DukesHill Launch Finest Grade Japanese A5 Wagyu Beef

Premium meat and artisanal fine foods supplier, DukesHill, is justifiably proud to announce the launch of their Japanese A5 grade wagyu sirloin and ribeye beef; representing the highest quality grade beef available worldwide.

While DukesHill is already famous for its artisanal approach to ham production, the introduction of Japanese A5 Grade wagyu underscores its outstanding commitment to sourcing and producing the finest foods and drinks.

DukesHill's CEO Mark Gallagher said “We're absolutely thrilled to announce the launch of Japanese A5 grade wagyu beef here at DukesHill.

Famed all over the world for being in a league of its very own, wagyu beef represents the epitome of the highest quality beef.

With ist exceptional marbling, rich and creamy flavour and melt in the mouth tenderness, wagyu beef is a sought after delicacy, loved by food enthusiasts and chefs worldwide.”

Japanese wagyu cows have been bred and selected for their predisposition to marbling, the distribution of intramuscular fat that creates its signature tenderness and rich buttery flavours. Beyond good genetics, Japanese wagyu cattle are reared to avoid any stress to the animals, to avoid overworking muscles.

DukesHill's decision to offer A5 grade wagyu reflects its dedication to offering the finest examples of produce across its fine food range.

In Japan, beef is graded by its marbling, shape, fat colour and meat colour, before being scored 1 for poor quality and 5 representing excellent quality. The higher yield of quality meat (72% or higher) results in an A grade.

As a proud royal warrant holder, DukesHill takes pride in sourcing welfare-assured meat from producers that uphold the highest standards of craftsmanship and authenticity. Consumers are assured by transparency and traceability in every bite.

DukesHill's Japanese A5 Wagyu Sirloin Steak (300g) £59 and Ribeye Steak (300g) £59 will be available from 10th April at www.dukeshill.co.uk

Salcombe Gin Partners With the Heroic RNLI to Launch 'Four Seas' Gin With Every Bottle Helping Save Lives at Sea

With a love and respect for the sea at the heart of everything they do, multi-award winning Salcombe Gin is delighted to have partnered with the Royal National Lifeboat Institution (RNLI) to launch 'Four Seas' by Salcombe Gin.

Commemorating the charity's upcoming 200th anniversary, the new classic London dry gin is a true celebration of British and Irish coastal community spirit.

Available now and for the next two years, every bottle of 'Four Seas' by Salcombe Gin will help save lives at sea, with 10% of the net price of every bottle sold proudly donated to the vital work of the RNLI.

'Four Seas' by Salcombe Gin is available in a 70cl bottle, at £39.50, ABV 40% from salcombegin.com, Salcombe Gin's Dartmouth and Salcombe stores, plus via Master of Malt, Amazon and leading independent retailers throughout the country.

It's a relaxed and inclusive gin, 'Four Seas' by Salcombe Gin is crafted for everyday heroes, everyday occasions and for those who love to be close to the sea.  Adhering to the same exacting London Dry standard as their iconic and global award-winning citrus led Salcombe Gin 'Start Point', 'Four Seas' by Salcombe Gin draws inspiration from their journey around the British coastline to where the four seas that surround our island nation, the Atlantic Ocean, Irish Sea, English Channel and North Sea, all meet our shores. The same four seas served and protected by the heroic RNLI.

Beautifully balanced, 'Four Seas' by Salcombe Gin showcases four key botanicals and is led by lemons smoked over Scottish whisky barrel wood chips, tangy sea buckthorn from where the Atlantic Ocean meets the Cornish coast, sugar kelp foraged from the Irish sea providing a richness and a hint of salinity and elderberries from wildest Wales, giving an earthy floral sweetness.

On the nose there's zesty fresh lemons, smoky citrus and classic juniper, followed by a citrusy tang and sweetness from the sea buckthorn with underlying floral and earthy layers on the palate, too.

The finish is reportedly smooth, rich and warming, with a slightly saline tone, reminding you of its coastal influence and origin. 'Four Seas' by Salcombe Gin contains no colourants and no added sugar.

Appealing to gin drinkers both old and new, just serve 'Four Seas' by Salcombe Gin in a highball glass with four ingredients; gin, premium Indian tonic, ice and lemon or in a cocktail to showcase the subtle notes of smoked citrus and the hint of sea salt.

Like all the products in Salcombe Gin's portfolio, it contains no plastic packaging and has biodegradable cellulose tamper proof seals, 'Four Seas' by Salcombe Gin uses a totally natural cork and wooden stopper.

Commenting on the partnership, Co-founder and Director of Salcombe Distilling Co., Angus Lugsdin says:  “Spending years working at sea and having grown up learning to sail in Salcombe and watching with fascination as a child when the Salcombe Lifeboat was called out,  it's hard to express just exactly how thrilled I am about the collaboration between Salcombe Gin and the RNLI.

"Having spent years offshore myself and having undergoing sea survival training myself, I have the utmost respect for the RNLI and its dedicated volunteers who generously devote their time to safeguarding and rescuing lives at sea, ensuring a safer environment for us all."

Angus went on to say: “It obviously fills the Salcombe Gin team with immense pride and pleasure to join forces with the RNLI, knowing that the sale of 'Four Seas' by Salcombe Gin will contribute to our coastal communities and support the RNLI in their crucial missions.  What's more, as part of our special two-year partnership, we'll also contribute 10% of the net price of every bottle sold of our Salcombe Rum 'Island Street' to the RNLI, too.”

Mark Dowie, RNLI CEO adds: “We're delighted to partner with Salcombe Gin and welcome their kind support. And because Salcombe Gin is made in my hometown, I'm obviously hoping for great things!”

Mark went on toy say: “For almost two centuries the RNLI has been saving lives at sea.  All of the essential training and equipment for our lifeboat crews and lifeguards is only possible because of the donations we receive from our generous partners and our supporters.  Our partnership with Salcombe Gin will raise vital funds to help us continue our lifesaving work.”

The perfect partnership, Salcombe Gin draws influence from the coastal vitality of Salcombe and its shipbuilding heritage.  They produce internationally acclaimed gins at their waterside distillery on Island Street in Salcombe, one of the world's only distilleries directly accessible by boat.  'Four Seas' by Salcombe Gin joins Salcombe Gin's outstanding line-up of Salcombe Gin 'Start Point', Salcombe Gin 'Rosé Sainte Marie', Salcombe Gin 'Start Point - Offshore Strength' and their exclusive Voyager Series.

Since 1824, the story of the RNLI is one of courage and dedication.  Across their almost 200-year history, RNLI lifesavers have answered the call to rescue, day or night, on calm seas or in ferocious storms.  If someone is in peril at sea, the RNLI will do all they can to save them.  Since the charity launched its first lifeboat in 1824, the RNLI has saved over 144,000 lives at sea.

That's Food and Drink believes this will make a superb Christmas gift or birthday present this year.

(That's Food and Drink has already published that recipe!)

Summer cup scones

Light and refreshing, the scones are a delicious talking-point to serve at parties for a summery twist on the classic cream tea. Pen Sans Summer Cup is bursting with ripe summer fruits and red berries - perfect with our luxurious Cornish clotted cream. Feel free to use shop-bought scones and take them to the next level if you haven’t time to bake your own.

Ingredients

For the scones

350g Self-raising flour, sieved

Pinch of salt

100g Trewithen Dairy unsalted butter

110ml Trewithen Dairy whole milk

1 Egg, beaten

For the topping

150g Frozen strawberries

2tbsp Caster sugar

50ml Pen Sans Summer Cup

Garnish

Fresh strawberries

Mint leaves

Cucumber, sliced

Trewithen Dairy Cornish clotted cream

Method

BeginS with the scones. Preheat the oven to 190c. Grease and line two baking trays.

Using your fingertips, rub the butter into the flour to create fine breadcrumbs. Stream the milk in slowly, using a cold knife to gently mix until it just forms a dough. Wrap in cling film and chill for 20 minutes while you make the strawberry topping.

Place the frozen strawberries and a splash of water in a saucepan over a medium heat, allowing them to break down. At this point, add a measure of summer cup and caster sugar. Continue to stir for a couple of minutes until it has reduced down slightly. Remove from the heat and chill.

Back to the scones. On a lightly floured surface, roll the dough out to a thickness of 2cm and cut into rounds with a cutter. Don’t twist them out of the cutter, otherwise they will warp in the oven.

Place on the baking trays, before brushing the tops with the beaten egg. Bake for 12 minutes until slightly golden. Remove from the oven and allow to cool on a wire rack.

To serve, smother with strawberry sauce, a generous spoonful of Cornish clotted cream and garnish with strawberries, cucumber and mint. Enjoy with a large jug of summer cup filled with summery botanicals. Heaven!

No-churn summer cup clotted cream ice-cream

The epitome of summer flavours, Pen Sans Summer Cup is bursting with red berry aromas and pairs perfectly with our rich Cornish clotted cream. Make this easy no-churn ice-cream in advance so you have it ready to pull out of the freezer for hot days and al fresco dessert.

Ingredients

2 Large eggs

125g Caster sugar

250ml Double cream

200g Trewithen Dairy Cornish clotted cream

250ml Trewithen Dairy whole milk

200g Strawberries - frozen (defrosted) or fresh

1 tbsp Icing sugar

50ml Pen Sans Summer Cup

Garnish

Mint leaves

Strawberries

Orange slices

Method

In a large bowl, whisk the eggs until light and fluffy. While still whisking, add the caster sugar, one spoonful at a time and continue mixing for a few minutes. Add both creams and pour in the milk, while continuing to whisk.

Pour into a freezer-proof container (a loaf or baking tin works well) and freeze for two hours. Remove from the freezer, whisk thoroughly and return to the freezer.

In the meantime, place the strawberries and a splash of water in a small saucepan over a medium heat and cook until the strawberries break down into a sauce. Add the icing sugar and Pen Sans Summer Cup. Allow to simmer for a few minutes until the mixture reduces slightly. Set aside too cool.

Stir the strawberry sauce through the semi-frozen ice cream and, using a cocktail stick, pull it gently through to create a beautiful marbling effect. Add the remaining strawberries on top and return to the freezer until frozen - approximately one hour later. When you’re ready to serve, remove from the freezer and add fresh strawberries, mint and orange slices to garnish. Enjoy in cones or bowls.

Trewithen Dairy's Movie Night 'Scone Revolution' Takes Centre Stage at Royal Cornwall Show

And a special Movie Night Hamper is now Available for Home Delivery!

Trewithen Dairy, Cornwall's top provider of delicious dairy products, is justifiably proud and utterly thrilled to be able to announce the resounding success of its 'Night at the movies - Scone Revolution' at this year's Royal Cornwall Show. The event surpassed all expectations as 18,000 free Cornish clotted cream scones with a movie themed twist were enjoyed by lucky visitors to the show.

Now in its fourth year, Trewithen's 'Scone Revolution' showcases the versatility of Cornish clotted cream and shows there are more ways to serve a cream tea than with the traditional dollop of jam.

Trewithen Dairy transformed their show stand into a captivating cinematic experience, complete with movie-inspired props, a special behind the scenes area, and, of course, the famous scones with a very special twist.

From the very moment the gates to the show opened, word spread like wildfire about the unusual scones Trewithen had on offer at their stand, with queues forming from the start of the show.

The favourite, as voted on Trewithen's Instagram poll, was a savoury scone called 'It's Nacho Scone' a delicious cheese scone covered in tangy salsa, topped with clotted cream, studded with nachos and a jalapeno. The line up also included a sweet 'Salted Caramel Popcorn' and 'The Strawberry Milkshake'. All of the recipes are available at www.trewithendairy.co.uk

"Trewithen Dairy is really thrilled with the overwhelmingly positive response witnessed at the Royal Cornwall Show," says Francis Clarke, director at Trewithen Dairy.

He added: "Visitors approached the savoury 'Nacho Scone' with trepidation and, unsurprisingly, needed a little convincing to try a scone with salsa, clotted cream and jalapenos! But it ended up being voted as the favourite scone of all!”

For those keen to recreate 'Night at the Movies Scone Revolution', the three recipes are listed on Trewithen Dairy's website. Inspired by the theme, Trewithen has created a 'Movie Hamper' for scone enthusiasts and film lovers alike to recreate the enchantment of the show, in the comfort of their own homes.

The 'Movie Hamper' features Trewithen Dairy's signature Cornish clotted cream, made using traditional methods that have been passed down through generations. Alongside the velvety clotted cream, the hamper includes an assortment of freshly baked scones, salted caramel popcorn and a selection of classic movie-inspired treats. Available for nationwide delivery, for £27.49 from trewithendairy.co.uk.
