Strong Roots Pumpkin & Spinach Burgers. Our Opinion? Absolutely Delicious!

Every bite of the Strong Roots Spinach and Pumpkin Burger packs some serious crunch from the hearty, earthy burger, paired perfectly with layers of cool, refreshing cucumber ribbons and a generous dollop of creamy minty mayo. 

SERVES: 2

PREP TIME: 5 mins

COOK TIME: 12 mins

Ingredients:

    • ½ cucumber

    • 2tbs vinaigrette 

    • 3-4 tbs mayo

    • 1 lemon

    • 1 bag of rocket leaves

    • 2 seeded burger buns

    • Bunch of mint leaves

Method:

    • Pop your Strong Roots Spinach and Pumpkin burgers into your air fryer for 10-12 minutes.

    • While those are cooking, use a peeler to make cucumber ribbons.

    • Place the ribbons in a bowl and add two tablespoons of vinaigrette and give a little toss around and set aside.

    • Next chop eight mint leaves, and set aside in another bowl.

    • Add the mayo and squeeze of lemon to the second bowl of mint leaves and give it a quick mix to combine.

    • Once the burgers are ready it’s time to build your burgers.  Slice the buns, put a dollop of the minty mayo on each half, place rocket leaves on the bottom, followed by the Strong Roots Pumpkin & Spinach burgers and then top it with the cucumber ribbons and the bun lid.

My wife and I love these burgers, they are absolutely delicious, have excellent mouthfeel and are great for people who are vegans or who just want a change from their usual beef burgers.

We feel they'll make a great item for your freezer if someone in your family decides to go vegan just in time for Christmas (yes, it does happen!) or if you have to cater for an unexpected but welcome guest for Christmas who happens to be a vegan.

The Beefy Boys Officially Open in Oxford Following VIP Launch Event

After months of anticipation, cult burger brand The Beefy Boys have officially opened their brand-new Oxford restaurant at Westgate Oxford, following a buzzing soft launch period and an exciting VIP launch party which took place on Friday 3rd October.

The exclusive event welcomed over 100 guests, including local press, influencers, and members of the Oxford community who enjoyed a first taste of The Beefy Boys' award-winning American-style dirty burgers, indulgent sides, beers, cocktails, and signature hard shakes. 

The evening also featured music from DJ Cheeba and an exclusive Smashed Patty Masterclass with co-founders Anthony 'Murf' Murphy and Dan Mayo-Evans. 

The goody bags were the ultimate stars of the night, with everything from exclusive Beefy Boys merchandise, including a one-off Yeti mug and Tubby Toms BBQ rub.

Located on the rooftop level of Westgate Oxford between Six by Nico and Sticks 'n' Sushi, the 100-cover restaurant blends The Beefy Boys' signature playful style with a bold refresh, including cheeky neon signage, artwork, a lively open kitchen, and a striking central bar, serving cocktails, mocktails, ciders, spirits, and craft beers.

The celebration featured delicious roaming trays of The Beefy Boys' classics including The OG Beefy Boy Burger and the award-winning Oklahoma Onion Boy, delicious sides such as Mac & Cheese Balls and Ninja Chicken Tenders, along with an alcoholic Tiramisu hard shake served for dessert. Drinks partners including Somer Valley Brewery, Tap Social Movement, and Bristol Gin Distillery offered samples of their beers, spirits, and cocktails.

Founded by four childhood friends back in 2011, The Beefy Boys rose from backyard BBQs to global burger phenomenon, securing top spots at the World Food Championships while building devoted followings at their five UK restaurants in Hereford, Shrewsbury, Cheltenham, Bath, and now Oxford. 

Speaking about the official opening, co-founder Murf told That's Food and Drink: “The response from our visitors in Oxford has been incredible so far! 

"From the first day of our soft launch to the launch party itself, we've felt so welcomed by the local community. 

"The support from Westgate Oxford has been amazing, and we're beyond excited to finally open our doors and welcome the people of Oxfordshire in for burgers, beers, and good times.”

The Beefy Boys unveil brand-new Oxford restaurant

Oxfordshire burger fans are being offered the ultimate bragging rights, with a chance to become official 'Burger Testers' in the new Oxford restaurant's soft launch period. 

From now until Friday 3rd October, diners can get 20% off food in exchange for honest feedback on the food and service. 

This will make them the very first to visit the new restaurant and taste The Beefy Boys' award-winning burgers in the city. 

Advance booking is required, and with early slots already filling up, spaces are expected to go very quickly.

Located in the heart of the city at Westgate Oxford, the 100-cover rooftop restaurant blends The Beefy Boys' signature playful style with a bold refresh. 

At the centre of the space is a striking bar, serving cocktails, mocktails, ciders, spirits, and beers, including premium bottled lager from Hawkestone Brewery, freshly tanked beer exclusively from Somer Valley Brewing, and local favourites from Tap Social Movement.

At the rear of the restaurant, a lively open kitchen allows guests to watch the Beefy Boys team in action as they smash out their award-winning burgers. 

Neon signage reading 'Smash Ya Patty' and playful artwork tell the story of the brand's journey from back-garden BBQ's to global recognition, with plenty of tongue-in-cheek touches that are a signature part of The Beefy Boys' cheeky charm.

On the menu, diners can expect to find The Beefy Boys' legendary American-style dirty burgers such as fan favourites The Dirty Boy and The Oklahoma Onion Boy, along with  loaded fries, chicken wings and tenders, plus vegetarian options, cocktails, and indulgent hard shakes – boozy milkshakes packed with flavour that make the perfect post-burger treat

Founded by four childhood friends in 2011, The Beefy Boys have gained a cult following since securing second place at the World Food Championships in Las Vegas in 2014. Since then they have opened five restaurants, the first in their hometown of Hereford, followed by Shrewsbury, Cheltenham, Bath, and now Oxford. 

Most recently, they returned to the prestigious World Food Championships in November 2024, finishing fourth in the world, so Oxford diners can now experience one of the planet's best burgers, right on their doorstep.

My wife and I found the Beefy Boys premises in Shrewsbury recently and were most impressed by the menu choices, the size of the portions and the drink menu.

Celebrate Father's Day With the Beefy Boys

The Beefy Boys have unveiled two mouthwatering new ways to turn up the heat this June for Father's Day. 

The award-winning burger champions from Hereford have announced the release of an Ultimate Father's Day DIY Burger Box, as well a Live Father's Day Burger School experience with co-founder Murf, at the Royal Three Counties Show on Sunday 15th June.

Fresh from their Times-bestselling book, From Backyard BBQ to World Class Burgers, The Beefy Boys have created the perfect gift for foodie dads who like to fire up the grill at home, with the release of their Ultimate Father's Day DIY Box.
