RECIPE: Ginger and rhubarb cake with brown buttercream

Ingredients

320g Unsalted butter

320g Light brown sugar

320g Self-raising flour

2 tsp Baking powder

1 1/2 tbsp Ground ginger

1 tsp Mixed spice

1 tsp Salt

6 Eggs

2 tbsp Black treacle

1 tsp Vanilla paste

2 tbsp Milk

Half a jar of DukesHill Rhubarb & Ginger Jam

500g Good quality salted butter

500g Icing sugar

30ml Double cream

Black pepper

1 tbsp Honey

Fudge to decorate, crumbled

Method

Grease and flour three 20cm cake tins and preheat the oven to 170c. 

In a large bowl, sieve together the flour, ginger, mixed spice, salt and baking powder and set aside. Cream the butter and sugar together until light and fluffy. While still beating the mixture, add the eggs one at a time, adding a spoonful of flour mixture if it starts to curdle. Whisk in the black treacle. Pour into the prepared tins and bake for 25 minutes - or until the cakes spring back to the touch and an inserted skewer comes out clean.

Set aside to cool for five minutes, while you combine the milk and vanilla paste together. Remove the cakes from the tins and place on a wire rack. Brush each cake with the vanilla milk soak and leave to cool.

To make the brown buttercream, place the butter in a pan over a medium heat and cook while stirring from time to time. Don't go away - watch the colour and smell the aromas carefully, as it will turn quickly. When the butter has turned light brown and smells nutty, remove from the heat. Don't allow it to brown too much otherwise it will taste acrid. Set aside for at least 20 minutes to cool.

Sieve the icing sugar in a stand mixer and add the brown butter and double cream. Whisk until it thickens. It can be made in advance and chilled.

To assemble the cakes, place the first sponge onto a serving plate, drizzle a little honey over the sponge and twist of freshly milled black pepper. Then, pipe buttercream around the edge of the sponge before spooning jam into the middle. The buttercream forms a barrier that prevents the cakes from sliding around. Pipe buttercream over the jam. Add the next sponge and repeat the process. For the final sponge, add the drizzle of honey and black pepper and finish with a layer of buttercream. Add crumbled fudge around the circumference to decorate.

Supporting a plant-based diet for our pets, as research and studies show numerous health benefits. Here’s everything you will need to know about upgrading their nutrition - whether flexi, or full-time.

● A third of pet owners have already considered feeding their furry friends a vegan diet.

● Studies have discovered that vegan dogs visit the vet less often and require fewer medications.

Conscious living is on the rise and we’re taking steps to be more sustainable; we’re prioritising more ethical brands, buying reusable items, eating less meat, using less plastics, and even becoming more conscious about what foods we eat. 

We’re optimising our diets for better skin, better hair, better gut health, and for overall longevity; even researching the provenance of our ingredients, but what about our furry friends? 

Whether flexi or full-time, recent scientific studies show dogs can not only survive, but even thrive on a vegan diet, challenging conventional beliefs about canine nutrition. Research also indicates dogs on a pet-based diet visit the vet less often, and require fewer medications.

So, why do we think this is?

Herbie Wilde founder Ella Daines-Smith originally embarked found it necessary to begin the natural food journey for her beloved French bulldog, Bertie, as she was suffering from debilitating stomach issues and painful, itchy skin due to food intolerances. 

So Ella began looking into key allergens for dogs, and the ingredients used by established brands, but was shocked at what she discovered. 

Pet food standards are much lower than human food, meaning the scraps humans can’t use can be used in both kibble and wet foods, including hair, feathers, bones, beaks, digestive systems, and the remains of deceased animals. 

With EU labelling laws being so lax, these connective tissues and off-cuts can simply be labelled as “meat derivatives,” with brands free to bulk up their so-called “natural” pet food with this indigestible filler to cut costs. These derivatives usually have no traceable provenance or are sourced from big factory farms with no understanding of, or care for, ethical standards. 

Ella said: “Beaks, feathers, wool, hooves, and connective tissue may be considered protein, but they are totally indigestible for dogs and cats, and are extremely low in essential amino acids. The more indigestible a protein, the more stress it places on an animal's internal organs, such as their kidneys. It can also lead to intolerances, too.”

What are the benefits of a plant-based diet? 

Emma Passman, Head of Nutritional Science at Herbie Wilde said: “There's always going to be scepticism about whether a plant-based diet is right for dogs. But I think the main point to consider is not whether a meal contains meat or not, but whether it’s tasty, and contains all of the right vitamins, minerals, proteins, carbohydrates and fats. And whether these are quality sources, not just meat derivatives that can cause allergies and all manner of digestive issues for our pets.” 

Experts from all over the world have identified that dogs, having evolved considerably from their wolf ancestors, possess digestive tracts that are adapted to successfully digest plant-based ingredients. A plant-based diet, whether full-time or flexi, has recently been studied and proven to offer numerous health benefits. 

There have also been several large-scale studies that have shown outcomes as “good” or “better for both cats and dogs", as scientists view modern dogs as omnivores, rather than carnivores. This has resulted in a rapid growth of the plant-based dog food market, which was valued at USD 14 billion, and was expected to reach USD 26 billion by 2033. 

Not only this, but there's also an environmental impact, too. Dogs and cats consume around 9% of all land animals killed for food, or around 7 billion animals annually, as well as billions of fish and aquatic animals.

Dr. Andrew Knight calculated if all the dogs in the world went vegan, it would save more greenhouse gases than those emitted by the entire UK; it would also save land the size of Mexico, freshwater exceeding the amount of renewable water in the whole of Denmark and would feed around 450 million people, more than the entire EU. If all the world’s people went vegan, it would feed around 5.3 billion additional people, two thirds of the Earth’s current population.

The conversation around a plant-based diet for humans, and its numerous benefits, has also been discussed at length, as seen in the Netflix documentary, Game Changer, and as discussed by David Attenborough on the latest Planet Earth offering.

Impress your Valentine with Kamado Joe's Valentine's Day Barbecue Recipes

You'll be able to really impress your Valentine with a creamy, crunchy arancini with sweet lobster-meat and a silky smooth pea puree. 

Followed by the sexiest of desserts, a molten chocolate pudding. If this doesn't make your evening end successfully, then nothing will… All cooked on your Kamado Joe - how cool is that?

Lobster and truffle arancini with pea puree

Serves 2

Ingredients

1 cooked lobster (about 600g)

300g butter

100g Parmesan, grated

175g arborio rice

A few drops of truffle oil - depending on strength

400g frozen peas

1 onion, finely chopped

6 cloves garlic, thinly sliced

2 glasses white wine

1 litre veg or fish stock

2 eggs, whisked

200g flour

200g panko breadcrumbs

Oil for deep frying

Method

Set your barbecue to 150c direct heat. Remove all of the lobster meat from the shell and claws, chop into chunks and set aside.

In a cast iron pan, add a good glug of olive oil, then the onions and garlic. Cook gently for 15 minutes until translucent. Add the rice and stir until each grain is coated with oil. Add the wine and cook until it is completely reduced, stirring all the time. Add the stock a ladle at a time, whilst stirring regularly until the rice is just tender. Add 100g of the frozen peas, the lobster, half of the butter, the Parmesan and a few drops of truffle oil to taste - then stir well until melted. 

Pour the risotto into a baking tray and leave to cool - ideally overnight. When chilled, form the risotto into balls, roll them in the flour, dip in the egg and finally the panko breadcrumbs.

Set your barbecue to 250c and heat the oil in a pan to 180C. Fry the arancini until golden brown and piping hot in the middle. Cook the rest of the peas in boiling water and blitz in a food processor with the remaining butter. Serve with the arancini. 

Molten chocolate fondant

Serves 4

Ingredients 

25g melted butter

1 tbsp cocoa powder

100g 70% dark chocolate, broken into small pieces

100g butter, cut into small cubes

100g caster sugar

2 eggs and 2 egg yolks

100g plain flour

4 chocolate truffles

200ml double cream, whipped to soft peaks

1 tsp vanilla paste

Icing sugar to dust

Method

Set your barbecue to 180C indirect heat. Paint the inside of four ramekins with the melted butter and divide up the cocoa powder into each mould before tipping out the excess to ensure all of the butter is well-dusted. 

Place a glass bowl over a saucepan of simmering water and add the chocolate and butter. Stir until melted. Set aside. In a separate bowl, whisk the eggs, yolks and sugar until thick and pale. Then mix in flour and beat well. 

Slowly add the chocolate to the egg mixture and beat until fully incorporated. Divide the mix equally between the moulds and pop a truffle in each one so fully submerged in the batter. Place on a baking tray and cook for 12 minutes. Leave for 1 minute then gently ease out onto a plate - using a knife if you need to. Add the vanilla to the cream and mix. Serve with the fondant and sprinkle with icing sugar.

The Food Works SW Announces New Discovery Day for Businesses

Leading food and drink innovation centre The Food WorksSW will be throwing open its doors and holding a Discovery Day on 22nd February to show food and drink brands all that it has to offer businesses, whether they're looking to test and develop a product, need technical advice or want to take the next steps in growing their business. 

The free event at the North Somerset centre will showcase each of its specialist bakery, dairy and drinks kitchens with talks from invited guest speakers, including Butcombe Brewery's Development Chef Jasper Prickett and Ellie Brown, Founder of Kinda Co., who will highlight how their business has benefited from time spent at The Food WorksSW and also industry experts Greg Parsons, owner of Sharpham Dairy and Chair of Food Drink Devon and Gabriel David, Managing Director of Royal Warrant holder Luscombe Drinks.

 Since its opening in October 2021, it has helped over 150 businesses. New products such as gelato, water kefir, vegan cheese, chilli sauces, high protein cookies and frozen ready meals have all been developed in their kitchens.

In addition, Discovery Day attendees will also hear from representatives from brands aligned with each speciality kitchen who will offer industry insight, and their in-house technical experts, Zoe Plant and Rachel Goff, will be demonstrating each of the kitchen's state-of-the-art equipment and advising on a range of topics, from product labelling to SALSA, during each session.

Specialist sessions will run throughout the day with an optional tour of Food Works' meeting rooms, conference facilities and commercial and trial kitchens. The centre's coffee shop and business lounge will also be open on the day for people to use.

Sandford Orchards Wins Four Golds at Taste of the West Awards

Family-owned and fiercely independent Sandford Orchards has recently garnered gold for all four of their ciders entered into the Taste of the West Awards. These are Devon Rosé, Devon Red, Rib Tickler and The General.

Said a delighted Barny Butterfield, Chief Cidermaker at Sandford Orchards: “We're thrilled the judges agreed these four ciders are truly gold medalists! 

"They represent a broad spectrum of ciders from our flagship session cider, Devon Red to The General from our vintage range and our new blush cider, Devon Rosé. 

"Although each one is quite different in style and appeal, they all have one thing in common. They are all top notch authentic ciders, lovingly created from apples grown and pressed in Devon, and these awards recognise that.” 

The General (ABV 8.4%) is the Imperial Stout of Sandford Orchards' vintage range. This super rich cider is bold and satisfying with the flavours of Seville orange, plum and baked apple. It is rich and rewarding with a long finish and is a superb complement to gamey meats or a fully-laden Sunday roast.

Devon Rosé Cider (ABV 4%) is an elegantly clean and fresh rosé cider, bursting with the fruitiness of Pinot Noir red wine grapes. It is a delicious, medium sweet cider made from Browns, Katja and Jane apple varieties which are fermented with grape skins to give the cider a fabulous depth of flavour and a beautiful blush colouring. It can be enjoyed on its own or as the ideal accompaniment for a goat cheese tart or Devon high tea.

Devon Red (ABV 4.5%) is a naturally tasty and utterly delicious, fresh apple cider made from apples grown and pressed in Devon. Devon Red is Sandford Orchards' famous session cider.

Rib Tickler (ABV 5%) was originally crafted with players from the Exeter Chiefs as part of an initiative with The Rugby Players Association to raise money for charity. That legacy continues, as every bottle or pint sold raises money for The Wooden Spoon children's rugby charity. Rib Tickler has rich aromas of honey and baked apple, ripe and buttery on the palate, with a moreish apple skin flavour, balanced with a crisp, natural acidity.

The Taste of the West Awards programme has been promoting and supporting the South West food and drink industry for over 30 years. It has grown to become the most prestigious food and drink awards programme in the South West. Each year they work with around 350 food and drink producers who enter their South West food and drink products into their awards programme to be tried and tested by their panel of independent industry experts.

A limited edition for Easter, DukesHill's famous Wiltshire ham is topped with a sweetly spiced Bramley and Braeburn apple and sultana glaze, flavours reminiscent of hot cross buns. DukesHill's legendary Wiltshire Cure involves the hams spending almost a week maturing in their own-recipe brine to which a touch of unrefined brown sugar is added, giving a deliciously mild and subtly sweet flavour. 

The ham is then air dried for a further week to mature and remove excess moisture before being steam cooked for 12 hours, allowing the fat to render and soften creating a buttery texture. Once cooked the ham is hand-skinned and trimmed then coated in DukesHill's Apple & Sultana glaze before being finished off in the glazing oven. All DukesHill hams can be enjoyed hot or cold.
