Why Your Mile High Cuppa Could Be Doing You More Harm Than Good: Tea Expert Spills The Leaves and Beans On In-Flight Brews

With concerns over water quality, hygiene and sanitation onboard, a tea expert shares tips for safely enjoying your favorite drink whilst you are flying

Key Points:

Airplane water tanks may not be cleaned as often as one should be able to hope, raising concerns over the safety of consuming hot drinks in flight.

Coffee machines are often located near lavatories, and may not be thoroughly cleaned between flights.

Tea expert shares his tips and tricks to enjoy a mile-high brew

As more people take to the skies, especially with holiday season travel, a cup of tea or coffee during a flight might seem like the perfect way to relax and re-hydrate.

But before you reach for that hot beverage, Arthur Gautier, who os a tea expert at Nio Teas, is sharing some sage advice that might have you reconsidering.

Gautier warns there could be health risks linked to drinking tea and coffee on airplanes, especially when you factor in how onboard water quality plays a rvital ole in what ends up in your cuppa.

How Clean Is That Water, anyway?

One of those things that often flies under the radar is just how often (or not) the water tanks on airplanes are cleaned out. If you’ve seen those viral social media posts from flight attendants, you’ve probably heard the whispers—those tanks aren’t exactly getting the TLC you’d hope for.

“The water used for tea and coffee on planes comes from large tanks that, let’s just say, don’t get the same level of attention as your kitchen tap at home,” says Arthur. “It’s not always as clean as you might think, especially on the long-haul flights.”

For anyone with a sensitive stomach or a weaker immune system, that less-than-fresh water could mean more than just a bad-tasting brew—it might lead to some unpleasant discomfort mid-flight.

Location, Location, Location

Have you ever thought about where your tea or coffee is actually made on a plane? If you’re observant you may have noticed those trusty coffee machines are often placed right next to the lavatories—yes, that close. Eww. If that wasn’t enough to make you pause, it gets even worse.

“Apparently those machines don’t get much love between flights, unless they break down,” shares Gautier, hinting at the less-than-sparkling conditions. Over time, residue, germs, and bacteria can easily build up, making the situation even less appealing. With the machines sitting so close to the toilets rest, it’s not hard to see how things might get a bit... unsanitary?

“If cleanliness is a priority for you, you might want to think twice before reaching for that in-flight cup of coffee,” he adds.

Safer Alternatives: Bottled Drinks and Warm Tea Tricks

If you’re still craving a warm drink but want to avoid the risks, Arthur Gautier suggests some clever hacks.

“It’s safer to stick with bottled or canned beverages while flying,” he recommends. “If you really want tea, ask for a bottle of water and a cup of hot water separately. You can steep your tea bag in the bottled water, then warm it up using the hot water.”

Of course, this isn’t always the easiest task depending on the size of the bottle and the cup you get. And remember, boiling hot water can be dangerous, so be extra careful not to spill it while trying this method.

When it comes to tea, it can help to choose types that steep well at lower temperature water. Arthur suggests teas like green tea, white tea, or herbal blends like chamomile or peppermint, which are perfect for steeping in warmish water without sacrificing too much flavor. So even at 30,000 feet, you can still enjoy a decent cup without any worry.

Gautier concluded: "When you're flying, the cabin pressure and altitude can really dull your sense of taste, so that cup of tea or coffee might not taste as good as it normally would—regardless of the water quality. To make the most of it, go for teas that brew well with warm water, and always use bottled water when possible. That way, you can enjoy your drink without worrying about any unpleasant surprises."

Hosting Cake and Ale (or Cake and Coffee) Parties to Raise Funds for Charity

One of the most enjoyable ways to support a charitable cause is by hosting a cake and ale (or cake and coffee) party.

These events combine the delightful simplicity of a good cup of coffee, a refreshing ale, and a slice of cake with the powerful impact of fundraising for those in need.

If you're thinking about organising a charity event, a cake and ale or coffee party can be a low-cost, highly engaging way to bring people together for a good cause.

Why Cake and Ale or Coffee Parties?

Unlike more formal fundraising events, a cake and ale (or coffee) party has a casual, welcoming vibe that encourages community participation. There’s something universally appealing about gathering over homemade bakes and drinks. It doesn’t require a great deal of planning, and the relaxed atmosphere allows guests to connect with each other and learn more about the charity you're supporting.

It’s also an accessible way for anyone to contribute. Many people may shy away from large donations but feel comfortable offering a smaller sum in exchange for something tangible – in this case, a delicious slice of cake or a refreshing drink.

Planning Your Cake and Ale or Coffee Party

To ensure your fundraising event is a success, it’s important to consider a few key points during the planning phase.

1. Set a Date and Location

Choose a date that works for your community. If it’s a work or school-related event, weekends are often the best time. A central, easy-to-access location is crucial. Consider hosting it at home, a community centre, or a local pub or café, if they’re willing to donate the space for the cause.

2. Create a Menu

While cake is the star of the show, you don’t need to stop there. Offer a variety of cakes and bakes to suit different tastes and dietary requirements. Whether it's classic Victoria sponges, rich brownies, gluten-free options, or even savoury bakes, variety will help attract more attendees. Pair the cakes with a selection of drinks—tea, coffee, and perhaps, ale for a more traditional touch.

If you have baking talents within your community, encourage friends or family to contribute cakes. The more, the merrier!

3. Price Your Bakes

Pricing can be tricky, but the goal is to raise as much money as possible while ensuring guests feel they’re getting value for their donation. Consider a suggested donation per slice of cake or a set price for an entry ticket, which could include a couple of slices of cake and a drink.

Alternatively, you can have a “pay what you feel” donation system, which can work well if your guests are keen on the cause and feel generous.

4. Involve Your Charity or church

Make sure you promote the charity you are raising funds for throughout the event. You can display posters or banners that explain the charity’s mission and why it is important. Include a donation box for those who wish to contribute more and provide information on how they can continue supporting the charity after the event.

5. Spread the Word

Promoting your cake and ale or coffee party is key. Use social media, local community boards, and word of mouth to get the message out. Create a fun event page or invite your friends and colleagues directly. Emphasise that it's not just about enjoying cakes and drinks, but also supporting a meaningful cause.

Make It Fun and Engaging

Adding some light activities can make the event even more enjoyable. Consider a bake-off competition where guests can vote on their favourite cakes, or hold a raffle or auction to raise additional funds. A quiz or small games can help break the ice and create a more dynamic atmosphere.

The Impact of Your Event

A cake and ale or coffee party might seem like a small event, but it can have a big impact. Even if you’re only able to raise a modest amount, it all contributes to the larger efforts of the charity. Additionally, these events build awareness and community spirit, which can inspire people to take further action for the cause.

Moreover, they can become a recurring event in your community, growing year on year. Whether it's an annual charity bake sale at work or a quarterly neighbourhood coffee gathering for charity, these events can establish a tradition of giving back.

Conclusion

Cake and ale (or coffee) parties are a brilliant way to raise funds for charity while creating a warm, inclusive atmosphere. It’s an opportunity to bring your community together over something as simple as a slice of cake, while making a tangible difference for a cause that matters. With a bit of planning and creativity, your event can become a meaningful, impactful, and enjoyable tradition.

So, roll up your sleeves, get baking, and raise a glass or mug to doing good!

Black Gold XO Cafe Tequila. "It's utterly delicious!"

One of the members of out tasting team is not a fan of Tequila. However, upon tasting Black Gold XO Cafe Tequila they said: "Wow! This is utterly delicious!" I agree with them.

The launch arrives to fill premium coffee liqueur shaped hole left by Patron XO Café being discontinued from sale in the UK.

It's a sumptuous blend of the finest quality coffee combined with the smoothest tequila.

It's already available to purchase online at a price to match Patron XO Café.

A spokesperson told That's Food and Drink: "It's a new premium Coffee Tequila brand, Black Gold XO Café, which has been launched in a bid to fill the unfortunate void left by the discontinuation of the much-loved Patron XO Café in the UK."

Already available online at an RRP of £30, Black Gold XO Café is really the perfect blend and smoothest iteration of two of the world’s most beloved beverages, coffee, and tequila.

Crafted to a unique recipe with meticulous attention to detail, this luxurious coffee tequila is genuinely silky smooth, rich, and full-bodied, with a subtle hint of roasted coffee beans and a warm, lingering tequila finish.

Although the Bacardi-owned Patron XO Café was discontinued in 2021 and reintroduced in the US earlier this month, UK consumers continue to express their undoubted disappointment for its discontinuation, with the alcohol giant’s social media pages regularly flooded with outcry and calls for its return to the UK market.

However! Bacardi’s loss is clearly Black Gold XO Café’s gain, offering up a similar flavour profile, the same luxury experience, and all at the same price point as Patron XO Café before its discontinuation, Black Gold XO Café is offering consumers the chance to reconnect with their favourite tequila experience, both at the bar and at home.

Soft launched to mixologists earlier this year, the reaction from those making the best cocktails is the business has been absolutely massive, with the initial small batch run rather quickly sold out.

Black Gold XO Café is already an award-winning brand, having won gold at the 2024 Tequila & Mezcal Masters.

The completely unbranded liquid was submitted to the awards ahead of its market launch and was judged purely on its taste, and to great, widespread acclaim.

Said Nic Ponticakis, who has the unenviable position of being Brand Manager for Black Gold XO Café: “We're obviously thrilled to be reacquainting coffee tequila fans with their favourite liqueur.

“You just have to look online to witness that consumers are continuing to crave this flavour combination but are yet to have their needs fully met.

"With social media posts and petitions demanding ‘Bring back Café Patron’ we know there remains a gap in the UK coffee tequila market that needs filling, and with Black Gold XO Café, we're really  confident that we've done it.

“With the continuing undoubted popularity of coffee-based cocktails, such as the iconic Espresso Martini, it was vital we created a coffee tequila that would be incredibly delicious both on its own, or as part of a cocktail creation. With its elegant packaging and luxuriously smooth taste profile, Black Gold XO Cafe is the perfect choice for both scenarios.

“We can’t wait to see consumers around the UK elevating their moments of joy with Black Gold XO Café!”

In addition to its stunning aesthetic and flavour profile, Black Gold XO Café also has a number of sustainability credentials, such as including the use of post-consumer recycled glass for its bottles, a biodegradable closure, and a stopper also made from recycled materials.

Black Gold XO Café is available to purchase via Amazon https://amzn.to/3xqlaAN and ClicknDrink https://clickndrink.co.uk/black-gold-coffee-tequila-70cl with an ABV of 34% and in a 70cl bottle format.

A Guide to Different Types of Coffee Beans

For many of us, coffee is not just a beverage; it is an essential part of daily life.

Whether you’re an avid coffee enthusiast or just starting your journey, understanding the different types of coffee beans can greatly enhance your appreciation of this beloved drink.

This guide explores the four main types of coffee beans and their unique characteristics.

1. Arabica (Coffea arabica)

Overview:

Arabica coffee beans are the most popular and widely consumed coffee beans in the world. They are known for their smooth, complex flavour and lower caffeine content compared to other types.

Characteristics:

Flavour Profile: Arabica beans are often described as having a sweet, soft taste with notes of fruit, sugar, and berries. They have a pleasant acidity that can vary depending on the region where they are grown.

Growing Conditions: These beans thrive in higher altitudes (600-2000 metres) with consistent rainfall and temperatures between 15-24°C. They are primarily grown in countries like Brazil, Colombia, Ethiopia, and Kenya.

Appearance: The beans are typically oval-shaped with a curved crease.

Best For:

Arabica beans are ideal for those who enjoy a milder, more nuanced cup of coffee. They are commonly used in speciality coffee drinks, espressos, and single-origin brews.

2. Robusta (Coffea canephora)

Overview:

Robusta coffee beans are known for their strong, bold flavour and high caffeine content. They are the second most popular type of coffee bean.

Characteristics:

Flavour Profile: Robusta beans have a strong, harsh taste with earthy, woody notes. They tend to have a more bitter profile and a heavier body.

Growing Conditions: These beans grow well at lower altitudes (sea level to 800 metres) and are more resilient to pests and diseases. They are mainly produced in Vietnam, Brazil, Indonesia, and Uganda.

Appearance: Robusta beans are rounder and smaller than Arabica beans, with a straight crease.

Best For:

Robusta beans are often used in espresso blends to provide a richer crema and a stronger flavour. They are also used in instant coffee and espresso-based drinks where a more robust taste is desired.

3. Liberica (Coffea liberica)

Overview:

Liberica beans are less common but are cherished for their unique flavour profile and larger bean size. They are predominantly grown in Malaysia, the Philippines, and West Africa.

Characteristics:

Flavour Profile: Liberica beans have a distinct taste with floral and fruity undertones. The flavour can be somewhat smoky and woody, making it quite different from Arabica and Robusta.

Growing Conditions: These beans are grown in hot, humid climates at low to medium altitudes. They are less sensitive to changes in climate and can thrive in more diverse conditions.

Appearance: Liberica beans are noticeably larger and more asymmetrical compared to other coffee beans.

Best For:

Liberica is ideal for those looking to try something different and exotic. Its unique flavour can be appreciated in single-origin brews or speciality coffee drinks.

4. Excelsa (Coffea excelsa)

Overview:

Excelsa, once classified as its own species, is now considered a variety of Liberica. Despite this, it has a distinct taste that sets it apart from other coffee beans.

Characteristics:

Flavour Profile: Excelsa beans offer a tart, fruity profile with a complex, lingering aftertaste. They contribute depth and complexity to coffee blends.

Growing Conditions: These beans are typically grown in Southeast Asia, particularly in the Philippines and Vietnam.

Appearance: Similar to Liberica, Excelsa beans are large and have an almond-like shape.

Best For:

Excelsa beans are excellent for blending, as they add a unique dimension to the overall flavour profile of the coffee. They are also appreciated by coffee connoisseurs who enjoy experimenting with different tastes.

Tips for Choosing Coffee Beans

Know Your Preference: Whether you prefer a smooth, sweet cup or a strong, bitter brew, understanding your taste preference will help you choose the right type of bean.

Check the Origin: The region where the coffee is grown can significantly influence its flavour. Single-origin coffees allow you to experience the distinct characteristics of a particular region.

Experiment: Don’t be afraid to try different types of beans. Blends can offer a balanced flavour, while single-origin beans provide a unique taste experience.

Freshness: Always opt for freshly roasted beans and grind them just before brewing to ensure the best flavour.

Conclusion

Understanding the different types of coffee beans opens up a world of possibilities for your coffee-drinking experience. Whether you prefer the mild and complex flavours of Arabica, the bold strength of Robusta, the unique taste of Liberica, or the exotic notes of Excelsa, there’s a coffee bean out there for everyone. Happy brewing!

The Art of Artisan Coffee Brewing at Home

There’s something undeniably special about starting the day with a perfect cup of coffee. For many, the allure of artisan coffee has transformed a simple morning ritual into a refined art form.

With a few tips and the right equipment, you can bring the café experience into your home, crafting exceptional coffee that rivals any barista's brew.

Understanding Artisan Coffee

Artisan coffee is all about quality, craftsmanship, and a deep appreciation for the journey from bean to cup.

It involves selecting high-quality beans, often sourced from small farms that prioritise sustainable practices. These beans are then roasted with precision to highlight their unique flavour profiles.

Essential Equipment

To brew artisan coffee at home, you’ll need some essential equipment:

Coffee Grinder: A burr grinder is preferable to a blade grinder, as it produces a consistent grind size, crucial for even extraction.

Scale: Precision is key in coffee brewing. A digital scale helps measure your coffee and water accurately.

Kettle: A gooseneck kettle allows for controlled pouring, which is essential for methods like pour-over.

Brewing Device: Choose from various methods such as French press, Aeropress, Chemex, or a V60 dripper, depending on your preference.

Fresh Beans: Buy whole beans and grind them just before brewing to preserve freshness.

Selecting Your Beans

Opt for beans that are freshly roasted. Look for the roast date on the packaging and aim to use the beans within two to three weeks of roasting. Explore single-origin beans to experience the distinctive flavours of different regions. For example, Ethiopian beans often have fruity and floral notes, while Brazilian beans may offer a nuttier, chocolatey profile.

The Brewing Process

Measure and Grind: Start with a ratio of 1:16 coffee to water (e.g., 20 grams of coffee to 320 millilitres of water). Adjust according to your taste preference. Grind your coffee to the consistency suited for your brewing method. For example, use a coarse grind for French press and a medium-fine grind for pour-over.

Boil and Cool Water: Boil fresh, filtered water and let it cool to around 93°C (200°F). Water temperature plays a critical role in extracting the right flavours without burning the coffee.

Bloom the Coffee: For pour-over and similar methods, pour a small amount of water over the grounds to let them "bloom". This releases carbon dioxide and allows for better extraction. Let it sit for about 30 seconds.

Brew: Continue pouring the water in a slow, circular motion, ensuring all the grounds are evenly saturated. For a French press, pour the water, stir, and let it steep for about four minutes before plunging.

Enjoy: Once brewed, pour your coffee into a pre-warmed cup. Take a moment to appreciate the aroma before taking your first sip.

Experiment and Refine

Artisan coffee brewing is as much about experimentation as it is about precision. Adjust your grind size, water temperature, and brew time to find what suits your taste best. Keep a journal of your experiments, noting what works and what doesn’t, to refine your technique over time.

Sustainability and Ethical Sourcing

Part of the artisan coffee movement is a commitment to ethical sourcing and sustainability. Support roasters who prioritise fair trade, direct trade, and environmentally friendly practices. This not only ensures better quality coffee but also promotes fair wages and sustainable farming methods.

Final Thoughts

Brewing artisan coffee at home is a rewarding endeavour that can elevate your daily routine. With attention to detail and a bit of practice, you can enjoy café-quality coffee in the comfort of your own home. So, invest in good equipment, choose your beans wisely, and savour the journey of becoming your own barista. Cheers to the perfect brew!

Exploring the Unique Cuisine and Drinks of Iceland

Iceland, a land of stunning natural beauty with its majestic waterfalls, volcanic landscapes, and expansive glaciers, also offers a unique culinary experience.

The island's cuisine is deeply rooted in its history and environment, with traditional methods of preservation and a reliance on local ingredients playing a significant role.

From ancient preservation techniques to modern culinary innovations, Icelandic food and drink are as captivating as the country's scenery.

Traditional Icelandic Cuisine

Icelandic cuisine has historically been shaped by the need to preserve food through harsh winters. This has resulted in unique dishes that may surprise the uninitiated.

1. Hákarl (Fermented Shark)

Perhaps the most infamous Icelandic dish, hákarl is Greenland shark that has been fermented and hung to dry for several months. The result is a strong-smelling, ammonia-rich delicacy that is often an acquired taste. Hákarl is traditionally enjoyed during the midwinter festival of Þorrablót, accompanied by a shot of Brennivín, Iceland's signature schnapps.

2. Skyr

Skyr is a thick, creamy dairy product similar to yoghurt but technically a cheese. It has been a staple in the Icelandic diet for over a thousand years. Rich in protein and low in fat, skyr is enjoyed with berries, honey, or on its own, making it a versatile food for both breakfast and dessert.

3. Lamb Dishes

Lamb in Iceland is known for its exceptional quality, owing to the free-range farming practices and natural diet of the sheep. Traditional dishes include "Kjötsúpa" (a hearty lamb soup with root vegetables) and "Hangikjöt" (smoked lamb), often served during festive seasons.

4. Seafood

Iceland’s surrounding waters are teeming with fish, making seafood a cornerstone of the diet. Cod, haddock, and Atlantic salmon are commonly found in various dishes. Plokkfiskur, a comforting fish stew made with mashed potatoes and white fish, is a traditional favourite.

5. Rye Bread (Rúgbrauð)

Rúgbrauð, a dense, dark rye bread, is traditionally baked in a geothermal oven buried in the ground. This slow-cooking method gives the bread its distinctive, slightly sweet flavour. It’s typically served with butter, smoked salmon, or herring.

Modern Icelandic Cuisine

The modern Icelandic culinary scene is a blend of traditional flavours and contemporary techniques. Reykjavík, the capital, boasts a variety of restaurants that showcase innovative dishes using local ingredients.

1. New Nordic Cuisine

Inspired by the New Nordic movement, Icelandic chefs focus on fresh, seasonal, and locally sourced ingredients. This approach highlights the natural flavours of Iceland’s produce, seafood, and meats, often with minimalistic presentation.

2. Vegetarian and Vegan Options

Despite its meat-heavy traditional cuisine, Iceland has embraced the global trend towards plant-based diets. Many restaurants now offer creative vegetarian and vegan dishes that utilise local vegetables and herbs.

Icelandic Drinks

Iceland’s beverage offerings are equally fascinating, ranging from traditional spirits to contemporary craft beers.

1. Brennivín

Known as the “Black Death,” Brennivín is a potent schnapps made from fermented grain or potato mash, flavoured with caraway seeds. It’s a traditional accompaniment to many Icelandic dishes, particularly during celebrations.

2. Craft Beer

The craft beer scene in Iceland has blossomed in recent years, with local breweries producing a diverse range of beers. Brands like Einstök and Borg Brugghús have gained international recognition for their high-quality brews, often incorporating unique Icelandic ingredients such as Arctic thyme and lava rock filtration.

3. Icelandic Water

Icelandic water is renowned for its purity, coming from natural springs and glaciers. Bottled water brands like Icelandic Glacial export this exceptionally clean and crisp water worldwide.

4. Coffee Culture

Icelanders are avid coffee drinkers, and Reykjavík boasts numerous cosy cafés offering high-quality brews. The coffee culture is strong, with an emphasis on community and conversation.

Iceland's cuisine and drinks are a testament to its rich heritage and innovative spirit. From ancient preservation techniques to modern culinary artistry, the flavours of Iceland offer a delicious journey through its history and landscapes. Whether you're savouring a traditional dish or enjoying a modern Icelandic meal, the island’s food culture is sure to leave a lasting impression. So, next time you find yourself in this Nordic paradise, be sure to indulge in its unique gastronomic delights.

Ingredients:

For the Cake:

235g plain flour

120g cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup strong brewed Camp Coffee, cooled to room temperature

1/2 cup milk

For the Icing:

2 cups powdered sugar

3 tablespoons strong brewed Camp Coffee, cooled to room temperature

1 tablespoon milk

1/2 teaspoon vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.

In a separate bowl, beat the eggs and vanilla extract together until well mixed.

Gradually add the egg mixture to the dry ingredients, mixing until just incorporated.

Slowly pour in the cooled brewed Camp Coffee and milk, stirring until the batter is smooth and well combined.

Pour the batter into the prepared baking pan and spread it out evenly.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the icing. In a medium mixing bowl, whisk together the powdered sugar, brewed Camp Coffee, milk, and vanilla extract until smooth.

Once the cake is done baking, remove it from the oven and let it cool completely in the pan.

Once the cake has cooled, pour the icing over the top, spreading it out evenly with a spatula.

Exploring Coffee Culture Around the World: From Espresso to Cold Brew

Coffee, the beloved elixir of life for many of us, transcends mere beverage status to embody a cultural phenomenon.

From the bustling cafes of Europe to the serene tea houses of Japan, each corner of the world boasts its own unique coffee culture.

In this blog post, we embark on a journey to explore the diverse coffee traditions around the globe, from the intense kick of Italian espresso to the refreshing simplicity of Japanese cold brew.

Italy: Espresso, the Heartbeat of Italian Culture

Italy, the birthplace of espresso, has a coffee culture deeply ingrained in its social fabric. Espresso, a concentrated shot of coffee brewed under pressure, is not just a beverage in Italy; it's a way of life. Italians typically consume their espresso standing at the bar, quickly sipping it down while engaging in lively conversation. The ritual of enjoying espresso is as much about the social interaction as it is about the caffeine boost.

France: Café Culture and the Art of People Watching

In France, cafes are more than just places to grab a quick cup of coffee; they are institutions where people gather to socialize, relax, and observe the world around them. French cafe culture emphasizes the importance of taking time to savor the moment, whether it's enjoying a leisurely breakfast with a croissant or spending an afternoon people-watching from a sidewalk table.

Ethiopia: The Birthplace of Coffee

Ethiopia holds a special place in the history of coffee, as it is widely believed to be the birthplace of the beloved beverage. Coffee ceremonies, which involve roasting, grinding, and brewing coffee beans in a traditional manner, are an integral part of Ethiopian culture. These ceremonies are often conducted as a sign of hospitality and are an opportunity for friends and family to come together and bond over a shared love of coffee.

Japan: Embracing the Art of Cold Brew

In Japan, where summers can be hot and humid, cold brew coffee has become increasingly popular. Cold brew is made by steeping coffee grounds in cold water for an extended period, resulting in a smooth, low-acid brew that is perfect for sipping on a sweltering day. Japanese cold brew culture emphasizes simplicity and purity, with many cafes serving cold brew over ice without any added milk or sweeteners.

United States: The Rise of Specialty Coffee

In recent years, the United States has seen a surge in interest in specialty coffee, with artisanal roasters and third-wave cafes popping up in cities across the country. Americans have embraced coffee as more than just a morning pick-me-up, elevating it to an art form with a focus on quality, sustainability, and craftsmanship. From single-origin pour-overs to meticulously crafted latte art, the U.S. coffee scene is as diverse and dynamic as the country itself.

Coffee culture is a reflection of the unique customs, traditions, and values of each society. Whether it's the ritualistic espresso culture of Italy, the laid-back cafe culture of France, or the innovative cold brew culture of Japan, coffee has the power to bring people together and create meaningful connections across borders. So the next time you take a sip of your favorite brew, take a moment to appreciate the rich tapestry of coffee culture that spans the globe.

Mastering the Art of Cold Brew Coffee: A Home Brewing Guide

Introduction:

In recent years, cold brew coffee has gained immense popularity for its smooth and rich flavour profile. Its simple brewing process and versatility make it a favourite among coffee aficionados.

While it may seem daunting to make cold brew at home, fear not! With the right ingredients, equipment, and a bit of patience, you can become a cold brew connoisseur in no time. Let's dive into the steps to successfully craft this refreshing beverage in the comfort of your own home.

Choose Your Beans:

Quality coffee beans are the foundation of any great cold brew. Opt for a medium to dark roast with flavor notes that you enjoy. Experiment with different origins and blends to find the perfect balance for your palate. Ensure that the beans are freshly ground to preserve their aromatic oils and flavours.

Grind Consistently:

For cold brew, a coarse grind is key. Aim for a consistency similar to that of breadcrumbs. Grinding too fine can result in over-extraction and a harsh, bitter taste. If possible, use a burr grinder for more consistent particle size, but a blade grinder will suffice if that's what you have on hand.

Ratio Matters:

The coffee-to-water ratio plays a crucial role in determining the strength of your cold brew. An ideal starting point is a 1:4 ratio coffee to water. For example, for every 1 cup of coarsely ground coffee, use 4 cups of cold, filtered water. Adjust the ratio according to your preference for stronger or milder coffee brews. You know your own tastes, so aim to achieve flavours that you will like.

Steep Time and Patience:

Patience is the key factor when it comes to cold brewing coffee. Unlike hot brewing methods which are known for quickly extracting flavours, cold brewing requires time to gently coax out the coffee's nuances. Steep your coffee grounds in cold water for 12 to 24 hours in the refrigerator. Experiment with different steeping times to find the optimal balance of flavour and strength.

Strain and Filter:

Once the steeping period is complete, it's time to strain the coffee to remove the grounds. Use a fine-mesh sieve, cheesecloth, or a dedicated cold brew filter bag to separate the liquid from the solids. For a clearer brew, you can double strain using a coffee filter or paper towel-lined sieve.

Dilute and Enjoy:

Cold brew concentrate is strong, so it's typically diluted before serving. Mix equal parts cold brew concentrate and water over ice for a classic cold brew, or customise to your liking with milk, cream, or sweeteners. Cold brew can also be enjoyed hot by heating the concentrate and mixing it with hot water.

Storage:

Store your cold brew concentrate in a sealed container in the refrigerator for up to two weeks. For longer storage, consider freezing portions in ice cube trays for future use. Remember to label your container with the brewing date for freshness tracking.

Mastering the art of cold brew coffee at home is a rewarding experience that allows you to tailor the flavor to your liking. With high quality beans, proper grinding, patience, and a few simple steps, you can enjoy a delicious cup of cold brew whenever the craving strikes. Experiment with different techniques and ratios to discover your perfect brew, and savour the smooth, bold flavours of homemade cold brew coffee. Cheers to your brewing adventures!

Worried about using plastic or metal coffee pods? PAPACKS and EURO-CAPS have the answer!

The new and innovative coffee capsule, developed together in a more than five-year fantastic collaboration between Euro-Caps and PAPACKS, is made using renewable, FSC®-certified raw materials, representing a significant advancement in the sustainable packaging industry. It greatly minimises waste and optimises resource usage at the same time.

These innovative oil-resistant and water-resistant fiber-based coffee capsules ensure coffee freshness and enables smooth use in capsule coffee machines, significantly reducing environmental impact, in line with principles of social responsibility and circular economy.

A spokesman said: "With great pride and joy, we announce that PAPACKS and Euro-Caps have been awarded the esteemed WorldStar Packaging Award 2024 for our innovative fiber-based coffee capsule. This honuor from the World Packaging Organization (WPO) recognises our ongoing commitment to sustainability and high-quality standards."

He went on to say: "With this step and the expansion to other compatible capsule models, Euro Caps, in collaboration with PAPACKS, becomes one of the first industrial-scale suppliers of a functioning fiber-based coffee capsule, which can significantly reduce the current use of plastic and aluminum capsules. According to calculations by DUH (Deutsche Umwelthilfe [https://www.duh.de/]), Germans consumed a total of 3.4 billion coffee capsules in 2019, equating to something in the order of 13,500 tons of waste.

"The joint development with Euro-Caps and PAPACKS challenged numerous experts from both companies to ensure the final product functions flawlessly, especially in its properties of oil resistance and water resistance, completely without plastic and aluminum. This innovation in design and technology has been registered as an international design patent with the World Intellectual Property Organization (DM/230736)."

Tahsin Dag, Founder & CEO of PAPACKS, commented: "Of course, we are proud of our developments in coffee capsules, demonstrating our commitment to environmental protection and sustainability. Transforming rapidly renewable, FSC®-certified raw materials into compostable capsules represents a significant advancement.

"Our innovative and outstanding collaboration with EURO-CAPS has been instrumental in achieving these innovations. This partnership emphasizes our mission to advance eco-friendly packaging solutions and to serve both our customers and the environment."

Anthony Kay, R&D Engineer at EURO-CAPS, added: "The advancements we've made at EURO-CAPS in the development of coffee capsules are a clear indication of our innovative strength and commitment to the environment.

"Through our collaboration with PAPACKS, we have succeeded in developing capsules that are not merely environmentally friendly but also technologically advanced, too. Our focus was on creating a capsule that's entirely compostable without compromising the quality and taste experience of the coffee. This is a significant step forward for sustainability in the coffee capsule industry.

"We thank our dedicated development and production team, as well as all involved partners, for their devoted work. The award will be honoured at the WorldStar Awards Ceremony and Gala Dinner in Bangkok, Thailand, on June 15, 2024."

Trewithen Dairy Tells You How To Make The Perfect Latte At Home

With Trewithen Dairy's justifiably renowned Cornish Barista Milk now available nationally in Ocado and regionally in SPAR and Lidl branches, the leading Cornish dairy is spilling the (coffee) beans on how to create the perfect latte at home with their award-winning barista milk that produces a genuinely superior milk froth.

According to recent research by Mintel, the market intelligence agency, consumers are entering a 'fourth wave' of premium home-crafted coffee.

With the rising popularity of home barista setups, Trewithen Dairy's Cornish Barista Milk is helping coffee enthusiasts bring the coffee shop experience into their own homes, resulting in a perfect barista quality coffee. Sourced from local Cornish farms and crafted with care, the quality milk is specially designed to complement the rich flavours of coffee, resulting in a velvety and indulgent latte.

Try Trewithen's top tips on how to create the perfect latte and remember that practice makes perfect!

Making the perfect foam

Trewithen Dairy's Cornish Barista Milk is perfect for creating barista style microfroam due to its ideal protein (3.5%) and butterfat (4%) combination which creates a creamy texture and silky, longer lasting microfoam.

Fill one third of your milk jug to allow space in the jug for the milk to expand and enough milk to get the required foaming motion.

Give the steam arm a quick purge before using to clear any excess steam.

Place the steam arm just underneath the surface of the milk and after a few short 'chirps' lower the steam arm further into the milk, positioning it at the side of the jug. This should initiate a swirling motion in the milk. Heat the milk to around 65 °C and froth until it reaches a velvety consistency.

Pulling your espresso

For any good coffee it's important to start with high quality coffee for a robust and flavourful base. Whether you're using an espresso machine or a coffee pod, you'll need around 25-30ml of espresso coffee. Start running the shot of espresso as soon as you begin foaming your milk so that it is ready to go. Ideally, you're looking for a golden crema on top of the surface of your espresso.

Mastering the pour

After foaming your milk, gently tap the jug or bump on a table to remove any unwanted air bubbles and get ready for the pour.

Starting from a relatively high position of 2-3” above the cup with a central aim, pour the frothed milk over the espresso in a slow, steady stream until the cup is nearly half full. Continue to pour whilst gradually lowering the milk and steepening your pouring angle, adding a little wiggle to your wrist. Once almost full, pick up the jug and move it forward as you go, to create your first heart pattern.

You can enhance your latte with syrups, spices, or flavoured powders to suit your taste preferences.

Trewithen Dairy would love coffee fans to share their at-home latte creations on social media using the hashtag #trewbarista for a chance to be featured on their official channels.
