Traditional teas making way for Tropical Sun's herbal tea offerings

We Brits love a good cuppa; However, whilst sales of traditional black or ‘builder’s’ tea have seen a steady year-on-year decline of around 3% since 2013, sales of fruit and herbal teas have increased by 24% and green tea by 41% over the past five years, with year-on-year growth of 8%.

Tropical Sun Foods, best known for hero products from around the world such as Jerk Seasoning and coconut milk, have a range of more than 22 products in their range of herbal teas from across the globe and are expanding further with two new flavours (Chamomile and Turmeric & Ginger) launching soon..

Why has this change occurred? Commercial Director, George Phillips puts the growth of the herbal tea market down to younger consumers. He said: “We believe this trend is driven by younger consumers who are seeking out more adventurous hot beverages, or those with perceived health benefits.”

Phillips added: “With demand increasingly exponentially, particularly with more people working from home, fruit and herbal tea is a subcategory with huge potential, and there are very compelling reasons for impulse and convenience retailers to increase their offering in-store, not least to ensure they are capturing an ever-wider consumer base.”

Containing only all natural ingredients, Tropical Sun ‘Teas of the World’ range are all caffeine-free to promote calm wakefulness and have received accolades including Great Taste Awards for Moringa and Sorrel & Ginger Tea.

They were also voted ‘Best tea for green tea drinkers’ for people avoiding caffeine in The Independent’s Indy Best feature and their Turmeric Tea was recently named ‘Best Herbal Tea’ by ExpertReviews.co.uk.

You'll find Tropical Sun products stocked in thousands of independent retailers across the UK, in Sainbury’s, on Amazon and at www.tropicalsunfoods.com – priced at £1.99.

Coping With Food Allergies: A Comprehensive Guide to Managing Dietary Restrictions

Food allergies affect millions of people worldwide, requiring them to be vigilant about what they eat to avoid potentially life-threatening reactions.

Whether you've or a family member, recently been diagnosed with a food allergy or have been living with one for years, understanding how to navigate dietary restrictions is crucial for maintaining good health and quality of life. In this guide, we'll explore practical strategies and essential tips for managing food allergies effectively.

Seek Professional Diagnosis and Guidance:

If you suspect you, or a family member, has a food allergy, seek professional medical advice. Allergists can conduct tests to identify specific allergens and provide personalised guidance on managing the condition.

Keep a food diary to track symptoms and potential triggers, which can help healthcare professionals make an accurate diagnosis.

Educate Yourself:

Learn to read food labels carefully to identify potential allergens. Manufacturers are required to list common allergens, such as peanuts, tree nuts, dairy, eggs, soy, wheat, fish, and shellfish, on their labels.

Be aware of hidden sources of allergens, such as cross-contamination in shared cooking utensils or processing facilities.

Create a Safe Environment:

Communicate your food allergies to family, friends, coworkers, and restaurant staff to ensure they understand the seriousness of your condition.

Keep your home and work environments free from allergens by establishing designated safe zones and storing allergen-free foods separately from allergen-containing products.

Plan Meals Carefully:

Embrace home cooking as much as possible, allowing you to have complete control over ingredients and preparation methods.

When dining out, research restaurants in advance, and communicate your dietary needs to the staff. Many restaurants are willing to accommodate food allergies if given sufficient notice.

Have Emergency Preparedness:

Always carry emergency medication, such as an epinephrine auto-injector (e.g., EpiPen), in case of accidental exposure to allergens.

Educate friends, family, and caregivers on how to recognize and respond to allergic reactions, including when to administer epinephrine.

Stay Positive and Proactive:

While living with food allergies can be challenging, maintaining a positive mindset is essential. Focus on the abundance of foods you can still enjoy rather than dwelling on restrictions.

Get involved in online support groups or local communities for individuals with food allergies. Sharing experiences and tips with others facing similar challenges can be incredibly empowering.

Living with food allergies requires diligence and careful planning, but it's entirely manageable with the right knowledge and support. By seeking professional guidance, educating yourself, creating a safe environment, planning meals carefully, preparing for emergencies, and staying positive, you can effectively navigate the complexities of food allergies and enjoy a fulfilling and healthy life. Remember, you're not alone on this journey, and with the right strategies in place, managing food allergies becomes second nature.

The importance of good hygiene in the home kitchen

A clean domestic kitchen
Good hygiene in the home kitchen is crucial for several reasons:

Food Safety: Good hygiene practices, such as regular handwashing and proper cleaning of kitchen surfaces, utensils, and equipment, help prevent the spread of harmful bacteria, viruses, and other pathogens that can contaminate food and cause foodborne illnesses.

Pets: Don't allow pets to play on food preparation areas. And if they do, carefully and kindly remove them and clean the area thoroughly.

Prevention of Cross-Contamination: Proper hygiene reduces the risk of cross-contamination, where harmful bacteria from raw foods, such as meat and poultry, are transferred to ready-to-eat foods, leading to foodborne illnesses. Separate cutting boards, utensils, and storage areas for raw and cooked foods can help prevent cross-contamination.

Prolonged Food Freshness: Keeping the kitchen clean and free from spills, crumbs, and food residues can deter pests like insects and rodents that are attracted to food scraps. Proper storage and handling of perishable foods also help prevent spoilage and extend their shelf life.

Health of Household Members: Maintaining good hygiene in the kitchen contributes to the overall health and well-being of household members by reducing the risk of foodborne illnesses and other infections.

Positive Cooking Environment: A clean and organised kitchen is more inviting and conducive to cooking. It can also inspire creativity and enjoyment in meal preparation.

Role Modelling: Practicing good hygiene in the kitchen sets a positive example for other household members, especially children, who can learn important habits and skills for safe food handling and preparation.

Compliance with Regulations: Adhering to hygiene practices in the home kitchen ensures compliance with food safety regulations and standards, which are essential for public health and safety.

In summary, good hygiene in the home kitchen is essential for preventing foodborne illnesses, maintaining food freshness, promoting the health of household members, creating a positive cooking environment, and complying with food safety regulations.

Molecular Gastronomy: Playing with Science in the Kitchen

In recent years, there has been a culinary revolution brewing in kitchens around the world.

It's a movement that blurs the lines between science and cooking, transforming traditional dishes into innovative creations that tantalize not only the taste buds but also the imagination.

This culinary phenomenon is known as molecular gastronomy, a discipline that explores the science behind food and uses unconventional techniques to create extraordinary dining experiences.

Let's delve into this captivating world where chefs are like mad scientists, experimenting with ingredients, textures, and flavors to push the boundaries of gastronomy.

The Science Behind Molecular Gastronomy:

At its core, molecular gastronomy is about understanding the chemical and physical processes that occur during cooking and how they can be manipulated to achieve specific culinary outcomes. It draws upon principles from physics, chemistry, and even biology to dissect the intricacies of food and cooking. From the precise temperatures required for sous vide cooking to the emulsification of fats in sauces, every aspect of cooking is scrutinized and optimized to enhance flavors, textures, and presentations.

Experimental Techniques:

What sets molecular gastronomy apart from traditional cooking is its repertoire of experimental techniques. These techniques include spherification, gelification, foams, and encapsulation, among others. Spherification, for example, involves transforming liquid ingredients into spheres with a thin membrane, creating bursts of flavor when bitten into. Gelification allows chefs to turn liquids into gels or jellies, opening up endless possibilities for playful presentations. Foams add lightness and texture to dishes, while encapsulation involves trapping liquids inside edible membranes, creating delightful flavor explosions.

Creative Applications:

In the hands of skilled chefs, molecular gastronomy transcends mere culinary experimentation and becomes a form of edible art. Dishes are transformed into visually stunning creations that challenge our preconceptions of food. Imagine a deconstructed dessert featuring spheres of fruit juice, a cloud of aromatic foam, and delicate sugar sculptures. Or a savory dish where every component is meticulously crafted to deliver a harmonious blend of flavors and textures. Molecular gastronomy allows chefs to unleash their creativity and imagination, resulting in dining experiences that are as visually captivating as they are delicious.

Challenges and Criticisms:

Despite its allure, molecular gastronomy has not been without its critics. Some argue that it prioritizes style over substance, focusing more on spectacle than on the fundamental pleasures of eating. Others raise concerns about the use of synthetic additives and chemicals in the pursuit of culinary innovation. Additionally, the specialized equipment and ingredients required for molecular gastronomy can be prohibitively expensive, limiting its accessibility to home cooks and smaller restaurants.

The Future of Molecular Gastronomy:

Despite these challenges, molecular gastronomy continues to evolve and captivate food enthusiasts around the world. Chefs are constantly pushing the boundaries of what is possible, experimenting with new techniques and ingredients to create ever more inventive dishes. As technology advances and our understanding of food science deepens, the potential for culinary innovation seems limitless. Whether you're a professional chef or an adventurous home cook, molecular gastronomy offers a thrilling journey into the intersection of science and gastronomy, where the only limit is your imagination.

Molecular gastronomy represents a revolution in the culinary world, where chefs are like modern-day alchemists, transforming ordinary ingredients into extraordinary creations through the power of science and imagination.

While it may not be without its controversies, there's no denying the excitement and creativity it brings to the kitchen. So next time you're in the mood for a culinary adventure, why not don your lab coat and experiment with some molecular gastronomy techniques? Who knows what delicious discoveries await!

The Art of Sushi Rolling: Create Your Own Masterpieces at Home

Sushi, with its delicate flavours and intricate presentations, has captured the hearts and palates of people worldwide outside its native Japan.

Beyond its culinary appeal, sushi is also an art form, requiring precision, creativity, and a deep understanding of balance.

While dining at a sushi restaurant is an experience in itself, there's something uniquely satisfying about crafting your own sushi masterpieces at home.

In this blog post, we'll explore the art of sushi rolling, offering tips, techniques, and inspiration to help you elevate your homemade sushi game.

Understanding the Basics:

Before diving into the world of sushi rolling, it's essential to understand the fundamental components of this iconic dish. Sushi typically consists of vinegared rice (sushi rice) combined with a variety of ingredients such as raw fish (sashimi), vegetables, and sometimes even fruits, all wrapped in seaweed (nori). The key to great sushi lies in the quality of ingredients, the texture of the rice, and the skillful assembly of each roll.

Tools of the Trade:

To create sushi at home, you'll need a few essential tools. These include a bamboo sushi mat (makisu) for rolling, a sharp knife for slicing, and a rice paddle for handling the sushi rice. Additionally, having high-quality nori sheets, fresh fish or other fillings, sushi rice, rice vinegar, and soy sauce on hand will ensure that your homemade sushi tastes as delicious as it looks.

Perfecting the Rice:

Sushi rice is the foundation of any good sushi roll, and mastering its preparation is crucial. Start by rinsing the rice thoroughly to remove any excess starch, then cook it according to the cooking instructions. Once cooked, gently fold in seasoned rice vinegar to give the rice its signature tangy flavour. Be sure to let the rice cool to room temperature before using it in your sushi rolls to prevent it from becoming too sticky or too mushy.

Getting Creative:

One of the joys of making sushi at home is the freedom to experiment with different flavour combinations and presentations. While traditional sushi rolls often feature ingredients such as salmon, tuna, cucumber, and avocado, don't be afraid to think outside the box. Consider incorporating unique ingredients like mango, spicy mayo, tempura shrimp, or even unconventional proteins such as cooked chicken, beef or tofu. The possibilities are endless, so why not allow your creativity to run wild?

Mastering the Roll:

Rolling sushi may seem a daunting task at first, but with a bit of practice, you'll soon get the hang of it. Start by placing a sheet of nori on your bamboo mat, then spread a thin layer of sushi rice evenly over the nori, leaving a small border along the edges.

Next, add your desired fillings in a neat row along the bottom edge of the nori. Using the bamboo mat to help guide you, roll the sushi tightly away from you, applying gentle pressure to ensure a snug seal. Once rolled, use a sharp knife to slice the roll into bite-sized pieces, wiping the blade clean between cuts for a clean presentation.

Presentation is the Key:

They say we eat with our eyes first, and this couldn't be truer when it comes to sushi. Take the time to arrange your sushi rolls on a beautiful platter, garnishing them with sesame seeds, thinly sliced vegetables, or drizzles of sauces for an added touch of elegance. Not only will your sushi look visually stunning, but it will also enhance the overall dining experience, too.

Creating sushi at home is not just about preparing a meal; it's about embracing a centuries-old tradition and expressing your culinary creativity. By mastering the art of sushi rolling, you'll not only impress your friends and family but also gain a deeper appreciation for the craftsmanship behind this beloved dish.

So, don your apron, sharpen your knives, and get ready to roll your way to sushi perfection. Happy rolling!

The Fascinating History of Chocolate: From Ancient Times to Modern Delights

Chocolate, the word itself evokes images of indulgence, pleasure, and temptation. But beyond its rich flavour and velvety texture lies a history as rich and varied as the treat itself. From its humble beginnings in ancient Mesoamerica to its global dominance as a beloved confection, the story of chocolate is one of intrigue, innovation, and cultural exchange.

Ancient Beginnings:

The history of chocolate begins over 3,000 years ago in the tropical rainforests of Central and South America. The ancient Mesoamericans, including the Olmec, Maya, and Aztec civilizations, were among the first to cultivate the cacao tree (Theobroma cacao) and harness its beans for culinary and ceremonial purposes.

For these ancient civilisations, chocolate held immense cultural and spiritual significance. Cacao beans were used as currency, consumed in sacred rituals, and brewed into a bitter beverage known as "xocolātl" by the Aztecs, meaning "bitter water." This beverage, often flavoured with spices like chili and vanilla, was reserved for royalty, warriors, and religious ceremonies.

European Exploration and Innovation:

Chocolate remained relatively unknown to the rest of the world until the arrival of Spanish explorers in the New World during the 16th century. It was the Spanish conquistadors who first encountered the indigenous peoples' chocolate preparations and brought cacao beans back to Europe.

Initially, chocolate was met with skepticism in Europe, but it quickly gained popularity among the elite classes. Spanish monks began sweetening the bitter beverage with sugar, and soon chocolate houses began to spring up across Europe, offering chocolate drinks alongside coffee and tea.

In the 19th century, technological advancements revolutionised the entire chocolate industry. The invention of the cocoa press and other innovative concepts by Dutch chemist and chocolate maker Coenraad van Houten in 1828 allowed for the extraction of cocoa butter from cacao beans, resulting in the creation of cocoa powder. This innovation paved the way for the production of solid chocolate bars, making chocolate more accessible to the general populace.

Modernisation and Globalisation:

As chocolate production became more industrialised, its popularity soared, and new varieties and flavours emerged. Companies like Cadbury, Nestlé, and Hershey played significant roles in shaping the modern chocolate industry, introducing milk chocolate, chocolate sweets and candies, and innovative packaging techniques.

Today, chocolate is enjoyed worldwide in countless forms, from artisanal truffles to mass-produced chocolate bars. It has become synonymous with celebrations, romance, and comfort, transcending cultural boundaries and socioeconomic divides alike.

However, the chocolate industry is not without its controversies. Issues such as child labour, deforestation, and sustainability continue to plague the cocoa supply chain, prompting calls for greater transparency and ethical sourcing practices.

Looking Ahead:

As we continue to savour and enjoy the delights of chocolate, it's vital to reflect on its complex history and the challenges facing the industry today. By supporting ethical and sustainable chocolate producers, consumers can help ensure that the tradition of chocolate-making endures for generations to come.

In conclusion, the history of chocolate is a testament to human ingenuity, creativity, and cultural exchange. From its ancient origins in the rainforests of Mesoamerica to its modern incarnation as a global indulgence, chocolate remains one of the world's most beloved treats, captivating hearts and taste buds alike.

So, the next time you enjoy a piece of chocolate or a chocolate drink, take a moment to savour not just its delicious flavour but also the centuries of history and tradition that have gone into its creation. After all, chocolate isn't just a sweet indulgence, it's a window into our shared past and a celebration of the rich tapestry of human experience.

As the world’s sole farmer-owned Fairtrade chocolate maker, Divine has been doing things differently in the chocolate industry for over a quarter of a century. Now, it's inviting fellow chocolate lovers to ‘do dessert differently’ with the launch of its Dessert Bar range.

The Divine Dessert Bars offer a fuss-free alternative to run-of-the-mill puddings, featuring classic flavour combinations, enrobed in Divine’s signature dark, milk or white chocolate. The Divine Dessert Bars are already available through Amazon.co.uk and www.divinechocolate.co and will be available via Ocado and Oxfam from the beginning of March. RRP £4.49.

This concept offers diners the opportunity to ‘do dessert differently’ with the launch of its brand new Dessert Bar range, a fuss-free approach to after-dinner sweet treats. Offering the fun and frivolity of dessert, but without the faffing about, the Divine Dessert Bars have been specially created to offer the same flavours of our much-loved sweet treats, minus the cooking commitment.

The Dessert Bar range is perfect for sharing, and includes a variety of three delicious and decadent flavours, guaranteed to impress the chocolate-lover in your life.

As the only farmer-owned Fairtrade chocolate maker in the world, Divine has been doing things differently in the chocolate industry for over 25 years. The launch of its Dessert Bar range is no exception, offering chocolate-lovers an easy alternative to preparing their own pud.

With nearly a quarter (24%) of Waitrose consumers enjoying a dessert at weekends, but 30% confessing to buying more sweet treats than ever before, it’s clear that when it comes to pudding prep, we prefer ready-made to DIY. On a mission to sweeten the dessert scene with effortless and Divinely different sweet treat solutions, Divine’s newly launched Dessert Bar range has been inspired by the flavours of our most popular puds, enrobed in a rich dark, milk or white chocolate coating.

Encompassing three flavours, spanning the decadence of Cherry & Almond Bakewell to indulgent Tiramisu, and the tart freshness of Lemon Cheesecake, there’s a bar to suit all dessert devotees.

With chocolate the key to many hearts, what better way to express love than by breaking a bar with the chocolate-lover in your life. Perfect for sharing, all you need do is lift the wrapper, divide and devour for a show-stopping pudding.

Sophie Loveday-Davies, who is Group Marketing Director at Divine said: “We’re incredibly excited to be sharing our new range of Dessert Bars with fellow chocolate lovers. We know that in increasingly challenging times, the power of the ‘pudding effect’ is more evident than ever before, with people looking for small tasty treats to brighten the day-to-day. Our mission at Divine is to spread a little joy with our deliciously decadent range of Fairtrade chocolate, so we’re delighted to now be able to offer our customers a Divine-worthy dessert with the launch of our Dessert Bar range. We hope pudding-lovers everywhere will enjoy breaking a bar with the fellow chocolate lover in their life.”

Introducing the new Tormek T-1 Kitchen Knife Sharpener

Basically, this is professional level cutting-edge sharpness for the home kitchen.

Ask any top chef and they'll tell you knife maintenance and care is one of the most important and vital tasks in a professional kitchen. And the same applies at home, too. After all, what's the point in having excellent knives if you’re not going to invest in their upkeep? If you had a top-of-the-range Maserati car, you'd not try to tinker with it yourself, would you? So why take the same risk with your kitchen knives?

Most conventional methods don't sharpen the knife properly but align a weighted edge or sharpen only parts of the edge. That’s fine for basic maintenance, but after a while you'll notice that you're not getting the same sharpness as previously.

Tormek is introducing the first real knife sharpener for the home chef.

Tormek has 50 years of expertise in tool sharpening for woodworkers. The NEW Tormek T-1 Kitchen Knife Sharpener is the first professional, premium quality kitchen knife sharpener designed for the home.

It's quick to use, easy to operate and is clean and quiet. It precisely sharpens blades 12 - 60mm high and up to 5mm thick, with an unlimited length.

Based on the innovative sharpening system developed for professional kitchens, the Tormek T-1 Kitchen Knife Sharpener effortlessly delivers a razor-sharp cutting edge and a durable angle that won’t dull after every use.

Blades remain sharper for longer

The Tormek T-1 Kitchen Knife Sharpener has a sleek industrial design and comes fully assembled with a solid oak handle, powder-coated zinc body, diamond grinding wheel and a composite honing wheel. The method consists of three steps:

Set preferred bevel angle

You can choose any angle between 8 and 22 degrees. However, 15 degrees is a good angle to start with if you are unsure. A small angle will cut more easily, while a large angle will give a stronger edge.

Sharpens on both sides

The fine-grained diamond grinding wheel sharpens all types of steel including ceramic knives, to professional sharpness levels. The low-speed means there’s minimal steel wear.

Insert the clean, dry knife into the guide. Follow the shape of the knife and apply only gentle pressure. A magnet in the patented guide collects the steel particles keeping the grinding wheel clean.

Hone to an expert, razor-sharp finish

Moisten the honing wheel using a damp paper towel to reduce friction and remove the burr* and polish both sides of the knife on the honing wheel. Ensure the honing wheel rotates away from the edge.

(*After sharpening, a ‘burr’ is created which needs to be honed off to obtain a sharp and durable edge.)

Unlike some alternatives, the Tormek T-1 sharpens the entire bevel of the knife, not just the outer edge, and because the bevels can be sharpened separately, there’s the option to set different edge angles on each side of the blade, or sharpen just one side, which is particularly useful for more advanced knives.

It's designed and built to last, comes with an eight-year warranty. But they do advise that you store it  safely in a dry place.

Whether you’re looking for the perfect knife sharpener for yourself or hunting down the ideal gift for a foodie friend or family member, the NEW Tormek T-1 Kitchen Knife Sharpener (RRP £330), is available from https://shop.tormek.com/en-gb

This story takes the reader from the harsh conditions of rural Brazil to the concrete jungle of Sao Paulo. Readers follow Iracy's journey which is filled with love, loss, and triumphs.

Along the way, she and her sisters Maria and Ana Maria Luisa are confronted with the harsh realities of the lives of indigenous and African slaves in colonized Brazil and the formation of the first mixed-race families.

If you're looking for a book to keep your Mom on the edge of her seat, this book is a must-read. It's a powerful testament to the human spirit and a celebration of the triumphs that can come from the darkest of places.

Spanning generations from Brazil to England and India, The Mother of Honey makes for the perfect Mother’s Day gift.

Beyond Beige by Sylvie Boulay

Old age. It's something most of us get, whether we want it or not. This book is about the joys and horrors of our old age. Sylvie Boulay writes: "It will show you the uncensored reality of my experience and that of women who confided in me. You will find humour, despair, and some gritty bits but absolutely no euphemisms.

Unflinching, honest, and relatable, this illustrated book is neither a celebration of nor a complaint about old age. It is the simple, unadorned truth of a life. Fully illustrated throughout with cartoons and drawings, this fantastic new title shines the brightest of lights on ageing as a woman."

Beyond Beige is the perfect gift this Mother’s Day for mums with a sense of humour!

Thirty-Eight Days of Rain by Eva Asprakis

Androulla is 24 and recently wed when she discovers she is infertile. In a bid for Cypriot citizenship she is undergoing adoption by her stepfather, and wondering if she will have to adopt a child one day herself?

As the reality of her situation sets in, Androulla's marriage begins to unravel. Between migration departments and doctors' appointments, she learns she must question what it means to be from somewhere, what it means to be a woman and, when an impossible choice presents itself, which of those things means the most to her? It's an unflinching literary novel that explores themes of womanhood, infertility and PCOS, immigration and complex family dynamics. For fans of Conversations With Friends & Breasts and Eggs.

Bright Midnights by L.S. Delorme

As Amelie finds herself increasingly drawn to Clovis, who is an alluring and mysterious young man who she meets in a dream, who hides a secret, she learns his story, establishes how it intertwines with her own life and finally discovers how to live her life in the real world. Until her own secrets are revealed to the wrong people and that world is turned upside down.

Bright Midnights is the second in the Limerent Series and continues in the thought-provoking and beautiful style of the first as it considers different dimensions, different ways of looking at the world, and the transcendental power of love. This is the described as the paranormal romance to gift this Mother’s Day.

She Can Prosper by Diane Watson

Diane Watson is an award-winning, distinguished financial advisor, entrepreneur, and the passionate founder of 'She Can Prosper.' It's Diane's firmly held view that you can afford to take risks if you stay informed and remain continually aware of what is happening around you.

Through her work as a financial advisor, she witnessed far too many women who she believed were abdicating responsibility for their finances to their partners. The realisation was that women who did not take control of their finances were being left vulnerable and potentially severely impacted later in life.

Their lack of knowledge or input into shaping their financial future was the catalyst to write this book. The book aims to provide women of all backgrounds with the knowledge, tools, and support they need to take control of their financial destinies.

She Can Prosper is the perfect gift for Mother’s Day, whether your mum is super financially savvy or not at all, there’s so much to learn for everyone.

Free-from Disruptor brand 'We Love Cake' Gets major Makeover to Kick Off 2024

Bells of Lazonby's iconic We Love Cake has undergone a branding and packaging overhaul in a bid to excite loyal shoppers and attract a younger demographic in 2024.

The rebrand is backed by a new campaign 'Baked in Joy' that will celebrate those who have found We Love Cake after diagnosis of Coeliac disease (such as my wife) or a newfound lifestyle choice, and it'll be deployed through digital channels.

The new-look packs are to be on shelf in supermarkets from later this month and in-foodservice during this year.

To date the free-from bakery, based in Lazonby Cumbria, has been noted for its disruptive and innovative take on the category, recreating iconic, household favourites in vegan, dairy-free and gluten-free varieties.

We Love Cake has seen rapid growth in recent years showing a staggering growth of in excess of  370% since 2020 in value and volume.

Operating in UK Frozen Foodservice, Australian and UK retail, it's on track with its mission to become the biggest brand in value sales in Free From Sweet Bakery in the UK having achieved this already in Australia.

Initially launched in 2012 in UK foodservice, the brand became a success due to its quality, taste credentials and allergen integrity.

Having been a disruptor to UK retail in 2019, We Love Cake was selling under 1,000 packs per week, by the end of 2023 it sold over 25,000 packs in UK retail in one week.

The rebrand aims to be a step change for We Love Cake. In-market sales estimated for 2024 are believed to be worth over 4M Australian Dollars in Australia and over £7M in the UK.

Head of Brand and Marketing, Josh Boydell-Smith, said: “The rebrand and marketing campaign 'Baked in Joy' is the absolutely perfect opportunity to celebrate those who have found the brand through Coeliac disease or lifestyle choice, it aims to normalise free-from sweet bakery and remind people how good it can taste.

“We are rebranding to drive growth and gain further distribution, but mainly to better tell our our story and open ourselves up to younger shoppers. Five years ago we looked bold and new on shelf, since others have followed, we realised that it was time for a refresh and to stand out once again.”

Speaking on the brands rapid growth, Josh added: “Based out of Lazonby in Cumbria, we pride ourselves on being a brand that's punching well above our weight. To date our success has been driven by innovation and strong distribution, we now have 33 lines in our portfolio across the UK and Australia spanning frozen, ambient and chilled foods."

Josh went on to say: “Our branding needed to support our presence in the free-from category, it was time for us to shake things up, and remind our shoppers why they really do love cake.”

Bells of Lazonby will be investing in digital markerting that will reach over five million consumers with the new 'Baked in Joy' campaign. The product rebrand is going to be heaviily supported by PR and social media outreach though all operating channels.

FACTFILE: Back in 202 The We Love Cake journey began when second-generation family business owner, Michael Bell, took the decision to try to live as a coeliac for a week.

Michael was totally dissatisfied with anything he ate, not least the free from cakes he reluctantly attempted.

By only day two of the week-log trial he decided to build a dedicated Gluten, wheat, and milk free bakery.  After years of honing gluten free bakery, he introduced We Love Cake to the UK foodservice in 2012.

We Love Cake are registered with Coeliac UK and declared as suitable for those with coeliac disease.

We love Cake is sold across the UK in Major Retail, Cafés and restaurants and Australia. Constantly re-working and revisiting the recipes, in 2019 We Love Cake rebranded and reduced sugar content across its portfolio.

Nourishing the Road to Recovery: Foods, Supplements, Minerals, and Vitamins for Long COVID and Chronic Fatigue Syndrome

As we continue to navigate the challenges posed by long COVID and chronic fatigue syndrome (CFS), the importance of proper nutrition cannot be overstated.

While there is no one-size-fits-all solution to these complex conditions, incorporating specific foods, supplements, minerals, and vitamins into your diet can play a crucial role in supporting your body's recovery journey.

In this blog post, we'll explore some of the key nutrients that have shown promise in combating the symptoms of long COVID and CFS.

Omega-3 Fatty Acids:

Omega-3 fatty acids, found abundantly in fatty fish like salmon, mackerel, and sardines, as well as in walnuts and flaxseeds, have anti-inflammatory properties that can help alleviate symptoms associated with long COVID and CFS. Incorporating these foods into your diet can support immune function and reduce inflammation, which are often compromised in these conditions.

Vitamin D:

Vitamin D deficiency has been linked to an increased risk of respiratory infections and immune dysfunction, both of which are prevalent in long COVID and CFS. Spending time outdoors in sunlight and consuming vitamin D-rich foods such as fatty fish, fortified dairy products, and egg yolks can help maintain optimal vitamin D levels. Additionally, supplementation may be necessary, especially for those with limited sun exposure.

Magnesium:

Magnesium plays a crucial role in energy metabolism and muscle function, making it particularly important for individuals experiencing fatigue associated with long COVID and CFS. Foods rich in magnesium include leafy greens, nuts, seeds, and whole grains. Supplementing with magnesium citrate or glycinate may also be beneficial for some individuals, under the guidance of a healthcare professional.

Vitamin B12:

Vitamin B12 is essential for the production of red blood cells and neurological function, and deficiency can contribute to fatigue and cognitive impairment, symptoms commonly experienced in long COVID and CFS. Animal products like meat, fish, and dairy are the best dietary sources of vitamin B12. For vegetarians and vegans, fortified foods or supplements may be necessary to ensure adequate intake.

Coenzyme Q10 (CoQ10):

CoQ10 is a powerful antioxidant and plays a critical role in cellular energy production. Research suggests supplementation with CoQ10 may help alleviate fatigue and improve overall energy levels in individuals with long COVID and CFS. Foods like organ meats, fish, and whole grains contain small amounts of CoQ10, but supplementation may be necessary to achieve therapeutic levels.

Zinc:

Zinc is involved in numerous physiological processes, including immune function, wound healing, and DNA synthesis. Some studies have suggested that zinc supplementation may help reduce the duration and severity of respiratory infections, which are often exacerbated in long COVID. Foods such as oysters, red meat, poultry, beans, and nuts are excellent sources of zinc.

Antioxidants:

Antioxidants, including vitamins C and E, selenium, and glutathione, play a crucial role in combating oxidative stress and inflammation, both of which are implicated in the pathogenesis of long COVID and CFS. Colourful fruits and vegetables, nuts, seeds, and whole grains are rich sources of antioxidants and should be included regularly in the diet.

While there is still much to learn about the optimal nutritional strategies for managing long COVID and chronic fatigue syndrome, incorporating nutrient-rich foods and supplements into your diet can support your body's recovery and help alleviate symptoms.

It's essential to work with a healthcare professional or registered dietitian to develop a personalized nutrition plan that meets your individual needs and addresses any underlying deficiencies or imbalances. By nourishing your body with the right nutrients, you can empower yourself on the path to improved health and well-being.

Unraveling the Delicious Mystery: Cottage Pie vs. Shepherd's Pie

In the realm of comfort foods, few dishes stand as tall as the hearty and satisfying pies known as Cottage Pie and Shepherd's Pie.

These two culinary delights, while often used interchangeably, actually have distinct origins, ingredients, and flavours. Today, we embark on a savoury journey to unravel the delicious mystery that sets Cottage Pie apart from Shepherd's Pie.

Origin Stories:

To understand the nuances between Cottage Pie and Shepherd's Pie, we must first delve into their histories. Shepherd's Pie, the older of the two, originates from the United Kingdom and is believed to have its roots in Scotland and northern England. Traditionally, it was a thrifty dish made with leftover roasted meat, typically lamb or mutton, topped with mashed potatoes.

Cottage Pie, on the other hand, emerged later and shares a similar concept but with a slight twist. Originating from Ireland and later gaining popularity in England, Cottage Pie was traditionally made with minced beef instead of lamb or mutton. The name "cottage" is said to refer to the rural cottages where farmworkers lived, reflecting its humble origins.

Ingredients:

The primary point of departure between Cottage Pie and Shepherd's Pie lies in their choice of meat. Shepherd's Pie, true to its name, traditionally features lamb or mutton. The rich and slightly gamey flavor of lamb infuses the dish with a distinct taste that is synonymous with traditional British cooking.

Conversely, Cottage Pie opts for minced beef as its protein base. The beef lends a heartier and more robust flavor profile to the dish, making it a favorite among those who prefer a meatier filling. However, modern variations of both pies may deviate from these traditional meat choices, with some recipes incorporating alternative proteins such as turkey or even plant-based substitutes.

Another differentiating factor is the vegetables used in each pie. While both typically include a mix of carrots, onions, and peas, Cottage Pie may incorporate a broader range of vegetables, such as mushrooms or celery, adding depth and complexity to its flavor profile.

Topping:

One of the most iconic elements of both Cottage Pie and Shepherd's Pie is the luscious layer of mashed potatoes that crowns the savory filling. However, subtle differences in the preparation of the topping can distinguish one from the other.

Shepherd's Pie traditionally features a smooth layer of mashed potatoes, often piped or spread evenly over the filling. The creamy texture of the mashed potatoes complements the tender lamb or mutton, creating a harmonious balance of flavors and textures.

In contrast, Cottage Pie may opt for a rustic mashed potato topping, with chunks of potatoes scattered atop the filling. This variation adds a rustic charm to the dish, enhancing its homely appeal and providing pockets of creamy potato goodness amidst the savory filling.

In the delightful world of comfort food, Cottage Pie and Shepherd's Pie stand as quintessential examples of hearty, wholesome fare. While they share many similarities, including a comforting layer of mashed potatoes, their differences in ingredients, flavors, and origins offer a fascinating glimpse into the rich tapestry of culinary traditions.

Whether you prefer the robust flavors of minced beef in Cottage Pie or the classic allure of tender lamb in Shepherd's Pie, one thing is certain, both pies are sure to warm the soul and satisfy the appetite, making them beloved staples on dinner tables around the world. So, the next time you find yourself craving a taste of nostalgia and comfort, why not whip up a batch of Cottage Pie or Shepherd's Pie and savor the delicious differences for yourself?
