Fruit and veg more accessible through Clubcard Prices and Aldi Price Match

To help customers, Tesco has ‘Better Basket’ zones in stores to signpost better choices at affordable prices, helping shoppers fill their trolley or basket with better choices every time they shop, without it costing them more. 

Tesco also makes fruit and veg more accessible by lowering prices across a selection of fresh produce via Clubcard Prices and the Aldi Price Match scheme. 

Two thirds of products included in Aldi Price Match are healthy, and that’s on top of Fresh 5 giving customers reduced prices on five lines of fresh produce every two weeks. 

Neel Shah, Development Chef at Tesco, said: “Adding veg or pulses to your meals is an affordable way to make them healthier and tastier. Veg is so versatile, whilst pulses such as lentils are an easy and delicious way to pack in nutrients like fibre and protein. Look for the Better Baskets sign in store which make it easy to spot foods containing one of your five a day or are higher in fibre."

Her went on to say: "We’re all looking to eat better, especially in January, when we tend to think more about our diet, but it doesn’t have to be a major change to make an impact. It can be as easy as adding one more variety of veg to your Sunday roast, using sweet potatoes for your mash rather than white potatoes, or adding in celery, carrots and courgettes to your pasta sauce. 

"Using leftover vegetables and cutting them up into small pieces can be a great way to sneak a variety of veggies into recipes like sauces, curries and stews – great for kids as keeping them small they don’t notice. It’s the little things that can make a big difference.”

Lynn Youthed, a Tesco colleague, said:  “Getting the family to eat more veg and pulses can be tricky, but for me it’s about adding them to meals where there’s already lots of flavour, like pasta bakes or curries. That way it’s really easy, doesn’t cost extra, and I don’t need to spend lots of time in the kitchen either. I’ve always got tinned and frozen veg in the house to add to these meals.”

What’s more, families can take advantage of the Kids Eat Free offer when purchasing an adult meal that costs over £4.50. This means a family of four can all enjoy the roast of their choosing for just £15.

Any roast can be topped off with a delicious dessert for just £3. Sweet treat options include a Bramley Apple Crumble or Sticky Toffee Pudding topped with custard or a Chocolate Fudge Cake served with cream.

Food Packing Association has new Executive Chair

The Foodservice Packaging Association (FPA) is pleased to announce the appointment of Mark Byrne as its new executive chair, effective from February First 2024.

Mark takes over from the former executive chair Mark Pawsey MP, and brings with him a wealth of experience following a 33-year career in the foodservice packaging industry.

For the past 14 years, Mark has worked in senior sales roles within global organisations such as Anchor Packaging, Sharpak, RPC, and latterly at Sabert.

Having been involved with the FPA for over 22 years, half of that time as vice-chair, Mark has an unrivalled understanding of the association and the needs of its members.

“I am honoured to have the opportunity to work even more closely with the FPA’s members, partners and stakeholders – ensuring the interests of the entire membership are represented and their issues and concerns heard”, says Mark.

“By continuing to extend our reach and influence, and adding our voice to the challenges impacting FPA members, I hope to be able to contribute to the ongoing success of both the FPA and the foodservice packaging sector in general”.

“This appointment is great news for the association,” adds the FPA’s executive director Martin Kersh. “For many years Mark has worked tirelessly in support of the FPA. He is committed to extending the FPA’s impact within the industry and ensuring it remains a vital resource for our members”.

Mark Pawsey, outgoing chair of the FPA says: “It has been a privilege to serve as the FPA’s chair for the past four years and I am proud of what the team has accomplished together during that time. Mark is already well known throughout the industry and our membership, so it was no surprise to see his nomination so well supported. I know he is looking forward to taking the FPA to new heights and I wish him all the best for the future”.

Mark Byrne’s appointment is set to be ratified at the FPA’s AGM on Thursday, 01 February 2024.
